1. Technical Service
Regular technical checks, once or twice a year, help prolong the appliance's life and ensure optimal operation. Ensure that all assistance is performed solely by qualified personnel. When ordering spare parts or requesting information, always provide the serial number and model, which are located on the "technical data" plate at the rear of the appliance.
2. General Warnings
Important: Keep this instruction book with the appliance for future reference. These warnings are for your safety and the safety of others. Read them carefully before installing or using the appliance.
- If the packaging is damaged upon receipt, note "I REVERSE THE RIGHT TO CONTROL THE GOODS" on the delivery note, specify the damage, and obtain the driver's signature. Submit a written claim to the seller within 4 calendar days of receipt. No claims will be accepted after this period.
- The appliance is intended for professional use and must be operated by qualified personnel trained in its use.
- Any modifications to the electrical system required for installation must be performed by competent personnel only.
- Modifying or attempting to modify the appliance's characteristics is dangerous.
- Never clean the appliance with direct water jets, as water ingress could compromise the machine's safety.
- Before performing any maintenance or cleaning, disconnect the appliance from the electrical mains and allow it to cool down.
- Do not attempt to perform periodic checks or repairs yourself. Contact the nearest Service Centre and use only original spare parts.
N.B.: Improper or incorrect use, or failure to observe installation instructions, releases the manufacturer from all responsibility. The directives in the "POSITIONING" paragraph must be strictly followed.

4. Instructions for the Installer
These instructions are for qualified installers to ensure correct installation, adjustment, and maintenance according to current legal regulations. All operations must be performed with the appliance disconnected from power.
Before use, carefully remove protective adhesive film from stainless steel parts. Remove any glue residue with an appropriate solvent.
Positioning
Position the appliance perfectly horizontally (feet are adjustable) at least 10 cm from side and rear walls to allow natural ventilation. The appliance is not suitable for embedding.
Electrical Connection
Connect the appliance to the electrical mains according to current legal regulations. Ensure:
- The power supply voltage and frequency match the "technical data" plate.
- The system can support the appliance's load (see "technical data" plate).
- The power supply system has an adequate earth connection.
- A single-pole switch with a minimum between-contacts aperture of overvoltage category III (4000 V), sized for the load and compliant with regulations, is installed between the appliance and the mains.
- The single-pole switch is easily accessible when installed.
- The yellow/green earth wire is not interrupted by the switch.
- The power supply voltage does not deviate by ±10% when the appliance is operating.
- If the supply cable is damaged, it must be replaced by the manufacturer, technical support, or a qualified person to avoid risk.
Connection of Power Cable
The terminal board is on the rear panel. Open the cover by leveraging the side fins with a screwdriver. Loosen the cable gripper screw and pass the cable through. Arrange conductors so the earth conductor detaches last in case of faulty traction. Connect the phase conductor to "L", the neutral conductor to "N", and the earth conductor to the [equipotential symbol] (⊕) terminal. Tighten the cable gripper and close the cover. The appliance must be connected to an equipotential system, verified according to regulations. Use the appropriate terminal marked with the [equipotential symbol] (⊕) for this connection between appliances. The equipotential conductor must have a minimum diameter of 2.5 mm².
Connection to Water Mains
The appliance requires softened drinking water with a hardness of 0.5°F to 3°F. A water softener is obligatory to reduce scaling inside the proofing chamber. Water pressure must be between 100 to 200 kPa (1.0–2.0 bar). Connect to the water supply using the 3/4" threaded solenoid valve on the back, fitting a mechanical filter with a cut-off cock. Before connecting the filter, flush the pipe to remove waste.
5. Use Instructions (for the user)
This appliance is not intended for use by persons (including children) with reduced physical, sensory, or mental capabilities, or lack of experience and knowledge, unless supervised or instructed by a responsible person. Children should be supervised to ensure they do not play with the appliance.
For the first use, run the appliance load-free for at least 15-20 minutes to eliminate unpleasant smells from residual work grease.
This appliance must be used solely for its intended purpose: heating and leavening frosted foods.
Warning: Do not place salt or salty food in the proofing chamber, as salt can irreparably damage the appliance. Maxima Kitchen Equipment denies any responsibility for damages.
6. Residual Risks (for the user)
- Keep untrained personnel away from the machine.
- The appliance contains electrical parts and must never be washed with a jet of water or steam.
- The appliance is electrically connected: disconnect power before any cleaning operation.
- Do not use the door handle to move the appliance, as the glass panel may break.
7. How to Use the Control Panel
Key to the symbols on the control panel:
- ON/OFF switch key: [power button] To electrically power up the appliance.
- Temperature knob: [temperature dial] To vary the heating temperature for values from 25°C and 65°C.
- Humidifier button: [humidity button] Allows humidity to enter the proofing chamber when it is already warmed.
Control thermostat indicator light: The indicator light goes OFF when the selected temperature is reached in the leavening compartment. It lights up again when the thermostat trips to re-establish this temperature.
8. Routine Cleaning and Maintenance
WARNING: Cut power to the appliance before every operation.
General Cleaning
Clean the appliance when it is cool. For steel parts, do not use products containing chlorine (e.g., sodium hypochlorite, hydrochloric acid), even diluted. Use specific off-the-shelf products or a little hot vinegar. Rinse thoroughly with water and dry with a soft cloth. Clean the glass door with hot water only, using soft cloths. Do not wash the appliance with direct water jets. Do not use corrosive substances (e.g., hydrochloric acid) near the appliance, as vapours could corrode the outer steel housing.
9. Technical Assistance
Before leaving the factory, the appliance was fully regulated and tested by expert personnel to guarantee optimal operating results. All repairs and settings must be performed with utmost care, respecting national safety regulations. Always contact your retailer or the nearest Service Centre, providing details of the problem, appliance model, and serial number (on the rear rating plate). 10. Information to Users
Pursuant to Directive 2012/19/UE, the crossed-out bin symbol [waste disposal symbol] ?️ on the appliance indicates that at the end of its life, the product must be collected separately from other waste. Users must deliver the appliance to appropriate centres for separate collection of electrical and electronic waste. This ensures proper treatment, recovery, and disposal, promoting the use of recycled materials and reducing negative environmental and health impacts from improper waste handling.
11. Wiring Layout

12. Established Warranty
Maxima Kitchen Equipment products are exclusively designed for food use and are covered by warranty complying with Laws Regulation article n. 1490 and following, for professional users such as VAT holder customers purchasing from a Distributor. Maxima Kitchen Equipment products are professional and certified according to IEC 60335-1 standards and are sold only to professional users.
Subject to revocation, the Seller will repair, at its sole discretion, only those parts proving to have an original defect, provided the customer has reported the defect within 12 months from purchase and within 8 days of discovery, in writing, enclosing a copy of the invoice, receipt, or sales receipt proving purchase.
The guarantee is expressly excluded in the following cases:
- Any failure or breakage of components caused by transport.
- Damage caused by inadequate electrical, plumbing, or gas installation, or by abnormal function of the same.
- Damage resulting from incorrect installation or installation not in accordance with the manual, particularly damage due to failure of connected chimneys and discharges.
- Product use for purposes other than intended, as specified in technical documentation released by Maxima Kitchen Equipment.
- Damage caused by use not in accordance with the user and maintenance manual.
- Product tampering.
- Adjustment, maintenance, or repair performed by unqualified personnel.
- Use of non-original or unauthorized parts by Maxima Kitchen Equipment.
- Damage or defect caused by negligence, recklessness, or contravention of the manual's instructions.
- Damage caused by fire, natural events, accident, or any cause not dependent on the manufacturer.
- Damage to parts subject to normal wear requiring periodic replacement.
Also excluded from the guarantee are: painted or enameled parts, knobs, handles, mobile or removable plastic parts, light bulbs, glass parts, seals, electronic parts, and accessories. Transport costs from the consumer/end user/purchaser to Maxima Kitchen Equipment Ltd. and vice versa are not covered. The warranty does not include oven replacement or installation costs. Products purchased used or from unauthorized third parties are excluded. Maxima Kitchen Equipment SRL is not responsible for direct or indirect damages caused by product failure or forced suspension of use.
Warranty repairs do not extend or renew the warranty period. Parts replaced under warranty are guaranteed for 6 months from shipment date, attested by a movement document issued by Maxima Kitchen Equipment. No one is authorized to modify these terms and conditions verbally or in writing.
13. Availability and Supply of Spare Parts
Maxima Kitchen Equipment guarantees the supply of spare parts for a period not exceeding 12 months from the invoice date of the appliance purchased. After this date, availability of spare parts cannot be guaranteed.
Products included in manuals may be subject to technical and functional design changes by Maxima Kitchen Equipment without prior notice, aimed at improvements without compromising essential functional and safety features.
