1. PRESENTATION OF THE UNIT

The Rotisserie range "Grandes Flammes MILLENIUM" is gas-powered with an electrical power supply of 208-240V + earth.

Any cooking appliance generates heat and grease. Ensure premises are protected against fire and mechanically ventilated, in accordance with security and health regulations. Consult specialized companies for ventilation, plumbing, electricity, and building requirements (non-slip tiles, firewall, etc.).

It is advised to hire a qualified dealer for connection and commissioning, provided that electrical and gas bookings are handled by licensed companies. Interventions on electrical parts must be performed by qualified personnel according to standards.

Grounding Warning: This appliance is equipped with a three-prong grounding plug for protection against shock hazard. Plug directly into a properly grounded three-prong receptacle. Do not cut or remove the grounding prong.

2. SETTING UP UNIT AND STARTING UP

Before connecting and starting up, ensure gas and electrical connections are present. This work is at the client's expense and must be done by an approved company.

The required air flow for combustion is 20.7 ft³/h per 1000 btu/h of calorific flow. Combustion and ventilation air flow must be free and unhindered.

The gas supply must be turned off at the LP gas supply bottle when the unit is not in use.

2.1. SETTING UP

2.1.1. UNPACKING

Unpack the rotisserie, which is circled, filmed, and fixed on a pallet.

2.1.2. INSTALLING THE UNIT NEXT TO WALLS AND APPLIANCES

Maintain a distance of 3/4 inch between side panels and adjacent walls. Openings must not be obstructed. The unit with the glass door open should be placed at a minimum distance of 3/4 inch from adjacent walls.

2.1.3. APPLIANCE EQUIPPED WITH WHEELS

The device must be placed on perfectly level ground and locked in a stationary position for use and storage.

2.1.4. ENVIRONMENT

Do not install near steam, grease (frying), water projections, high temperatures, or other adverse conditions. Do not install under unprotected combustible surfaces. Keep the area around the machine clear of combustible materials.

Indoor Installation or Open Kitchen Clearances:

  • Side clearance: 3/4 inch
  • Rear clearance: 4 inches

2.2. GAS CONNECTION

Connect the rotisserie to the gas supply, interposing a block valve to isolate it. The gas supply conduit diameter should be sized to minimize losses, based on its path and the rotisserie's total power.

Important: Check that the adjustments correspond to the nature and pressure of the gas distributed in the installation. The pressure regulator (Maxitrol) supplied must be set according to the gas used. To check gas supply pressure, connect a manometer to the water column pressure tapping located on the unit's gas connection side when all burners are ignited. The measured gas pressure must equal that shown on the rating plate.

Supply valves do not require adjustment for extra service life.

2.2.2. POSITION OF THE THERMOCOUPLE & PILOT LIGHT

Components include:

  • Cast Iron Spikes
  • Pilot
  • Thermocouple
  • Cast Iron Spike Support
  • Center distance A = 3/4 inch
  • Dimension B = 5/8 inch

2.2.3. POSITION OF THE INJECTOR AND THE SLEEVE FOR THE ADJUSTMENT OF THE PRIMARY AIR.

  • Air Inlet Sleeve
  • Air Ring
  • Injector
  • H M4 SCREW
  • Dimension "D" for setting the primary air

2.2.4. FIXED INSTALLATION / MOBILE INSTALLATION

Fixed Installation: Connection type union 1 or 2. The use of TURBOGAS or similar in professional fixed installations allows flexibility in kitchen design.

Mobile Installation: Possible with a tandem of TURBOGAZ, TUSHGAS, or similar.

*R = minimum bend radius of hose. These flows are given for reference conditions: Temperature 15°C, Atmospheric pressure: 1013 mbar, Dry air.

Safety: The hose must not touch a hot wall. Install a shorter cable or chain than the gas pipe between the rotisserie and a fixed wall.

2.3. ELECTRICAL CONNECTION

Electrical Rating: 208-230V~60Hz.

Check that the installed power matches the characteristics on the unit's rear signal plate.

Warning: For continued protection against fire and electric shock, replace the fuse with a 10 Ampere fuse.

The unit is delivered in MONOPHASE + EARTH configuration.

2.4. EVACUATION - SMOKE TYPE: A

The unit is designed for installation under an extraction system with ventilation.

A heat deflector with holes is placed above the rotisserie.

3. ADAPTING THE UNIT IN CASE OF CHANGING FROM ONE GAS TO ANOTHER

3.1. CHANGING THE INJECTOR

The process involves replacing the injector and adjusting the primary air. Key components include:

  • GAS SUPPLY PIPE
  • ELBOW NUT OF 90°
  • TIGHTENING RINGS
  • INJECTOR HOLDER
  • INJECTOR
  • AIR INLET SLEEVE
  • SLEEVE FOR THE ADJUSTMENT OF PRIMARY AIR
  • BURNER

3.3. ADJUSTMENT OF THE PRIMARY AIR

Adjust the opening of the air sleeve (dimension D) according to the type of gas used, referencing chapter 2.2.3 and the table of burner adjustments (chapter 3.3).

3.4. TABLE FOR ADJUSTMENT OF ONE BURNER

Refer to the nameplates for specific injector characteristics, injector diameter, primary air opening (D), flow volume, mass flow, reduced heat flow, and pressure at the tap for different gas types (G20, G25, G31 at various pressures).

Procedure for Changing Injector and Adjusting Primary Air:

  1. Remove the outer left panel.
  2. Loosen the gas burner supply pipe nut with a 23mm wrench.
  3. Loosen the 90° elbow nut on the gas supply pipe using a 19mm wrench, blocking the elbow with a 17mm wrench.
  4. Turn the gas supply pipe upwards.
  5. Remove the 90° elbow, injector holder, and injector by unscrewing them.
  6. Unscrew the injector using a 17mm wrench, blocking the injector holder with a 24mm wrench.
  7. Tighten the new injector onto the injector holder without forcing.
  8. Refit the 90° elbow, injector holder, and injector.
  9. Loosen the air ring retaining screw with a 7mm wrench and pull it back.
  10. Adjust the position of the injector relative to the air intake sleeve's interior (3/8" dimension) using a wedge, as per installer instructions.
  11. Reposition the gas supply pipe using the wrenches used during disassembly.
  12. Adjust the air ring position (dimension "D") over the air intake sleeve using a wedge, referring to the installer instructions table.
  13. Secure the air ring with the 7mm wrench.
  14. Perform a complete leak test of the gas circuit.
  15. Replace the outer panel.

CONTROL CIRCUIT GAS SEAL WITH A SPRAY DETECTOR

  1. Remove the outer left panel.
  2. Connect the rotisserie to the gas supply.
  3. Light the burners.
  4. Spray all gas circuit connection points with a "gas leak detector" spray.
  5. If bubbles form rapidly, review application and assembly of gas line connection components.
  6. Repeat until bubbles are eliminated.
  7. Turn off the burners.
  8. Replace the outer left panel.

3.4. LABEL SET

The label specifying the gas setting must be attached to the appliance. The new label is provided with the new injectors when changing gas types.

3.5. ADJUSTMENT OF THE PILOT

  • For natural gas (G20 and G25): Unscrew the pilot screw (vis pointeu) by 1/4 turn and check that the flame heats the thermocouple correctly.
  • For propane gas (G31): Turn the pilot screw fully without blocking it.
  • Seal the adjustment.

3.6. ADJUSTMENT OF THE REDUCED FLOW

Components:

  • THERMOCOUPLE CONNECTION
  • PRESSURE PLUG GAS ARRIVAL (ramp)
  • GAS OUTLET (towards injector)
  • ADJUSTMENT OF THE REDUCED FLOW (screw sealed at factory)
  • CONNECTION OF PILOT
  • ADJUSTMENT ON LOW SETTING (screw sealed at factory)

3.6.1. ADJUSTMENT OF REDUCED FLOW

Connect a manometer to the pressure plug and adjust to the required pressure (refer to gas categories table, chapter 3.1.1) using the reduced flow screw. Seal the adjustment.

3.6.2. ADJUSTMENT OF LOW SETTING

Set the tap to the minimum setting. Connect a manometer to the pressure plug and adjust the pressure to the required level using the low setting screw. Seal the adjustment.

3.7. TABLE FOR THE ADJUSTMENT OF THE SECONDARY AIR

This table details the secondary air shutter settings (Dim Ø S Ø) for various models and gas types (G20, G25, G31 at different pressures). Settings include UPPER, MIDDLE, LOWER, and CLOSED positions.

Adjustment is done by loosening screw A, moving the sliding plate band, and tightening screws A.

4. ELECTRICAL DRAWING

Engines and terminals are located inside the right compartment. Switches and pilot lights are on the front right side of the unit. Halogen lamps are located in the strip.

The electrical diagram shows connections for motors, switches, lamps, and transformer.

Detailed nomenclature and exploded views are provided for the central part, right side, and left part of the rotisserie.
