How to Make Bread
Production Steps
To ensure proper fermentation, dry yeast should not come into direct contact with water, salt, and butter. Follow the correct order of ingredients:
- Add water or milk first.
- If adding eggs, add them after the water/milk.
- Add salt.
- Add sugar in a corner of the bread bucket.
- Add butter or cooking oil.
- Add flour, ensuring it covers the surface of the liquid.
- Add yeast, making sure it does not contact water or salt.
- Select the menu and start the machine. Avoid opening the lid frequently during fermentation and baking, as this can affect the results.

Common Problems with Bread Makers
No. | Problems | Cause Analysis | Solution Measure |
---|---|---|---|
1 | Smoke from heat dissipation hole during baking. | Protective oil on the surface of the heater (first use). Ingredients sticking to or near the heater. | Empty bake before first use. Unplug and clean the heating tube carefully if ingredients are sticking. |
2 | Difficulty removing bread. | Mixing knife stuck tightly to the spindle. | Soak the bread bucket in hot water for 10 minutes, then remove and clean the mixing knife. |
3 | Insufficient mixing, high resistance. | Incorrect program selected. Damaged mixing knife hole or motor. | Check recipe suitability. Contact service if abnormalities occur. Check motor idling when bread bucket is removed. |
4 | Motor rotating, but dough not mixed. | Bread bucket not in place, or dough is too large to stir. | Ensure the bucket is correctly placed and the recipe is accurate. |
5 | Interruption of machine operation. | Accidental "Start/Stop" button press. | If interruption is within 30 minutes, reset and start. If longer, repeat recipe and start again. |
6 | Bread is brown and dry. | Bread left in the pail for too long, causing moisture evaporation. | Remove bread immediately after baking. Avoid keeping warm for extended periods. |
7 | Bread sinks in the middle, duck crust on the bottom. | Lid opened multiple times during the last fermentation, causing heat loss. | Do not open the lid during the last fermentation. |
Cleaning and Maintenance
Unplug the toaster and allow it to cool completely before cleaning.
- Body: Wipe with a damp soft cloth and mild detergent. Dry with a dry cloth. Do not immerse the body in water or use harsh detergents. Avoid abrasive cleaning tools.
- Mixing knife: If difficult to remove, soak the bucket in water, then gently wipe.
- Lid and window: Wipe with a damp cloth. Do not soak in water.
- Utensils: Wipe measuring spoons and cups with a damp cloth and dry.
Operation Guide
Installation and Removal of Mixing Knife
The mixing blade is mounted protruding upwards on the spindle of the bread drum and rotates clockwise. Ensure correct installation to prevent damage to the bread bin.
Removal: If the mixing knife is stuck with flour, remove the bread bucket. Press the ends of the bucket with one hand and rotate the knife with the other in both directions to detach it.
Removal of Bread Bucket
Do not force the bucket out. Gently turn it 30 degrees to the left, then pull it upwards.
Fetching Fruit Box
- The fruit caddy is located at the back of the bread machine. Squeeze the caddy handle. (Warning: Do not open during operation; only after cooling.)
- Pull out the caddy drawer.
- The fruit box can be removed from the drawer for cleaning.
Using the Reservation Function
After step 5 of the bread-making process, press the "Time" button to select the reservation time. The maximum reservation time is 13 hours. The principle is to set the number of hours until you want the bread to be ready.
Using the "Dough" Shortcut
- Place ingredients in the bread bucket and press the "Mix" button.
- Press the "Time" button to adjust the mixing time.
- Press the "Start/Stop" button to begin.
Note: During mixing, the machine pauses for 10 minutes to ensure the motor's safety.
Using the "though" shortcut (likely meant "Dough" shortcut)
- Place ingredients in the bread bucket and press the "Mix" button.
- Then press the "Time" button to adjust the mixing time.
- After setting the time, press the "Start/Stop" button.
How to Use the Bread Machine
- Place ingredients into the bread bucket according to the recipe ratios.
- Turn the bucket to the right to lock it in place.
- Press the "Menu" button to select the desired program. The machine defaults to "Standard Bread" if this button is not pressed.
- Press the "Colour" button to select the crust color.
- Press the "Weight" button to select the bread weight.
- Press the "Start/Stop" button to begin the process.
Note: Add fruit ingredients to the fruit box before starting the machine. Do not open the fruit box while the machine is working.
Keep Warm Function
The machine automatically keeps the bread warm for 1 hour after baking. To stop this, press and hold the "Start/Stop" button. It is recommended to remove the bread promptly after baking to maintain its texture.
Removing the Bread
Put on gloves. Open the lid and use a hook and fork to lift the bucket handle. Turn the bucket counter-clockwise to remove it. Invert the bucket and gently shake to release the bread. If the mixing knife is stuck in the bread, use the hook and fork to remove it; do not touch it directly with your hands.
Memory Function
If power is interrupted for less than 10 minutes during operation, the bread maker will resume its process upon power restoration. If the interruption exceeds 10 minutes, settings are cancelled. Pressing "Start/Stop" during use also initiates an automatic resume if no further input is given within 10 minutes.
Keeping Bread Fresh
Home-made bread, lacking preservatives, has a short shelf life. Store leftover bread in a sealed bag or container for up to 3 days at room temperature or up to 10 days in the refrigerator.
Warning Tips
- Display shows 'HHH': Machine temperature is too high. Press and hold "Start/Stop" to switch off and unplug until cool.
- Display shows 'Err': Thermostat is faulty. The machine requires repair.
- Display shows 'LLL' (flashing): Machine temperature is too low. Move the machine to a warmer location.
Order of Ingredients
To ensure optimal fermentation, follow this ingredient order:
- Start with water or milk (temperature: 20-25°C for regular bread, 45-50°C for quick bread). Avoid high temperatures.
- Add eggs after water/milk.
- Add salt (suppresses yeast; can be omitted, but bread may rise more).
- Add sugar in a corner.
- Add butter or cooking oil (melt butter or cut into small pieces; can be added later).
- Add flour, covering the liquid surface. Use high-gluten flour.
- Make a dent in the flour and place yeast in it, ensuring no contact with water or salt. Use "High Sugar Tolerant" yeast.
- Place the bread bucket on the rotating shaft, turn clockwise to lock, close the cover, turn on power, and select settings.
Tips for Ingredients:
- Use high-gluten flour (13%+ protein).
- Use an electronic scale for weighing. A small spoon measures approximately 3g of yeast.
- Do not adjust sugar quantity beyond the recommended range.
- In winter, use warm water/milk and slightly increase yeast.
- Flour quantity determines loaf size.
- Unflavoured liquid frying oil can substitute butter (use half the amount).
- For hand-shaped bread, reduce water by 10-13g.
- Remove bread promptly after baking to prevent deformation.
Ingredient Measurement:
- Water, milk, and other liquids can be measured in clean measuring cups.
- Weigh all ingredients (except yeast) electronically for accuracy.
Note on Dried Goods: If adding dried goods like peanuts, pause the machine if they get stuck, use chopsticks to break them apart, and then resume.
