Introduction

Dear customer, congratulations on purchasing this appliance. This manual provides essential information for the correct use, maintenance, and installation of your proofer. It is designed to help technicians and users ensure safe, efficient, and long-term operation. Please keep this booklet in a safe place for future reference. The manufacturer is not liable for damages resulting from improper use, unauthorized modifications, or the use of non-genuine spare parts. This appliance complies with current EEC directives.

Instructions for the Installer

I. Warnings

Read this booklet carefully before starting installation and start-up. All installation, assembly, assistance, and extraordinary maintenance must be performed by qualified personnel in accordance with local safety laws. Incorrect installation or modifications can lead to malfunction, damage, or breakage. The appliance is intended solely for cooking or heating food in industrial kitchens; any other use is inappropriate and dangerous.

II. Preliminary Operations

Upon receipt, check the product for transport damage and ensure the packaging is intact. If damage or missing parts are found, inform the carrier and retailer immediately, providing the Art. code and serial number (Ser N°), along with a photo. Ensure the installation area is clear for access. WARNING: The appliance may tip over during transport, causing damage to property and injury to persons. Use appropriate transport equipment capable of handling its weight. Do not drag or lean the device; lift it straight and place it horizontally.

III. Installation Area

Install the appliance in enclosed, well-ventilated areas (not outdoors). Before positioning, verify overall dimensions and the exact location of electrical and water connections. Ensure the door can open fully. The appliance is not designed for built-in installation; maintain a 2-inch (5 cm) space all around. Avoid placing it near heat sources, fryers, or hot liquids. If unavoidable, maintain specific distances: 20 inches (50 cm) from sides and above, and 28 inches (70 cm) from the rear. Do not place near flammable materials or containers (e.g., gas canisters) as this poses a fire hazard. If necessary, cover flammable parts with fire-resistant material and comply with fire hazard regulations.

IV. Preparing for Installation

Remove and dispose of outer packaging (wooden crating and/or carton box) according to local laws.

Removing Protective Film etc.

Remove the protective film from the external and internal walls. Remove all internal information materials and plastic packaging.

Stands Adjustment

Do not operate the appliance without its feet. Insert and screw the feet into the threaded positions on the base. The feet are essential for proper airflow, preventing overheating and damage to components. Ensure the appliance is level using a spirit level for correct functioning.

V. Water Connection

Place the device near a water connection. Before connecting, flush the piping to remove any remnants that could enter the magnetic valves. Install a shut-off valve and a mechanical filter between the plumbing and the appliance. Incoming water pressure should be between 150 kPa (1.5 bar) and 200 kPa (2 bar), with a maximum temperature of 30°C. If pressure exceeds 200 kPa, a pressure reducer calibrated to 200 kPa must be installed.

Water Treatment

For trouble-free operation, water hardness should not exceed 5°f to prevent lime scale deposits. For higher hardness, a water softening station is recommended.

VI. Electrical Connection

WARNING: Main connections must be performed by a qualified and authorized technician, adhering to national, international, and local laws.

Before connecting to the mains, verify that the frequency and voltage match the appliance's information tag. If the device is not equipped with a trolley, connect it first, then position it, ensuring the power cable is not damaged during placement. The cable should be uniformly exposed to room temperature not exceeding 50°C.

Proofers with Cable and Single Phase Plugs

For appliances with a cable and plug (single phase 220-240V), insert the plug into a suitable socket that can handle the appliance's required voltage. The product must be positioned so the plug is always accessible. The appliance comes with certified cable and plug; these must not be tampered with or modified. Only the cable can be substituted by a qualified technician; the earth wire must always be yellow-green.

Appliance Not Supplied with Cable with Three Phase Terminals

Units supplied with terminals require connection to the mains as per the manual's label. Use a rubber cable such as H07RN-F. WARNING: The yellow/green earth wire must be at least 3 cm longer than other conductors.

The device must be connected directly to the mains via an easily accessible switch that ensures complete disconnection. Correct earthing is mandatory and the earth wire must not be interrupted by the protection switch.

Cable Connection

Follow these steps to connect the power supply wire:

  1. (A1) Loosen the cable gland top and open the bottom rear part of the appliance by removing screws.
  2. (A2) Feed the new cable through the cable gland. Connect the cable conductors to the terminal strips according to the diagram on the rear label. Ensure correct connections, inserting copper bridges and cables under screws, tightening securely. The label specifies cable type and cross-section (mm²).
  3. (A4) Close the rear panel by tightening screws and secure the cable by tightening the cable gland top.

VII. Specifications

Information Plate

The appliance features an information plate containing key details:

  • Art./Model: Customer classification
  • Ref.: Internal manufacturer classification
  • Ser. N°: Unique identification number
  • TYPE: Certification code
  • Information: IPX protection rating (water sprays), kPa (inflow water pressure), production year.
  • Power Consumption: Nominal power in kW.
  • Mains Supply: Terminal connection type (voltage, phases, neutral).
  • Supply Frequency: Frequency in Hz.
  • Weight: Appliance weight in kg.

Instructions for the User

I. Warnings

Read this booklet carefully for safety and usage information. Keep it for reference. Incorrect installation, maintenance, or modifications can cause malfunctions, damage, or injury. The proofer cabinet is for use only in industrial and professional kitchens; any other use is inappropriate. The manufacturer is not liable for misuse. The appliance is intended for professional use by qualified personnel. It is not suitable for individuals with reduced physical or mental abilities or lack of experience, unless they receive instruction from safety personnel. Do not leave the appliance unattended with children. Avoid placing near heat sources or flammable materials. Be cautious of hot containers and accessories; use thermal protection. Use fingers to adjust controls; other objects may damage the device and void the warranty. Damaged glass components must be replaced immediately. For prolonged periods of non-use, switch off the appliance at the mains.

II. Testing

Before operation, perform all necessary checks to ensure system soundness and compliance with regulations and manual instructions. Ensure no plastic bags, manuals, or films are inside. Remove all packaging, including protective film. Verify that the temperature control thermostat operates correctly, turning off heating elements when the set temperature is reached.

First Cleaning of the Cooking Chamber

Disconnect electrical power and wait for the appliance to cool before cleaning. WARNING: Never clean with high-pressure water sprays. Ensure no solvent or detergent residue remains; rinse thoroughly with a damp cloth, using appropriate eye, mouth, and hand protection. Clean chamber walls with hot water and soap, then rinse. Do not use aggressive or acid products.

III. Ordinary Maintenance

The user is responsible for ordinary maintenance. Contact the Assistance Centre for extraordinary maintenance requiring a specialized technician.

Ordinary Cleaning of Cooking Chamber

Clean the cooking chamber daily for hygiene and to prevent steel deterioration. Do not use high-pressure jets, steam generators, acidic products, abrasives, or corrosive detergents. Stainless steel wool can be used gently along the grain. Wait for the compartment to cool. Remove side tray racks. Wash removable parts in a dishwasher. Clean the compartment with warm, soapy water and rinse thoroughly. Use only manufacturer-recommended cleaning products.

External Cleaning

Use a damp cloth with warm water or products suitable for stainless steel. Do not use acidic products or ammonia. WARNING: Never clean with high-pressure water sprays.

IV. Extraordinary Maintenance

Periodic checks (at least annually) by a specialized technician are recommended. All maintenance, installation, or repair work must be carried out by qualified personnel. Before any operation, disconnect power, turn off water taps, and allow the appliance to cool. Before moving, ensure all electrical and water connections are unplugged. If the appliance has wheels, check that cables and pipes are not damaged during movement. Ensure the anti-movement safety is applied. Avoid placing near heat sources. After work, verify all connections are correctly re-established.

V. Maintenance in Case of Breakage

If the appliance breaks, disconnect it from the mains and turn off the water. Before contacting Customer Service, consult the following chart:

If the problem persists, contact your retailer or the manufacturer, specifying the problem and providing the Art. code and serial number (Ser N°) found on the information plate.

Spare Parts

Use only authorized spare parts. All interventions must be performed by specialized and authorized technical personnel. Contact the Assistance Centre to request spare parts.

VI. Control Panel

The control panel includes the following:

  • Thermostat Light: Indicates when heating elements are active (lit) or when the set temperature has been reached (off).
  • Thermostat Knob: Used to select the desired cooking temperature.
  • Humidification Button: Activates the humidification function while pressed.
  • ON/OFF Button: Turns the leavening cabinet on and off.

VII. Advice During Cooking

To operate the appliance, press the ON/OFF button and turn the temperature dial to the desired value.
