Preparing Your Machine
- Step 1: Remove stickers & packing materials.
- Step 2: Wash and dry accessories, including the water tank.
- Step 3: Insert the drip tray with cup grill.
- Step 4: Fill the water tank.
- Step 5: Plug in the machine and switch on the main power.
Setting La Specialista for First Use
- Step 1: Place a container under the water spout.
- Step 2: Press [OK button] to rinse.
- Step 3: Insert filter basket into portafilter.
- Step 4: Attach the portafilter.
- Step 5: Press [OK button] to rinse.
- Step 6: Open the steam dial for a few seconds (ideally 20 seconds).

Step 1 - Grinding
Sensor Grinding Technology
- Step 1: Add beans to the hopper. Fresh is best; fill with only the quantity you need.
- Step 2: The ideal setting depends on the coffee beans type. The factory default is 3, but for a finer or coarser grind, consult the coffee guide settings table. Adjust while grinding if necessary.
- Step 3: Select single or double dose filter and place it in the portafilter. If using the double filter, press the [X2 button].
- Step 4: Set the dose level by adjusting the dial starting from the minimum position.
- Step 5: Attach the portafilter. Grinding will start once it is locked into place. To disable auto-starting, turn the dial to the [Off setting].
The numbers displayed are a setting reference indicating when the right level of coffee is reached in the portafilter. They do not correspond to grinder settings, measurement units (gr/oz), or grinding time. Refer to the coffee guide table settings for useful indications on dosages based on coffee beans and roast levels. Refer to "Focus on perfect dose" on the next page for suggestions.
Focus on Perfect Dose
Achieve Espresso Perfection
Each variety of coffee beans behaves differently during grinding, so setting the dose initially may require extra care. This illustration provides indications on how to regulate the dose. The suggested setting ranges, based on roasting level, are a good starting point but may vary slightly depending on the specific composition of your coffee beans.
- Set the dose (to reach the mark inside the filter basket, see image for perfect dose) starting from the minimum position.
- Note your coffee's roasting level and slowly turn the knob, referencing the ranges.
The coffee filters have a 3mm laser mark inside to identify the level for a perfect dose. Try different levels within the mark, keeping in mind that the minimum dose corresponds to the bottom line of the mark, and the maximum dose corresponds to the upper line of the mark.
Step 2 - Tamping
- Step 1: After grinding, pull the lever down fully (do not remove the portafilter). For a perfect result, you can do this twice.
- Step 2: Keep the lever down while removing the portafilter. Once done, place the lever back in its original position.
- Step 3: Check the level.
- Step 4: Attach the filter portafilter to the brewing unit.
Step 3 - Brewing
- Step 1: Select your beverage.
- Step 2: Press [OK button] to start brewing (preinfusion and infusion).
Infusion Temperature Profiles
- There are 5 temperature profiles (1 to 5 on the display) to set based on the coffee beans.
- Setting 1: ≈ 90°C
- Setting 2: ≈ 92°C
- Setting 3: ≈ 94°C
- Setting 4: ≈ 96°C
- Setting 5: ≈ 98°C
To understand the preferred temperature profile, refer to the coffee guide settings table. This is not the final in-cup temperature, but the water temperature for infusion. To maintain a perfect beverage temperature, pre-heating the cup is suggested. To select the temperature setting, keep pressing the [Temperature button] to switch between settings until you reach the preferred one.
Espresso Based Beverages Menu
- Espresso (Single dose): Approx. 35 ml
- Espresso (Double dose): Approx. 35 ml (or 70 ml with 2 shots)
- Coffee (Single dose): Approx. 80 ml
- Coffee (Double dose): Approx. 80 ml (or 160 ml with 2 shots)
- Long Black (Single dose): Approx. 100 ml (35 ml Coffee + 65 ml Water)
- Long Black (Double dose): Approx. 200 ml (70 ml Coffee + 130 ml Water)
Do You Want to Make an Americano?
Step 1: Make an Espresso using a large cup.
Step 2: Once the espresso is delivered, press [OK button] to dispense hot water.
Step 4 - Manual Frothing

- Step 1: Fill the milk jug with fresh cold milk. Milk will expand up to triple in volume.
- Step 2: Turn the steam wand on briefly to purge condensation. Ensure the wand is pointing away from you.
- Step 3: To make the froth, place the nozzle on the surface of the milk; air will be drawn in by the mixing of milk and steam.
- Step 4: Move the milk jug slowly downwards as the foam volume increases.
- Step 5: Insert the steam nozzle just under the milk. When the desired temperature is reached, turn the steam knob off and wait until the steam stops completely before removing the jug.
Step 4 - Automatic Frothing
- Step 1: Fill the milk container with fresh cold milk from the refrigerator.
- Step 2: Close with the lid.
- Step 3: Turn the knob to select the desired froth.
- Step 4: Attach the milk container.
- Step 5: Prepare the perfect dose (see Steps 1 - Grinding & 2 - Tamping) and attach the portafilter.
- Step 6: Select your beverage.
- Step 7: Press [OK button] to start brewing. The appliance automatically brews coffee and milk in sequence.
Milk Recipes
Automatic Espresso & Milk Based Beverages
- Cappuccino (Single dose): Approx. 150 ml milk + 35 ml Espresso
- Cappuccino (Double dose): Approx. 230 ml milk + 35 ml Espresso
- Latte (Single dose): Approx. 250 ml milk + 35 ml Espresso
- Latte (Double dose): Approx. 330 ml milk + 35 ml Espresso
- Flat White (Single dose): Approx. 150 ml milk + 35 ml Espresso
- Flat White (Double dose): Approx. 230 ml milk + 35 ml Espresso
Double Dose Milk Beverages: Fill the milk container with a sufficient quantity of milk, not exceeding the MAX level marked on the container. Each mark on the side of the container corresponds to about 100 ml of milk. Using fresh cold full cream milk will achieve the best results.
Cleaning the Milk Frother Lid: The milk frother lid must be cleaned each time you use a milk function. Refer to the next page for instructions.
Cleaning & Maintenance - Lattecrema System
- Step 1: Leave the milk container in the machine (you do not need to empty it). Place a cup or other recipient under the frothed milk spout.
- Step 2: Turn the knob to "Clean".
- Step 3: Cleaning automatically starts and stops. [Caution]: Remember, after cleaning, to turn the knob back to the foam setting.
- Step 4: Remove the milk container and put it in the refrigerator.
