Gas Leak Detection: Instructions for responding to a detected smell of gas must be posted in a prominent location. This information can be obtained from your local gas supplier.

NOTICE: In the event a gas odor is detected, shut down the units at the main shutoff valve and contact the local gas company or gas supplier for service.

Installation, Operation and Care

General

Forno ranges are manufactured with quality workmanship and materials. Proper installation, usage, and maintenance will result in many years of satisfactory performance. It is recommended to read this entire manual and follow all instructions carefully.

WARNING: This appliance is equipped for Natural Gas. For conversion to LP (Propane) gas, refer to the attached gas conversion instruction manual. Necessary orifices for LP conversion are provided. Consult page 3 for the orifice size list.

Installation

Uncrating

The range was inspected before factory shipment. The transportation company is responsible for safe delivery upon acceptance. Immediately after unpacking, check for shipping damage. If damage is found, save packaging materials and contact the carrier within 15 days of delivery.

Uncrate the unit carefully and place it in a work-accessible area, as close to its final installed position as possible. Remove all shipping wire and wood blocking.

Before installation, verify the type of gas supply (natural or propane) matches the specifications on the rating plate, typically located inside the lower kick panel. If the supply and equipment requirements do not match, do not proceed with installation and contact your dealer or company immediately.

Location

The appliance must be installed under a ventilation hood. The equipment area must be kept free of combustible substances.

Minimum clearances from combustible construction are:

  • Sides: 12 inches (304 mm)
  • Rear: 10 inches (253 mm)

Clearances from non-combustible construction are:

  • Sides: 0 inches
  • Rear: 6 inches (152 mm)

The installation location must allow adequate clearances for servicing and proper operation. A minimum front clearance of 40 inches (1016 mm) is required.

Ensure the range is installed so that the flow of combustion and ventilation air is not obstructed. Adequate clearance for air openings into the combustion chamber must be provided. Ensure sufficient air supply in the room for gas combustion at the burners.

For installation at ground level, adjust the four feet as necessary.

Installation Codes and Standards

Ranges must be installed in accordance with:

In the United States of America:

  1. State and local codes.
  2. National Fuel Gas Code, ANSI/Z223.1 (latest edition). Available from The American Gas Association, Inc., 1515 Wilson Blvd., Arlington, VA22209.

In Canada:

  1. Local codes.
  2. CSA B149.1 Natural Gas and Propane Installation Code.
  3. CSA C22.1 Canadian Electric Code.
  4. CSA C22.2 Canadian Electric Code.

These Canadian standards are available from the Canadian Standard Association, 5060 Spectrum Way, Suite 100, Mississauga, Ontario, Canada L4W 5N6.

Backsplash Assembly

The standard Restaurant Range is equipped with a 23" (584 mm) high backsplash and shelf.

  1. Remove the backsplash components from the crating materials.
  2. Assemble the required components as shown in the diagrams.
  3. Tighten the four screws to secure the shelf.
  4. Lift the assembly up, sliding the channels into the space provided at the rear of the range.
  5. Install four #10 sheet metal screws (two to each channel leg).

Leveling

Check the leveling of the range. Place a level inside the oven cavity across the oven rack(s) to ensure it is level front-to-back and side-to-side.

To adjust leveling, tilt the range to one side and use channel locks to unscrew the adjustable leg insert as needed. Repeat for each leg. Optional casters are non-adjustable, so the floor must be level. An unlevel floor may cause cooking problems.

Gas Connections

CAUTION: All gas supply connections and any pipe joint compound used must be resistant to propane gases.

Each range is factory-equipped for the gas type specified on the rating plate. The installation gas connection is a 3/4" (19 mm) 14 FPT ANSI schedule #40 standard pipe. Ensure pipes are clean and free of obstructions. Codes require a gas shutoff valve in the gas line ahead of the range.

Standard ranges come with fixed burner orifices appropriate for installation elevation. Install the gas pressure regulator.

Before installing, ensure the supplied regulator matches the gas supply type indicated on the rating plate. The regulator is not factory installed; it is typically sealed in a plastic bag attached to the oven rack inside the oven cavity and must be field installed by a qualified installer.

Natural gas regulators are preset for 5" W.C. (Water Column) (.99 kPa); propane gas regulators for 10.0" W.C. (2.5 kPa).

  1. Locate the 3/4" (19 mm) gas connection pipe extending from the rear of the range.
  2. Apply leak sealant to pipe threads.
  3. Screw the regulator hand-tight onto the pipe, ensuring the regulator arrow points towards the range body back.
  4. Using a pipe wrench, tighten the regulator securely in an upright position.

The arrow on the regulator indicates the direction of gas flow. The pressure regulator must be mounted horizontally for proper preset outlet pressure. If mounted otherwise, the outlet pressure must be reset.

A leak limiter is supplied with each regulator to allow excess gas pressure to escape. Do not obstruct the leak limiter, as this can cause malfunction.

WARNING: PRIOR TO LIGHTING, CHECK ALL JOINTS IN THE GAS SUPPLY LINE FOR LEAKS USING A SOAP AND WATER SOLUTION. DO NOT USE AN OPEN FLAME.

After checking for leaks, purge all gas piping to remove air. Before operation, verify the thermocouple is securely seated in the safety valve. Tighten the thermocouple a 1/4 turn past finger tight. DO NOT OVERTIGHTEN, as this can damage the thermocouple or safety magnet.

Testing the Gas Supply System

If gas supply pressure exceeds 1/2 psig (3.45 kPa), disconnect the range and its shutoff valve from the gas supply piping system.

If gas supply pressure is 1/2 psig (3.45 kPa) or less, isolate the range by closing its manual shutoff valve until ready for start-up.

Flue Connections

DO NOT obstruct the flow of flue gases from the flue located on the rear of the range. It is recommended that flue gases be ventilated to the outside of the building via a system installed by qualified personnel.

A minimum clearance of 18" (457 mm) must be maintained from the termination of the flue to the filters of the hood venting system.

Information on ventilating hoods can be found in the standard for the "Removal of Vapors from Commercial Cooking Equipment", NFPA No. 96 (latest edition), available from The National Fire Protection Association, Batterymarch Park, Quincy, MA 02269.

Operation

WARNING: THE RANGE AND ITS PARTS ARE HOT. BE VERY CAREFUL WHEN OPERATING, CLEANING, OR SERVICING THE RANGE.

Lighting and Shutting Down Pilots

All pilot lighting adjustment procedures must be performed by an authorized installer or service person.

Steps for Pilot Lighting:

  1. Turn main gas supply ON.
  2. Wait 30 seconds, then use a taper to light the open top pilot.
  3. If the pilot fails to light, turn the main gas supply OFF. Wait 5 minutes and repeat the procedure.
  4. Turn one open top burner valve ON to remove air from the gas line. Turn the burner OFF when gas begins to flow.

Turning the burner valve OFF will keep the pilot lit.

Complete Shutdown

  1. Turn burner valve OFF; the pilot will remain lit.
  2. Turn main gas supply OFF.

Knob Operation:

  • The indicator above the knob showing a red dot "•" means "OFF".
  • To turn ON, rotate the knob counterclockwise 90°.

Standard Oven Lighting and Shutdown Instructions

NOTE: Light open top/griddle pilots before lighting the oven pilot.

  1. Turn the thermostat to the "OFF" POSITION.
  2. Rotate the bottom kick-plate to expose the ignition hole.
  3. Depress the knob and rotate approximately 15° anti-clockwise. Ignite the pilot flame with a fire gun via the ignition hole.
  4. After the pilot flame is ignited, press the knob for more than 20 seconds to heat the thermocouple. If the ignition goes out when the knob is released, repeat this operation.
  5. Continue rotating the temperature control knob counterclockwise to ignite the main burner of the oven.
  6. Select the appropriate temperature according to food requirements. The oven temperature can be controlled between 250°F and 500°F.

Nightly Shutdown

  1. Turn oven thermostat OFF.

Complete Shutdown

  1. Turn oven thermostat OFF.
  2. Turn main gas supply OFF.

Rack Arrangement - Standard Oven

The standard oven has three rack positions and is supplied with two oven racks. Additional racks may be obtained through a vendor parts depot.

Inserting and Removing Rack

The oven rack has a stop to prevent it from being pulled out completely during unloading. To install a rack, place it alongside the top of the side liner runners and slide it completely to the rear of the oven compartment until it drops into place.

To remove a rack, reverse the procedure: raise the rear of the oven rack stop above the runner and pull the rack forward.

Preheating

Standard Oven: Turn the thermostat control to the desired cooking temperature and preheat the oven for 25 minutes. To conserve gas, do not operate the oven at maximum heat unless necessary. Turn the thermostat down to 250°F (121°C) or OFF when the oven is not in use or during idle cooking periods.

Griddle (Optional Models)

Turn the three manual gas valve knobs to full ON. After preheating for 5 minutes, turn the valves down until the desired flame or heating level is achieved. Position the removable broiler grid into one of the two slide positions, depending on which will yield the best product results.

Cleaning

Do not use scouring powder or abrasives on this range. Clean only with a soft cloth and mild detergent solution.

Maintenance

Vent

When cool, check the vent every six months for obstructions.

Conversion Kit Instructions

These instructions are for converting Forno Gas restaurant ranges (24" & 36" models) from Natural Gas to Propane (L.P.). Conversion should be performed before connecting the unit to the gas supply. Units are shipped from the factory for natural gas use; L.P. parts are provided with the unit. Refer to page 5 for the orifice size list.

WARNING: This conversion kit must be installed by a qualified service agency following manufacturer's instructions and applicable codes. Failure to do so may result in fire, explosion, or carbon monoxide production, causing property damage, personal injury, or loss of life. The qualified service agency is responsible for proper installation.

WARNING: Do not attempt gas conversion yourself. Gas conversion must be performed by a certified/licensed technician.

Procedure:

Turn off the main gas supply before performing any maintenance.

  1. Remove the top grate.
  2. Raise the top burner and pull to expose the orifice.
  3. Loosen the orifice using a hex wrench.
  4. Replace the orifice and lock it. Note the orifice number marked on the orifice (e.g., NAT 42, L.P. 53).
  5. Reinstall the top burner, ensuring the air shutter is oriented towards the orifice.
  6. Replace the top grate.
  7. Remove the oven bottom drop pan and radiator plate.
  8. Loosen the screw of the oven burner back, raise the burner, and pull it backward.
  9. Loosen the orifice using a hex wrench.
  10. Replace the orifice and lock it. Note the drill size marked on the orifice (e.g., 38, 53).
  11. Use a wrench to loosen the screw of the pilot bracket.
  12. Replace the pilot orifice and lock it. Note the drill size marked on the orifice body (e.g., 0.25, 0.18).
  13. Reinstall the oven burner, ensuring the air shutter is oriented towards the orifice and lock the burner fix screw.
  14. Reinstall the radiator plate and drop pan.

Regulator Conversion

Before installing the included convertible regulator, unscrew the octagon cap. The plastic insert attached to the cap head will show "NAT". Pull off the insert, flip it over, and snap it back into place so that the "L.P." position is attached to the octagon cap head. The regulator is now converted to L.P.

Continue with installation.

Gas conversion is now complete.

Check all joints in the gas supply line for leaks using soap and water solution. Do not use an open flame.

Warranty

What This Limited Warranty Covers

This warranty coverage provided by Forno Appliances applies exclusively to the original Forno appliance ("Product") sold to the consumer ("Purchaser") by an authorized Forno dealer/distributor/retailer, purchased and installed in the United States or Canada. Warranty coverage is activated on the date of the Product's original retail purchase and has a duration of two (2) years.

This warranty does not cover installation at the time of purchase or during replacement. Warranty coverage is non-transferable. Replacement products or parts assume the remaining original warranty period.

Important

Retain proof of original purchase to establish the warranty period. Forno's liability is limited to the value of the goods or service giving rise to the claim.

30-Day Cosmetic Warranty

Forno warrants that the Product is free from manufacturing defects in materials and workmanship for thirty (30) days from the date of original retail purchase. This coverage includes:

  • Paint blemishes
  • Chips
  • Macroscopic finish defects

Cosmetic Warranty Does NOT Cover:

Issues resulting from incorrect transport, handling, or installation (e.g., dents, broken components, cracked glass); slight color variations; differences caused by lighting or location; stains/corrosion/discoloration from external substances; labor costs; display, floor, B-stock, out-of-box, or demo units.

Warranty Exclusions: What Is Not Covered

  • Use of the Product in any non-residential, commercial application.
  • Use of the Product for anything other than its intended purpose.
  • Repair services provided by anyone other than a Forno Authorized Service agency.
  • Damages or repair services resulting from unauthorized parties or use of unauthorized parts.
  • Installation not in accordance with local/state/city/county fire codes, electrical codes, gas codes, plumbing codes, building codes, laws, or regulations.
  • Defects or damage due to improper storage.
  • Defects, damage, or missing parts on products sold out of original factory packaging or from displays.
  • Service calls or repairs to correct incorrect installation or related accessories.
  • Replacement of parts/service calls to connect, convert, or repair electrical wiring and/or gas lines.
  • Replacement of parts/service calls to provide instructions and information on product use.
  • Replacement of parts/service calls for issues arising from use not normal or customary for residential use.
  • Replacement of parts/service calls due to wear and tear of components (e.g., seals, knobs, shelving, baskets, buttons, displays, scratched ceramic-glass tops).
  • Replacement of parts/service calls for lack of/improper maintenance (e.g., residue build-up, stains, scratches, discoloration, corrosion).
  • Defects and damages arising from accidents, alteration, misuse, abuse, or improper installation.
  • Defects and damages arising from product transport, logistics, and handling. Inspection must be made at delivery; notify the selling dealer/delivery company of any issues.
  • Defects and damages arising from external forces beyond Forno's control (e.g., weather, fires, floods, freezing temperatures, humidity, power surges, lightning, structural failures, acts of God).
  • Products whose serial number has been altered/damaged/tampered with. Forno is not liable for damage to surrounding property. Forno is not liable if the product is located in a remote area without reasonable access to certified technicians. Purchaser bears transportation and delivery costs.

Warranty (continued)

There are no express warranties other than those listed. Any implied warranties of merchantability or fitness for a particular purpose are limited to the express warranty period. No other warranty or guarantee given by any person, firm, or corporation is binding on Forno.

Forno shall not be liable for loss of revenue, profits, savings, benefits, time away from work, meals, food/beverages, travel/hotel expenses, appliance rental/purchase expenses, remodeling/construction expenses beyond direct damages, or any special, incidental, or consequential damages caused by use, misuse, or inability to use the product, regardless of the legal theory. Recovery against Forno will not exceed the purchase price of the product.

Purchaser assumes all risk and liability for loss, damage, or injury arising from the use, misuse, or inability to use this product, unless directly caused by Forno's negligence. This limited warranty is non-transferable and states your exclusive remedy.
