About Jams and Jellies
Jams are made by cooking crushed or finely chopped fruit with pectin and sugar, resulting in a firm, spreadable product containing fruit pieces.
Jellies are made using fruit juice instead of whole fruit. The juice is combined with pectin and sugar to create a firmer product without fruit pieces.
Pectin is a natural gelling ingredient derived from apples and citrus fruits. It helps achieve a proper set with less cooking, preserving a more natural fruit flavor. Ball Classic Pectin is recommended for optimal results.
