Important Safeguards

  1. READ ALL INSTRUCTIONS.
  2. To protect against risk of electric shock, do not put appliance in water or other liquids.
  3. Do not touch surfaces that may be hot. Use handles and knobs provided.
  4. Unplug from outlet when not in use, before putting on or taking off parts and before cleaning.
  5. Avoid contact with moving parts.
  6. Do not operate the Commercial Griddle or any other electrical equipment with a damaged cord or plug, or after the unit malfunctions, or is dropped or damaged in any manner. Return it to the nearest Authorized Service Center for examination, repair, and/or adjustment.
  7. The use of attachments not recommended may cause fire, electric shock, or injury.
  8. Do not use outdoors.
  9. Always check that the temperature dial is in the OFF position before plugging cord into wall outlet. To disconnect, turn the temperature dial to OFF, then remove plug from wall.
  10. Do not place near a hot gas or electric burner or heated oven.
  11. Do not let cord hang over edge of table or counter, or touch hot surfaces.
  12. When in ON position, the Commercial Griddle should always be on a stable counter-top or table.
  13. Do not use appliance for other than intended use.
  14. This appliance is not intended for use by persons (including children) with reduced physical, sensory or mental capabilities, or lack of experience and knowledge, unless they have been given supervision or instruction concerning use of the appliance by a person responsible for their safety.
  15. Children should be supervised to ensure that they do not play with the appliance.

Notes on the Plug

This appliance has a grounded 3-prong plug. Connect to a properly grounded outlet only. If the plug does not fit fully into the outlet, contact a qualified electrician. Do not attempt to modify the plug in any way.

For EGG-360, EGG-360D, EGG-14B, EGG-14D: These models use a 120V, 1800W NEMA 5-15 plug and require 5-15R receptacles.

For EGG-24B, EGG-24D, EGG-818, EGG-818D, EGG-820, EGG-820D: These models use a 240V, 3500W NEMA 6-15 plug and require 6-15R receptacles.

Notes on the Cord

A short power supply cord is provided to reduce hazards from entanglement or tripping. An extension cord may be used if its marked electrical rating is at least as great as the appliance's rating. Ensure the cord is arranged so it does not drape over the counter or table edge where it can be pulled on or tripped over.

Electric Power

If the electrical circuit is overloaded with other appliances, your appliance may not operate properly. It should be operated on a separate electrical circuit from other appliances.

Adjustable Feet Installation

(For models shipped with feet un-assembled ONLY)

Ensure all feet are installed correctly before operation. Your griddle includes four adjustable feet, packaged unattached. Each foot has a screw for assembly. Locate the four screw holes at each corner of the bottom housing. Insert the screw and turn the foot clockwise until snug. Repeat for all four feet. The height of the feet can be adjusted by rotating the bottom of the foot. Ensure all four feet are adjusted to the same height to make a level cooking surface.

Operating Instructions

Before First Use

  1. Remove Commercial Griddle from packaging.
  2. Place on a firm and stable surface.
  3. Remove all packaging and instruction book.
  4. Read all instructions before you begin to cook.
  5. Keep this instruction book in a safe location for future reference.
  6. It is highly recommended that you clean the griddle before first use. Use a damp cloth to wipe out the anti-rust oil on the surface of the griddle cooking plate (this oil prevents rusting and is not a sign of use).
  7. After cleaning, the Commercial Griddle is ready for use. Before initial use, turn the thermostatic control to the medium setting (approximately 200°F). Allow to heat and burn-in for approximately 30 minutes. This will allow oils and other sediment to burn off. Smoke may be seen from the grill plates when the machine is first switched on, which is normal. The griddle may emit a slight odor, which is normal and will quickly dissipate.

Season the Griddle Surface: (First use and after weekly cleaning)

Allow the unit to cool or heat to approximately 200°F. Rub cooking oil, shortening, beef suet, or the like on the griddle surface with a clean cloth. Heat the griddle to 350 – 400°F and allow it to operate for approximately 20 minutes. Then turn the temperature dial down to approximately 200°F and allow the surface to cool to the set temperature. Remove any excess oil and wipe clean. Repeat the process: oil, heat for 30 minutes, cool, and wipe clean.

Daily Operation

Preheat the unit to the desired cooking temperature. Prior to cooking, lightly oil and wipe the surface clean to remove any contaminants that may have accumulated or seeped from the surface and/or perimeter since last use, ensuring a clean non-stick cooking surface. Please check that the voltage of the power supply conforms to the rating plate (on the back of the machine). The body must be properly earthed. Do not place flammable or explosive objects near the machine. Keep the machine in an environment with superior ventilation.

Operating Steps

  1. Place the machine firmly, connect the power, and the green power indication light turns on. Adjust the working temperature to the required setting; the heating light turns on, indicating the heating element is working.
  2. When the temperature reaches the preset level, the yellow light turns off, entering the thermostat state. The user can then start cooking. When the temperature drops, the thermostat will automatically reactivate. This process cycles repeatedly to maintain the temperature within the set scope.
  3. Grills with two thermostats (EG-24 Series & EG-820 Series) feature independent controls per half heating zone, creating two independent cooking stations in one unit.
  4. When the food is ready, carefully remove it with a spatula. Avoid using metal to roll or scrape food, as this can damage the heating plate surface.
  5. The oil drip tray collects remaining oil or grease and should be cleaned out frequently to avoid overflow.

Remarks: There are 3 types of griddle surface: Full Flat, Chrome plated (Model No. ends with a "D"), and 1/3 chrome plated/balance flat (Model No. ends with a "-2"). If your specific model is not listed, refer to items with similar model numbers for operation information, as EG-360 and EG-360D are identical in function.

Care and Maintenance

Daily

After each day, with the griddle hot (approx. 300°F), clean the griddle with a grill brush or grill brick. Do not use cleaning chemicals or soaps, as they can be absorbed by the surface and affect food flavor. If necessary, use only clean water, oil, and/or a food-grade degreaser. Remove and empty the grease container, clean the grease trough and exterior of the unit. Allow the unit to cool and apply a thin coating of cooking oil if necessary to prevent corrosion.

Weekly

Perform the daily cleaning process. Allow the griddle to cool completely and thoroughly clean the griddle plate with a food-grade degreaser. Do not use cleaning chemicals or soaps. Season the griddle per the instructions in the Start-up section. Do not allow the griddle to remain unseasoned or without a thin coating of cooking oil to prevent corrosion.
