Pressure Canning Guide

Canning allows you to preserve foods like fruits, vegetables, and meats. It's an economical way to store out-of-season items. Proper canning ensures food safety and nutritional value. Improper canning can lead to serious health consequences.

Pressure Canning Process

Pressure canning is essential for low-acid foods (vegetables, meats, seafood) to destroy harmful bacteria like clostridium botulinum (botulism), which require temperatures of 240°F (116°C) achievable only through pressure canning. High-acid foods (fruits) can sometimes be processed with steam canning, but pressure canning offers a safer, more sterile environment.

Food Acidity

Low-acid foods have a greater potential for spoilage and contamination. High-acid foods include fruits; low-acid foods include vegetables, meats, and seafood.

Examples of High Acid Foods:

  • Apples, Applesauce, Apricots, Berries, Cherries, Cranberries, Fruit Juices, Oranges, Peaches, Pears, Pickled Beets, Pineapple, Plums, Rhubarb

Examples of Low Acid Foods:

  • Asparagus, Beans, Beets, Carrots, Corn, Hominy, Meat, Mushrooms, Okra, Peas, Potatoes, Seafood, Spinach, Winter Squash

Packing Methods

Raw Packing: Canning fresh, unheated foods. May cause foods to float and lose color over time.

Hot Packing: Pre-cooking foods before packing. Reduces air in food, improves shelf life, and prevents floating.

All liquids added should be heated to boiling to remove air, shrink food, prevent floating, and create a tighter seal.

Altitude and Pressure Canning

The Power Pressure Cooker XL operates properly up to 2,000 ft. above sea level. Do not use for pressure canning above this altitude.

Processing Time and Pressure

The CANNING button sets pressure at 80 kPa (equal to 11.6 PSI). At altitudes up to 2,000 ft., this setting provides sufficient heat and pressure for safe canning. For additional information, refer to the National Center for Home Food Preservation (http://www.uga.edu/nchfp/) or your local county extension agent.

Safe Canning Tips

  • Do not use over-ripe fruit.
  • Do not add more low-acid ingredients than specified in recipes.
  • Avoid over-seasoning with spices, which can be high in bacteria.
  • Do not add butter or fat, as it stores poorly and increases spoilage.
  • Use only USDA-recommended thickeners like Clear Jel®; avoid flour, starch, pasta, rice, or barley.
  • Add acid (lemon juice, vinegar, citric acid) as directed, especially for tomatoes. Sugar can balance tartness.

Getting Started with Canning

The Power Pressure Cooker XL accommodates 7 - 16 oz. (1 pint) wide mouth jars. Use jars with self-sealing Lids.

Jar Cleaning:

Wash jars in hot, soapy water or dishwasher. Remove hard-water films by soaking jars in a solution containing 1 cup of vinegar per gallon of water.

Lid Preparation:

Use self-sealing Lids with metal screw bands. Ensure Lids are flat, not dented, deformed, or have defects in the sealing gasket. Follow manufacturer's directions for preparation.

Lid & Jar Assembly:

Fill jars to the specified level, leaving about 1 inch of headspace. Remove air bubbles by pressing a spatula between food and jar. Place a clean Lid and screw band on the jar, hand-tightening.

Never retighten Lids after processing. Over-tightening can prevent air venting and cause discoloration or breakage. Remove screw bands after cooling; they are reusable.

Power Pressure Cooker XL Pressure Canning Process Steps:

  1. Select a pre-tested pressure canning recipe and prepare ingredients.
  2. Fill clean canning jars, leaving approximately 1 inch of headspace.
  3. Remove air bubbles by pressing a spatula between food and jar.
  4. Place a clean Lid on the jar and hand-tighten the screw band.
  5. Place the Inner Pot in the base unit. Put the Wire Rack in the bottom of the Inner Pot. Place filled jars on the rack (up to 7-16 oz. jars).
  6. Pour hot water into the Inner Pot until it reaches 1/4 of the way up the sides of the jars (approx. 6 cups for 7 jars).
  7. Put the Lid on the base and lock it. Plug the unit into the wall outlet.
  8. Select the CANNING/PRESERVING button. The unit defaults to 80 kPa. Set the Cook Time per your recipe.
  9. When complete, select CANCEL, unplug the unit, and set the Pressure Release Valve to OPEN using tongs. Wait for all steam to escape, then carefully remove the Lid.
  10. Using Canning Tongs, remove hot jars and place them on a heat-resistant surface to cool.
  11. Once cool, remove Screw Bands. Check seals by pressing the lid center; it should not flex. If it flexes, reprocess immediately or refrigerate and use within days.
  12. Store processed jars in a cool, clean, dry place. Jars, Lids, and bands are reusable if undamaged.

The Power Pressure Cooker XL has an effective operating capacity for pressure canning up to 2,000 ft. above sea level.
