Character and Usage
The series of MDXZ-24 American style pressure fryer utilizes advanced technique from aboard and is the first company domestically to hold a CE certificate. It features stainless steel material, electronics for automatic time adjustment, temperature control, and air expulsion. It is used to fry chicken, fish, spareribs, mutton, and all kinds of meat and vegetables. This machine is applicable for hotels, guest houses, restaurants, factories, and dining rooms. It offers advantages of low energy consumption, freedom from pollution, convenient usage, and high efficiency, representing the newest food machinery equipment. The integrated oil filter efficiently cleans dirty oil, improving the quality of fried food.

II. Installation and Debugging
- The machine shall be placed in a dry, clean, and ventilated area. During operation, cushion the movable castor horizontally to ensure it is balanced and fastened. The relative humidity of the indoor environment should not be too high, as it can decrease electrical insulation. An exhaust device should be installed if necessary.
- This machine uses a ~3N400V power supply. When connecting, ensure the neutral conductor (N) is connected carefully to prevent machine damage. A dedicated cutoff switch must be installed on the input line front end, with its accessories conforming to the machine's electrical capacity requirements. Installation should be performed by an eligible technician.
- The grounding terminal of the machine must be reliably grounded with a section of at least 2.5 mm².
- During conveyance, vibration may cause spare parts to loosen or detach. Therefore, tighten all loosening parts during installation and debugging.
Pour oil before heating; the oil level must not be lower or higher than the oil level line. It is forbidden to heat if there is no oil in the boiler, as this will burn out the electrothermal pipe.
The temperature is set between 150°C and 180°C; the user can adjust it based on production needs. For cold oil heating, allow 20 to 30 minutes, and for hot oil frying, 10 to 15 minutes. The oil temperature must exceed 150°C before frying food.
When heating cold oil, it is best not to lid the cover. Mix the oil manually and continuously to heat it quickly and evenly.
Upon delivery, the pressure of the automatic overflow valve (21) is usually set at 80KPa. If the pressure gauge indication exceeds 90KPa and continues to rise, manually discharge the air by moderately unbolting the air-release valve (16) to maintain the air pressure at 80KPa.
III. Operation Principle and Process
1. Principle of Time, Temperature, Pressure Chain Safety Control:
The machine's rated working pressure is 0.085MPa, indicated by the pressure gauge (22). The overflow valve (21) automatically discharges air when the rated working pressure is reached. The safety valve (20) automatically discharges air if the pressure exceeds 1.3 times the rated working pressure. The system includes six safety methods, such as time relay controlling working time and temperature control meter managing temperature.
2. Fastening Method for Opening and Closing the Cover:
To open the cover, revolve the fastening handle (12) counterclockwise, press down the crossbeam (11), and pull the crossbeam hook (9). To close, put down the cover, press down the crossbeam, hitch the hook to the cylinder, revolve the fastening handle clockwise, and fasten it with proper strength until the cover is hermetic.
3. Preheating and Treatment of Raw Oil:
Universal vegetable oils (except peanut oil) require proper frying to become edible and avoid a raw oil smell. Preheat the oil each time new oil is added or when using cold oil for the first time. The method involves heating the oil to 140°C to 160°C for 10-20 minutes (depending on the situation) until the raw oil in the boiler bubbles up. The cover cannot be opened until the air-release valve (16) is unbolted, all pressure in the boiler is discharged, the pressure gauge indicates “0”, and a 30-second wait has passed. During this preheating and raw oil treatment, no food is in the boiler, meaning there is no vapor or pressure indication on the gauge, so pay special attention to the heating time and temperature. It is best to open the cover after this process.
4. Operation Process of Cooking and Frying:
After heating as described, reset the working temperature and time. Place the prepared food in the frying basket, then place the basket in the boiler using the special handle, ensuring it is fast and balanced. Quickly lid the cover, balance it, fasten the fastening screws with proper strength, and confirm the air-release valve is closed. The pressure indication on the pressure gauge should increase slowly. When the pressure reaches 60KPa to 80KPa, the overflow valve (21) will automatically discharge air, keeping the pressure constant. When the temperature reaches the set invariant value and the time reaches the set value, the power supply will be closed. Wait for a moment, then manually turn on the air-release valve (16) to discharge the air. Once the air in the boiler is completely discharged and the pressure gauge (20) indicates “0”, loosen the fastening screw (13), press down the crossbeam (11) with your hand, loosen the crossbeam hook (9), and open the cover (23). Failure to do so poses a danger. When opening the cover, the operator should stand to the side to prevent hot air from scalding their wrist. The operator must have a good understanding of the machine's operation for safety. Workers are forbidden to leave the working scene and must supervise the production process. If any abnormal situation occurs, stop the machine immediately, identify the cause, and resume operation only after the issue is resolved.
5. Method of Adding Oil and Filtering Oil:
When the oil in the boiler needs replacing or filtering, the cover cannot be opened until there is no pressure. After the oil temperature has cooled completely, turn the handle of the oil drain valve (3) to a vertical position and pour the oil into the storage tank (2). Clean away all residue and pour in new oil.
IV. Safety Points for Attention
To protect people from injury, electric shock, or fire, and to prevent machine malfunctions, please comply with the following points:

Cautionary Notes:
- Please use a power line of three-phase five-wire ~3N400V, ensuring the yellow and green wires are reliably grounded.
- Do not touch the power line with wet hands to avoid electric shock.
- Do not place the power line where it can be pressed by a table, chair, or any other device, especially where there are sharp angles and edges, as this can damage the power line.
- Do not place the power line across a route-way.
- The food must be aired before frying, and poured into the boiler slowly after ensuring there are no water drops on the food. Otherwise, water drops entering the hot oil can cause spattering and injure people.
Further Cautionary Notes:
- The amount of food added at one time should not exceed 8kg to prevent oil overflow and potential fires.
- If any damage or scratch is found on the power line, replace it immediately to prevent electric shock or fire. When replacing, use No. IEC245-57 oil-resistant flexible cable with a cross-section of not less than 2.5mm².
- The power supply input line must comply with the machine's electricity power requirements, and the power supply tie-line must be confirmed to bear the maximum electric current of all equipment to prevent fire or danger.
- If it is necessary to open the apparatus cabinet, please ask an eligible technician to operate it, as there is a danger of casualty.
- This equipment is a common waterproof apparatus; therefore, it is forbidden to rinse the equipment or cleanse it with spray, as this may cause human casualty or severe damage to the machine.
- The oil temperature must not exceed 200°C, as it is prone to fire.
Warning Notes:
- After the boiler receives power for heating, do not touch the heating pipe inside the boiler with your hand, as you may be burned.
- Do not operate the machine without food.
- Prevent this equipment from drenching or being affected with damp.
- Do not place it in a corrosive environment or expose it to severe vibration.
- Keep away from flammable and explosive articles, and from places where there is a fire.
- Do not use used oil with impurities, as this can lower the boiling point and lead to excessive foaming or thick smoke.
Points for Attention During Operation:
- The machine should be operated by an appointed person who is skilled in its operation.
- Customers are not allowed to touch the fryer while it is in operation to prevent scalding.
- Be careful when moving the machine. Do not strike it when it is experiencing trouble; instead, find the cause carefully.
- Do not heat the fryer if no oil has been poured (used oil is forbidden) or if the oil level does not meet the requirement (minimum liquid level mark line), as this will burn out the heating pipe. However, do not overfill with oil; the added oil cannot exceed the maximum liquid level mark line, or excessive oil will overflow, causing danger. Additionally, do not rinse the heating pipe with cool water if it is not cooling, as this may cause the heating pipe to crack.
- Fasten the cover before heating. It is forbidden to screw the fastening handle forcefully or discharge oil while the machine is in operation. You cannot open the cover until the pressure in the boiler has completely discharged, the pressure gauge indicates “0”, and you have waited for 30 seconds, to prevent oil under pressure from bursting out and causing danger.
- To maintain good hermetic performance of the boiler and cover, do not use the handle or other hard apparatus to knock the cover or the edge of the boiler.
Points for Attention When There is Trouble or Abnormal Situation:
Warning Notes:
- Please do not use the machine when it is in an abnormal state. Do not dismantle or repair it without permission, except for daily upkeep as specified in the operation manual. For other repairs and debugging, ask an eligible technician to operate the machine to avoid electric shock or severe damage.
- Stop using the machine immediately if there is any oil leakage and contact the franchiser promptly.
V. Maintenance and Upkeep of the Machine
- Clean the overflow valve twice weekly: screw the screw lid and clean the gravity block to ensure it jumps freely and opens and closes flexibly. Check the general electricity and screws of the power line, and joints monthly. If any are loose, fasten them to ensure good contact and sensitive control.
- Clean away any residue from the electrothermal pipe in the boiler and cabinet after daily work is completed to maintain cleanliness, sanitation, and enhance the machine's lifespan.
- After a relatively long period of use, the rubber gasket should be replaced if it is found to be aging and ineffective. Loosen the glue bar fastening screws on all four sides of the cover, slowly remove the glue bar from the groove, insert new sealing rings into the groove, and fasten the screws.
