Safety Instructions
Read all instructions before using the Assistent Original to avoid incorrect use or any unnecessary risk of accident. Only original accessories for Assistent Original may be used. Save these instructions, as they should always accompany the machine if you ever sell it or pass it on to someone else.
General Safety Precautions:
- This appliance is not intended for commercial use.
- Never use a damaged machine or accessories. Do not attempt to repair the machine yourself.
- The machine must stand on a flat, stable surface during use.
- This appliance shall not be used by children. Keep the appliance and its cord out of reach of children.
- Children aged 8 years and above can use the appliance under supervision and instruction, understanding the hazards. Cleaning and user maintenance should only be done by children aged 8+ and supervised. Keep out of reach of children under 8.
- Persons with reduced physical, sensory, or mental capabilities, or lack of experience and knowledge, can use the appliance under supervision or instruction.
- Children shall not play with the appliances. Monitor children to ensure they do not play with the product. Never leave children alone when the machine is running.
- Avoid contact with moving parts when the machine is running.
- Do not use accessories that are not completely assembled or are not intended for this machine.
- Never place hands or foreign objects into the machine or its accessories when running.
- Some parts are sharp (mixer knives, vegetable cutter drums, mincer knife). Handle and clean with care. Store out of reach of children.
- The blender must never be started without its lid in place. Keep hand on lid during operation. A scraper can be used to empty/clean the blender when not running.
- Do not blend hot liquids.
- Never use fingers to scrape food from the machine or accessories while operating.
- Always check machine and accessories for foreign objects before use.
- Unplug the machine when not in use, during cleaning, or when installing/removing accessories. Pull the plug, not the cord.
- Ensure the connection cord is not damaged.
- The machine must not be submerged in water.
- Do not use outdoors.
- Do not let the cord hang over the edge of a table or counter.
Disposal:
Contact your municipality for information on where to take your machine.
Unpacking:
- Check that the machine is complete and all parts are included.
- Report transport damage immediately (within 7 days) to the shop or carrier. Report damaged parts to the seller immediately.
Using the Assistent Original
Before First Use:
Wash all parts that come into contact with food by hand.
Start/Stop:
- Plug in. Always remove the plug from the wall socket when not in use.
- Start by turning the timer knob to 'On' for continuous operation or to the required time (1-12 minutes). Stop or interrupt by turning the knob back to 'Off'.
- Use the speed knob to adjust the bowl speed between 40-140 RPM.
- Accessory descriptions suggest suitable speeds.
- The machine uses up to maximum effect, but most recommended attachments use significantly less power.
Cleaning:
- Always unplug the machine before cleaning.
- Use the dough scraper to empty the bowl.
- Use the side of the dough scraper to clean the roller.
- Wipe the machine down after use with a damp cloth, possibly with a little washing-up liquid.
- Do not use strong or abrasive cleaners.
- The bowl, roller, knife, and scraper are dishwasher safe.
- The bowl for the double beater is dishwasher safe; beaters should be washed by hand.
- The citrus press is dishwasher safe.
- Clean the blender by filling it with warm water and washing-up liquid, running it for a few seconds, then rinsing.
- Wash the grinder and its accessories by hand to avoid discolouration.
- Dry and lubricate the knife and hole discs with cooking oil.
- The vegetable cutter and its drums are dishwasher safe.
- Wipe and brush the grain mill and flake mill clean.
- Clean the pasta attachment with a fine brush or soft cloth. Never wash or submerge the roller in water as it may rust.

Roller

Secure the dough knife in the small hole at the arm mounting. Pull the pin up in the arm and move the arm to the centre of the mixing bowl. Position the roller under the arm and push the pin down into the roller. Secure the arm 2-4 cm from the edge of the mixing bowl.
Always use the dough knife with the roller when baking. Position the roller as close to the edge of the mixing bowl as possible without forcing the dough too high. Add all liquid first, then add flour gradually.
The roller is dishwasher safe.
Dough Hook

Risk of crushing injuries exists between the rotating bowl and the dough hook. Never insert hands or objects into the bowl while the machine is running.
Secure the dough knife in the small hole at the arm mounting (#1). Fix the dough hook in the arm mounting (#2). Ensure the distance between the bowl bottom and the hook is 4-5 mm to avoid bowl damage. Adjust height if necessary by turning the screw in the arm attachment with a screwdriver. Attach the dough hook by bringing the arm over it and pressing the pin into the hook's hole (#3-5).
Use the dough hook for wheat bread doughs and slack bread doughs with 1-1.5 litres of liquid ingredients. Start the machine at low speed.
The dough hook is dishwasher safe.
Double Beater

Fit the whisking bowl and whisks onto the machine (#1-4). Switch between balloon whisks and pastry whisks (#3). Ensure whisks are correctly fitted by listening for a 'click'.
The whisk is intended for whisking 100-800 ml cream, 2-20 egg whites, 0.5-2.5 litres pancake batter, or 1-3 batches of sponge mix. The pastry whisk is for pastry like shortcrust, small pie pastry quantities, or icing/frosting.
Always use room temperature butter with double whisks and short crust pastry whisks.
Wash whisks by hand. The whisking bowl is dishwasher safe.
Pasta Cutter Fettuccine
Prepare pasta dough using the dough roller and scraper. Mix 500g plain flour with 4 eggs and a little water in the bowl at low speed. Lock the dough roller 1-2 cm from the bowl edge and knead for about 5 minutes until smooth. Continue kneading by hand on a floured surface. Add more water if dough is dry/crumbly. For more flavour, use 250g plain flour and 250g durum flour (semolina).
Use the lasagna sheet roller in position 5-6 to make sheets for the fettuccine cutter, or roll out dough by hand with a rolling pin.

Prepare pasta dough using the dough roller and dough knife. Mix 350g durum wheat flour with 2 large eggs and a little water in the bowl at low speed. Lock the dough roller 1-2 cm from the bowl edge and knead for about 5 minutes until smooth. Knead by hand on a floured surface. Add lukewarm water if dough is dry/crumbly. Shape into a ball and cover to rest.

Attach the roller to the machine's drive socket (#1-3). Start feeding dough through at setting 0 (#4), repeating 5-6 times, folding dough and adding flour as needed. Reduce thickness by adjusting the roller gap with the side knob (#5). Repeat feeding 6-7 times per thickness, folding the dough each time. Cut sheets with fettuccine or spaghetti cutter if desired.

Citrus Press
Fit the citrus press onto the machine (#1-2).
Use for oranges, grapefruit, limes, and lemons. Cut fruit in half, place cut surface against the press centre, and run on medium speed.
Rinse with hot water. Dishwasher safe if necessary.
Blender

Place the machine on its side and attach the blender to the drive socket (#1-4).
Place items to be chopped/mixed/ground in the blender. Put on the lid and keep a hand on it during operation. Run on highest speed for 30-40 seconds until blended/ground. Avoid running for more than 3 minutes for dry items, or 4 minutes for liquids. Use the inner lid for small quantities (#5).
Pour hot water and a few squirts of washing-up liquid into the blender. Run on highest speed for about 25 seconds, then rinse.
Mincer

Fit the mincer onto the machine (#1-8). For mincing, fit the knife onto the mincer (#4), ensuring the sharp side faces the hole disc. Select and fit the hole disc outside the knife (#5-6). For sausage stuffing, fit the sausage horn (#10-14).
Use the 2.5 mm hole disc for fish/pâté, 4.5 mm for meat/chicken/fish, 6 mm for coarser mince, and 8 mm for preliminary mincing of tough meat. Mince again with 4.5 mm or 2.5 mm disc for finer mince. Cut items into wedges or strips. Parboil vegetables before mincing. Run on medium speed. For sausage stuffing, thread casing over the horn and run on low speed. If air enters sausage, stop and press air bubble back via the horn's groove. Always use the plunger. Never stick hands or objects into the mincer.
Wash mincer, hole disc, and knife by hand. Apply a little cooking oil to the hole disc and knife. Plastic components are dishwasher safe.
Sausage Stuffing Horn
This is an accessory for the Mincer. See Mincer section for assembly, use, and cleaning instructions.
Strainer

Attach the mincer to the machine, then fit the strainer onto the mincer (#1-11). The adjustment screw's position determines liquid output. Turn the screw to change straining degree. Residue can be reused a few times.
Turn fruit and berries into pulp or purée. Tomatoes, oranges, gooseberries, de-seeded rosehips, pitted plums, and cherries can be strained raw.
All parts of the mincer and strainer must be washed by hand. The feed table and stopper are dishwasher safe.
Grater

Use to grate nuts, crusts, parmesan cheese, carrots, potatoes, etc. Run on medium-high speed. Always use the plunger to feed things through (#9). Never stick hands or objects into the mincer.
The mincer and grater attachment must be washed by hand.
Grain Mill

Fit the grain mill onto the machine (#1-4).
Pour in ingredients to be ground (max 1,250g) and set coarseness (fig. 5). Run on medium speed; coarseness can be adjusted during operation. Designed for grinding grains, dried herbs/spices, poppy seeds, dried mushrooms, soya beans, and coffee beans. Use pure grain only; foreign objects like stones can damage the roller.
The adjustment section is not washable. Wipe with a dry cloth or fine brush. The feed tray is dishwasher safe.
Vegetable Cutter

Fit the vegetable cutter onto the machine (#1-6).
Select drum based on task: Medium coarse grating drum (#7) for root vegetables, raw vegetables, nuts, fruit, cheese. Slicing drum (#8) for potatoes, onions, root vegetables, fruit, vegetables. Coarse grating drum (#9) for root/other vegetables or fruit for soups/pies, nuts, chocolate, cheese. Three additional drums available separately (#10-12): Fine grating drum (#10), Shredding drum (#11), Potato grating drum (#12).
All parts are dishwasher safe.
Flake Mill

Pour in ingredients to be crushed (max 1,250g) and run on medium speed. Designed for dry ingredients like oats, wheat, rye, rice, and buckwheat. Use pure grain only; foreign objects like stones can damage the mill roller.
The adjustment section is not washable. Empty residues from the mill roller and casing, then wipe with a damp cloth. The feed tray is dishwasher safe.
