Warnings
This instruction booklet must be kept with the dishwasher for future consultation. If the dishwasher is sold or transferred to another user, ensure the booklet accompanies the appliance.
- Read the instruction booklet carefully before installation and first use.
- Adaptation of electrical and water systems must be carried out only by qualified operators.
- This dishwasher is a professional machine for adult use by qualified personnel. The Manufacturer is not responsible for improper use, maintenance, or repair.
- The appliance can be used by trained youth aged 15 and above, and persons with reduced physical, sensory, or mental capabilities, or lack of experience and knowledge, provided they are supervised.
- Children shall not play with the appliance.
- Cleaning and user maintenance shall not be made by children without supervision.
- The user must not carry out any repair and/or maintenance operations. Contact qualified personnel.
- Disconnect the machine from the main electrical supply before any service/maintenance operation. Switch off the machine from the control panel, drain the wash tank, and disconnect the electrical supply via the omni-polar switch. Shut off the water supply valve(s). Failure to comply constitutes misuse and may cause damages and injuries.
- Servicing must be performed by authorized personnel.
- Only use original replacement parts; otherwise, the product warranty is invalidated.
- Do not use old load pipes; use only new ones.
- Only qualified personnel can access the control panel when the main power switch is OFF.
- Follow the instructions in the manufacturer's booklet for cleaning operations.
- WARNING: FAILURE TO COMPLY, EVEN PARTIALLY, WITH THE PRESCRIPTIONS IN THIS MANUAL WILL RENDER THE PRODUCT WARRANTY NULL, AND THE MANUFACTURER SHALL NOT BE LIABLE.
1. Machine Description
1.1 Machine description
The machine consists of a main unit with a door, a control panel, and standard equipment including one stainless steel rack, one set of 8 trays support, and one inox spatulas rack. Optional equipment may include a Heat Recovery system, a detergent dispenser, a drain pump, and a probe for detergent/rinse aid level detection.
A wall-hung main power switch should be installed by a serviceman for installation, supply, and care, according to local laws.
1.2 Machine features
The machine operates with a 55°C wash cycle with detergent and an 85°C rinse cycle with rinse-aid injection. It is designed for washing trays, baking pans, food containers, and general pans with human food residue. It is not suitable for articles polluted with petrol, paint, chips of steel or iron, fragile objects, or materials not resistant to the washing process. Do not use acidic corrosive chemical products, alkaline, solvents, or chlorine-based detergents. The machine has a safety device that stops the unit if the door is opened during operation.
Sound levels are specified as:
- LpA = 70dBA ± 2.5 (machine with 700 x 700mm racks)
- LpA = 73dBA ± 2.5 (machine with 850 x 725 mm racks)
- LpA = 74dBA ± 2.5 (machine with 1350 x 725 mm racks)
Note: Test made according to EN 60335-2-58/A11.
2. Machine Installation
2.1 Dataplate
The dataplate contains essential information about the machine, including Model, Serial Number (S/N), Power source (e.g., 400V 3N 50HZ), Total power installed, Dynamic Pressure, Envelope protection degree (IPXX), and Total electricity absorption. It also indicates the product family and manufacturing year.
2.2 Handling the product
The machine must be handled using a lift truck, following the grip points indicated in Pict. 1. Secure the machine to prevent vibrations or shocks during transportation. Slinging with ropes is not recommended.
2.3 Reception of the appliance
Before accepting the machine, verify the data on the dataplate matches the required specifications and available electrical supply. After unpacking, check for any transport damage. If damaged, inform the retailer. Do not install if safety is compromised. Double-check all hose clamps, nuts, bolts, and fasteners for tightness to prevent leaks. Dispose of packing material as per chapter 8.1.
2.4 Storage
Store the machine in a dry environment with temperatures between +4°C and +50°C, and humidity below 90%. Periodically check stored parts for deterioration. Do not expose the machine to atmospheric agents (rain, sun, cold). Do not place material on the packed machine. Do not rotate the machine during storage (see Pict. 2).
2.5 Machine equipment
Standard equipment includes the use and maintenance manual, wiring diagrams, and a plastic-coated maintenance diagram. A copy of the wiring diagrams should be kept inside the electrical board. Installation must be performed by a qualified engineer.
2.6 Prepare for installation
This section provides guidelines for installation, which must be performed by a qualified engineer.
2.7 Room features
Install the machine in a room with a temperature range between 5°C and 35°C. The machine's thermostatic sensors require a minimum room temperature of 5°C for proper functionality. Ensure the machine reaches room temperature before starting.
2.8 Steam evacuation
For environmental hygiene and operator comfort, the installation room should have at least 10 air volume changes per hour. For small wash rooms, 15 air volume changes per hour are recommended. If the machine is equipped with a Heat Recovery System, the air-volume changes may be halved.
2.9 Electrical connection - Characteristics
Electrical connection must adhere to current technical standards. Ensure the supply voltage matches the machine plate and the network can handle the power absorption. Install a suitable omni-polar automatic fuse switch for complete disconnection from the network (overvoltage category III). This switch must be dedicated solely to this circuit and installed nearby. Ensure the appliance is linked to an efficient ground connection. An undersized or poor ground connection may lead to corrosion or pitting on stainless steel plates.
2.10 Water supply connection - Characteristics
Water connections must comply with local standards. The water system must meet the parameters in Tab. 1:

Connect the water supply with an interrupt valve. If dynamic pressure is less than 2 bar (200 kPa), a pressure pump is required. If pressure exceeds 400kPa, a pressure reducing device must be installed. For water hardness above 8°f, a water softener must be used. Damages caused by hydraulic limestone are not covered by warranty. Periodically check water hardness. Ensure water supply temperature is within the specified range. Machines with Heat Recovery System must be supplied with cold water (max 15°C).
WARNING: Heat Recovery system and Steam Condenser installation (optional): It is strictly forbidden to connect the machine's vent directly with the outdoor. Cold weather conditions might seriously damage the Thermal Recovery system or the Steam Condenser.
****The water supply temperature shall never exceed 55°C. The emptying tube should always be connected to a siphon. Maximum drain height is 15 cm.
2.11 Water supply characteristics
The machine water supply must be potable and meet parameters in Tab. 2:

Notes: Out of range values might lead to corrosion, scaling, blackening/tarnishing, and reduced performance. A water test is recommended annually.
2.12 Connecting to a steam generator (special versions on request)
Place a steam shut-off valve nearby. The inlet steam must meet parameters in Tab. 3:

If steam pressure exceeds 0.7 Bar, install a pressure reducer. Install a condense relief valve with a flow rate of at least 25 kg/h on the machine outlet.
2.13 Positioning the machine
Remove packing with care. Lift the machine as described in 2.2. Position the machine according to the installation diagram. Maintain a minimum distance of 50 mm from walls for ventilation (Pict. 3). Install suction hoods for proper room ventilation. Level the machine by adjusting the support feet (Pict. 4). Do not use heat exchanger lifting hooks for relocating the entire machine (Pict. 5).
2.14 Electrical connection
Ensure voltage matches the data-plate. The machine has a terminal for bonding different appliances to avoid electric shock risk. Use a new, flexible electrical supply cable (H07RN-F or equivalent). If the cable is damaged, it must be replaced by the Manufacturer, Authorized Service, or a qualified technician. For three-phase pumps, check correct motor rotation.
2.15 Hydraulic connection
Connect the machine draining pipe to the rear connection. The emptying tube must be connected to a siphon to prevent odor back-up. Ensure water flows freely with a minimum slope. If water cannot be discharged to a lower level, install a drain pump (optional).
2.16 Starting
At installation engineer's care.
3. Control Panel and Relative Symbols
The control panel features an LCD display (G) and several buttons:
- A (Cycle Start/Stop): Multi-chromatic button. Red light indicates filling/heating. Flashing red indicates an alarm. Green light indicates machine ready. Blue light indicates machine in operation. Flashing blue indicates stand-by or anti-freeze function.
- B (Machine power ON/OFF): Used for stand-by mode.
- C, D (Cycle Selection): Used to select wash cycles.
- E (Drain pump): Optional drain pump control.
- F (Info): Accesses information menus.
3.1 Programming - Setting the Parameters - Info Menu
This section allows viewing machine information. When the machine is in stand-by or ready, press INFO to access the menu. Use keys C (increase) and D (decrease) to scroll through menu items.
- Menu A: Set date and time. Use C and D to select values, and press Start (A) to confirm and move to the next field.
- Menu B: Provides information on probe status (optional).
- Menu C: Provides information on sensor status.
- Menu D: Displays the last 10 alarms with code, description, date, and time.
- Menu Firmware: Displays firmware information (FW.DISPLAY, FW.POWER, S/N, OPTIONAL, MODEL).
4. Operation
4.1 Machine start-up
4.1.1 Start-up
- Place surface filters. Do not use without filters.
- Close the dishwasher door.
- Open the water valve.
- Turn the main power switch ON. The display shows FIRMWARE, then STAND-BY or LOGO.
- Turn button B.
The machine starts when button A lights up. The STAND-BY message disappears. Button A lights white during software loading, then turns red. Water filling begins (display shows FILLING WATER). If equipped with WRAS certified Break Tank, filling is extended. Heating phase starts (display shows HEATING) until set temperatures are reached. During this phase, cycle selection or start is not allowed. AUTOMATIC START function can be enabled. After filling/heating, button A and display turn green.
4.1.2 Operation
- Load racks with objects to wash (see 4.2 Objects loading).
- Select the desired wash program using keys C and D, or by pressing and holding key A. Release A when the program is selected.
- Start the selected cycle by pressing key A. Button A turns blue.
During the wash, the display shows wash-tank and boiler temperatures, and a Cycle Progress Bar. After the wash cycle, a hot rinse cycle takes place. A blue/green flashing button A indicates the cycle has ended, and the display shows CYCLE ENDED.
Note: At cycle-end, keeping the door closed does not dry objects. Extract racks or keep the door open for evaporation. Button A turns green when the machine is ready for a new cycle. The last used cycle remains in memory. Change water at least twice daily or when needed.
AUTOMATIC START: Enables a self-activated wash cycle after filling/heating. To activate: Keep pressed key A for 10 seconds during filling or heating. Within 30 seconds, select the wash cycle using C or D, and confirm with A. The display will show AUTOMATIC START.
4.1.3 Switching OFF
- Turn button B. Display shows STAND-BY or LOGO.
- At the end of the day, clean the machine (see chap. 5. MAINTENANCE).
- Shut the water valve.
- Turn off the main wall switch.
- It is advisable to leave the dishwasher door open at the end of the day.
4.2 Objects loading
Coarsely clean objects from leftover food before loading. Rinsing is not necessary.
WARNING: Do not wash articles polluted with petrol, paint, chips of steel or iron, ash, sand, wax, lubricant grease. Do not wash fragile objects or material not resistant to the washing process.
Recommendations:
- Do not insert objects inside each other, covering them.
- Place objects so all surfaces are reachable by water.
- Ensure objects are stable and hollow containers are not overturned (e.g., baskets, pots, pans, bowls).
- Place hollow containers upside-down.
- Place objects with deep hollows face downwards so water can flow out.
- Ensure smaller objects do not fall from the rack.
- Check wash arms for free rotation and ensure they are not blocked by tall objects.
- Some food dyes may alter the color of objects and plastic parts, but this does not indicate a lack of heat resistance.
4.3 Use of detergent
The machine may be equipped with a detergent dispenser. Use NO FOAM type detergent suitable for industrial dishwashers. Introduce detergent into the tank. Good quality liquid detergents are recommended. An electric detergent dispenser is available upon request. Follow manufacturer's recommendations for chemical dosage based on local water hardness. A correct amount of detergent is crucial for successful washing. The display shows DETERGENT LEVEL if the optional sensor is installed and the level is low.
4.4 Use of rinse aid
The machine has a standard rinse aid dispenser. The rinse-aid chemical must be suitable for professional dishwashers. The display shows RINSE-AID LEVEL if the optional sensor is installed and the level is low.
4.5 Tank draining
Press key E until TANK DRAINING is displayed. The machine may have an optional discharge pump. During draining, button A lights blue and flashes. After draining, the machine returns to STAND-BY. If refilling for a new cycle, see 4.1 Machine start-up. Maximum permitted drain height is 100 cm. The drain must be ahead of a trap.
4.6 Emptying boiler and break tank (anti-freeze function)
This function drains the boiler and break tank for maintenance or emptying. Press button B to ensure the tank is empty. Press button A for 3 seconds to activate boiler and break tank draining. The message SELF-CLEANING appears, and button A flashes blue. If the wash-tank is full, draining will not start, and DRAIN WATER IN WASH TANK will be displayed. Once complete, turn the machine back on with key B. This function operates only if the boiler temperature is over 50°C.
4.7 Washing pumps
Washing pumps activate sequentially with a short delay to reduce electric peak.
WARNINGS:
- Accompany the door during opening and closing.
- Do not place material or objects on the machine.
- The machine has an IP protection rating against accidental water splashes; do not use pressure cleaning systems.
- Do not dip bare hands into water containing detergent. Wash immediately with plenty of water.
- Follow important rules: Never touch the appliance with wet hands or feet. Never use the appliance barefoot. Do not install in places exposed to water sprays. Do not cover intake or dissipation grids. Do not use water to extinguish fires on electrical parts.
- Disconnect from the main electrical supply after use and for any service/maintenance operation. Switch off the main switch, shut off the water supply valve(s).
- ATTENTION: INTERNAL CLEANING SHALL BE CARRIED OUT AT LEAST 10 MINUTES AFTER THE POWER SWITCH HAS BEEN TURNED OFF.
- ATTENTION: DO NOT INSERT HANDS AND/OR TOUCH PARTS LOCATED AT THE BOTTOM OF THE WASH TANK AND/OR AT THE END OF THE WASH CYCLE.
5. Maintenance
WARNING: The machine is not protected against pressurized water jets. Do not use pressure cleaning systems. Do not use bleach or chlorine-based detergents. Contact the seller of chemicals for proper cleaning instructions and products for periodic machine sanitation.
5.1 Regular Maintenance
To ensure perfect performance, clean the appliance daily:
- Turn the machine to STAND-BY mode (press button B).
- Remove and clean surface filters under running water (Pict. 6).
- Drain the sump water (see 4.1.3 Switching OFF).
- Remove rotors by loosening fixing screws, and clean nozzles and arms under running water (Pict. 7).
- Remove and clean the heat exchanger filter (if installed) under running water (Pict. 8).
- Reassemble parts and reposition wash pipes. Ensure nozzles and arms are correctly positioned and aligned.
- Clean the tub thoroughly using specific products.
- At the end of the day, leave the dishwasher door open.
- Automatic cycle of machine self-cleaning/rinsing: Recommended daily. With the machine on STAND-BY and tank empty, press key A for an automatic 60-second cycle.
- Turn off the water tap.
- Turn off the machine by switching the main power switch OFF.
5.2 Special Maintenance
Have a qualified technician inspect the machine once or twice a year:
- Clean the electrovalve filter.
- Remove residual deposits.
- Check watertight seals for water loading and unloading connections.
- Check components for wear and tear.
- Check dispenser operation.
- Check the efficiency of the door safety switch.
- A qualified electrician should check all internal electric connections at least once a year.
Every 3-4 years, double-check the tightening and efficiency of all electrical contacts, especially starters and relays. Increase control frequency if operating in heavy or intensive conditions.
6. Compliance with hygiene regulations and H.A.C.C.P.
- No wash-cycle starts until boiler and wash-tank temperatures are reached.
- The rinse cycle will not start until the boiler temperature is reached.
- Scrape food from dishes carefully to avoid clogging filters, nozzles, and pipes.
- Unload the wash tub and clean filters at least twice a day.
- Check detergent and rinse-aid dosage. Ensure sufficient chemical supply in canisters each morning.
- Always clean the support floor for dishes.
- Extract racks with clean hands or gloves to avoid finger marks.
- Do not dry or polish dishes with non-sterilized cloths, brushes, or dusters.
7. Ecological Aspects
7.1 Recommendations for optimum use of energy, water and additives
- Use the machine at full load whenever possible to save detergent, rinse aid, water, and energy.
- Detergents and rinse aids: Use products with the highest biodegradability. Ensure correct dosage according to water hardness. Excess product pollutes the environment; insufficient amount compromises washing and hygiene.
- Tank and boiler temperatures: Temperatures are set by the manufacturer for optimal results with most detergents. They can be reset by the installer.
- Cleaning off: Clean kitchenware with water at ambient temperature. For encrusted matter, soaking in hot water is recommended.
Notes: Wash objects as soon as possible to prevent deposits from drying. Regular cleaning and maintenance are advisable for efficient washing. Non-compliance with recommendations may lead to waste of resources, increased costs, and reduced performance.
8. Environmental Aspects
8.1 Packing
Packing consists of: a wood pallet, a nylon bag (LDPE), multi-layered cardboard, polystyrene foam (PS), and polypropylene support (PP). Dispose of packing material in accordance with environmental regulations.
8.2 Disposal
The WEEE symbol indicates the product cannot be treated as domestic waste. For recycling information, contact local authorities or the shop where purchased. Follow Council directives 2011/65/EU and 2012/19/EU for product or part disposal. Do not dispose of as urban waste; collect in separate containers. Disconnect electricity and water before disposal. Cut the electrical cable to prevent further use. All metal parts are recyclable stainless steel. Recyclable plastic parts are marked with the plastic material symbol.
9. Signals and Alarms
9.1 Signals
The machine signals situations requiring operator attention. Information appears on the display and remains visible until action is taken.
- DETERGENT LEVEL: Add detergent (optional sensor).
- RINSE-AID LEVEL: Add rinse-aid (optional sensor).
- DOOR OPEN: Door open prevents maneuver or wash cycle.
- DRAIN VALVE OPEN: Indicates the drain valve is not closing.
9.2 Alarms
Alarms are displayed on a dedicated screen, overlapping the current display. Each alarm screen provides information on the alarm's meaning and possible operator actions.

10. Troubleshooting
