Introduction
The BIG BOSS™ Oil-Less Fryer is an energy-efficient tabletop cooker that combines halogen heat, convection, and infrared technology. It allows for cooking foods moist on the inside and browned & crispy on the outside without added fats or oils. Its triple cooking power (Halogen, Convection & Infrared Heat) enables it to prepare crispy fried foods with little or no oil, cook quickly from frozen without thawing, and cook multiple foods simultaneously using the included mesh basket and two racks. It uses less energy and cooks up to 3 times faster than conventional methods. The appliance can air fry, stir fry, roast, broil, grill, toast, steam, and make desserts without preheating or defrosting. The glass dome allows visibility, and the tight seal keeps heat contained, preventing the kitchen from overheating. It includes an extender ring for increased capacity, a mesh basket, a sprayer, and two cooking racks (low and high) for preparing complete meals.
Important Safeguards
Before using the appliance, follow these basic precautions:
- Read all instructions.
- Keep unit out of reach of children.
- Ensure wall outlet voltage matches the rating plate.
- Do not operate with a damaged cord or plug, or after malfunction, drop, or damage. Return to authorized service facility.
- If the supply cord is damaged, it must be replaced by the manufacturer, authorized agent, or qualified technician.

- Do not immerse plug, cord, or housing in water due to electric shock risk.

- Always wear protective, insulated oven mitts or gloves when handling the unit or removing food. The unit gets very hot.
- Do not touch hot surfaces; use knobs or handles.
- Always use the handle to remove the glass lid.
- Ensure the appliance is clean and dry before use.
- Place food in the appliance only before setting the timer or after pre-heating.
- Do not place near hot gas or electric burners.

POLARIZED PLUG: This appliance has a polarized plug (one blade wider than the other) for shock reduction. It fits in a polarized outlet one way. If it doesn't fit, reverse the plug. Contact a qualified electrician if it still doesn't fit. Do not modify the plug.

Unpacking - Before First Use:
Unpack the unit and remove all packaging. Wash the glass bowl, plastic base, cooking racks, mesh basket, tongs, and sprayer in hot soapy water and allow to dry completely. WARNING: Do not immerse the lid with controls, cord, or plug in water. Do not use abrasive cleansers. Do not place glass lid in dishwasher.
Quick Assembly:
- Place the plastic base on a stable, heat-proof surface, away from countertop edges.
- Place the glass bowl onto the plastic base.
- Place the low and high cooking racks into the glass bowl.
- If using the mesh basket, place it on top of a cooking rack (low or high).
- Place the glass lid on top of the glass bowl, ensuring it sits on the inner rim.
- If using the extender ring, place it on top of the glass bowl, then place the lid on.

Usage Basics
Prior to Use:
- Place the unit on a stable, heat-proof surface, away from table/countertop edges.
- Ensure the power cord does not touch any hot surfaces.
- Maintain adequate space around the unit for ventilation and lid removal.
- Place cooking racks/mesh basket inside the glass bowl before pre-heating/cooking.
- Keep oven mitts ready for removing the lid and food.
- Oven-safe pans, plates, or foil can be used inside the unit.
Assembly - Placing Food in Unit:
- Open the glass lid and place cooking racks inside (one or both, depending on food quantity).
- Place food directly on a rack or in the Mesh Basket for better hot air circulation. Use the Mesh Basket for air frying items like french fries, onion rings, chicken, or fish. The basket can be placed on either the low or high rack.
- Optional: Use the included Sprayer, filled with oil, to lightly spray food (1-3 sprays) before cooking.
- To increase capacity for larger items like turkey (up to 16 lb.), place the Extender Ring on top of the glass bowl. The ring's lip creates a seal with the lid.
- Close the lid. Do not lower the handle yet. Plug the power cord into the electrical outlet.
Setting the Temperature:
Turn the temperature knob clockwise to the desired setting. Refer to cooking time/temperature guides. Cooking time varies with food size, weight, and thickness; adjust as needed, as this unit cooks faster than conventional ovens.
Setting the Timer:
Turn the timer knob clockwise (0-60 minutes). IMPORTANT: Do not rotate the timer knob counterclockwise, as it may damage it. If you set the timer too long, turn the unit off and let it count down naturally.
Turning Unit On/Off:
To Turn ON: Lower the handle until it snaps in. The handle must be flat down for operation. The unit is ready to operate when the handle is down.
The halogen lamp and fan turn on. Power (red) and heat (green) lights illuminate. The heat light cycles to maintain temperature.
To Turn OFF: Lift the handle to its upright position. This activates the safety feature and turns the unit off.
Checking Food: Lift the handle to turn the unit off temporarily. CAUTION: Always bring the handle to the upright position before removing the lid. The unit will be very hot. Use oven mitts when removing the lid, especially if using the extender ring. Lower the handle to resume cooking.
When the timer reaches OFF, the unit turns off automatically. Remove the lid and check food for doneness. Use a cooking thermometer or pierce meat to check juices. For vegetables, check for tenderness. To avoid moisture buildup, remove food promptly after cooking.
Use the provided tongs to lift out hot racks with food.
Dehydrating, Pre-Heating, and Thawing
Dehydrating Fruits, Vegetables, and Herbs:
- Wash and dry produce. Peel if desired.
- Slice thinly (approx. 1/16 inch). For soft fruits, freeze briefly to harden before slicing.
- Soak fruit slices in a solution of 1/2 cup water and 1/2 cup lemon juice for 10 minutes (5 minutes for bananas). Do not soak vegetables.
- Place the high cooking rack in the bowl, then the Mesh Basket over it.
- Arrange slices in a single layer, close together but not touching.
- Close the lid.
- Set temperature to THAW/WASH and timer to 60 minutes (for fruits).
- Lower the handle to turn the unit ON.
- Check food every 15 minutes by lifting the handle to turn the unit off temporarily.
- Done fruit is pliable or leathery; check for moisture or stickiness.
Pre-Heating:
Insert trays/mesh basket. Set desired temperature and timer for 10 minutes. The halogen light will turn off when the temperature is reached. Open the lid and add food. CAUTION: Use oven mitts when removing the lid.
Thawing:
The unit can be used to thaw frozen foods efficiently without altering quality or texture.

Helpful Tips and Cleaning
Adapting Recipes:
Adapt favorite conventional oven or fryer recipes by keeping the temperature the same but reducing the cooking time, as this unit cooks faster. Use a meat thermometer to ensure food is cooked thoroughly.

This guide lists internal temperatures required to kill bacteria. These are not cooking temperatures.

Notes on Food Doneness: Poultry should reach 170-180°F or have clear juices. Fish should be opaque and flake easily. Shellfish turns reddish-pink and opaque.
Cleaning and Care:
Ensure the unit is turned off and unplugged, and has cooled completely before cleaning. Wash the glass bowl, plastic base, extender ring, cooking racks, mesh basket, tongs, and sprayer in hot soapy water; allow to dry completely. The glass bowl and cooking racks can be washed in a dishwasher.
Do not soak cooking racks for extended periods. Dry racks thoroughly with a cloth or paper towel after washing to preserve their surface.
WARNING: Do not immerse the lid, controls, cord, or plug in water. Do not use abrasive cleansers. Do not place the glass lid in the dishwasher.
Wipe the glass lid surface with a damp cloth or sponge after unplugging. Ensure all parts are dry before storage to prevent moisture buildup.
Self-Cleaning of Glass Bowl:
- Pour 1-2 inches of water and a small amount of mild dishwashing liquid into the glass bowl.
- Place the lid on and plug in the unit.
- Set temperature control to WASH and timer to 10 minutes.
- After the timer finishes, carefully open the lid and let the bowl cool before emptying.
- Rinse the glass bowl with clean warm water.
