Tips for Obtaining the Best Brew

  • Always use fresh, high-quality coffee, preferably ground right before brewing.
  • Use "espresso grind" coffee, which is finely ground with a similar texture to fine sugar.
  • Store coffee in a dark, airtight container in a cool place. Do not store coffee in the refrigerator. Unopened bags of whole coffee beans can be stored in the freezer and defrosted before grinding.
  • Always brew espresso into a pre-warmed cup. This can be done by leaving the cup on the warming platform or running hot water into the cup before brewing.
  • Always purge the brew head and frothing wand to ensure hottest performance.
  • For best flavor, drink the espresso immediately after it is made.
  • Follow all cleaning, maintenance, and decalcifying instructions.

Control Panel Operation

a. Powering On/Off: Press the "ON/OFF" button to turn the machine on. The indicator light around the button illuminates red. The "Coffee/Steam" indicator will flash blue, indicating the machine is warming up. To turn the machine off, ensure the selector dial is in the center [off-position] and press the "ON/OFF" button until the red indicator light turns off.

b. Coffee/Steam Function: Press the "Coffee/Steam" button to switch between coffee brewing and steaming/frothing. The indicator light flashes blue while heating for coffee and turns solid blue when ready. For steaming, press the button again; the light turns white and flashes while heating, becoming solid white when ready for steaming.

c. Selector Dial Positions:

  • LEFT ([brew-coffee-position]): Brewing coffee.
  • CENTER ([off-position]): Standby; brewing and steaming stops.
  • RIGHT ([steam-position]): Steam production through the frothing wand.

NOTE: Do not turn the selector dial to steam when the coffee indicator light is blue. Do not turn the selector dial to coffee when the steam indicator light is white.

During brewing or steaming, the "Coffee/Steam" indicator light may flash, indicating the heating system is active and maintaining the proper temperature.

Before Using for the First Time

After unpacking, wash all removable parts with warm, soapy water and rinse thoroughly. Familiarize yourself with the appliance and read the manual. To ensure the first cup of coffee tastes excellent, flush the internal parts with water:

  1. Fill the water tank with fresh, cold water, not exceeding the "MAX" mark. Close the lid. The appliance has a removable water tank for easy cleaning; fill it at your sink and reinsert it firmly, ensuring the hooks engage.
  2. Place the portafilter with sieve (no coffee) into the machine from the "INSERT" position. Push up and turn counterclockwise until it is in the "LOCK" position.
  3. Place a cup on the removable drip tray.
  4. Plug the power cord into a grounded outlet. Press the "ON/OFF" button (red indicator light). The "Coffee/Steam" indicator will flash blue while heating and turn solid blue when ready for brewing.
  5. Once the "Coffee/Steam" indicator is solid blue, turn the selector dial to the [brew-coffee-position]. Water will flow out.
  6. After about one minute, turn the selector dial to the [off-position] to stop brewing. Discard the hot water. The machine is now ready to start brewing.

NOTE: Initial pumping may produce noise as air is released; this is normal and should stop after about 20 seconds.

Warming Internal Components and Cups/Purging the Machine

Pre-warming internal components and cups by purging the machine enhances the first espresso by adding 10-15°F.

  1. Ensure the selector dial is in the [off-position].
  2. Fill the water tank with fresh, cold water (not exceeding "MAX"). Reinsert the tank firmly.
  3. Turn the machine "ON". The "ON/OFF" indicator is red, and the "Coffee/Steam" indicator flashes blue. It turns solid blue when ready to brew.
  4. Place the sieve inside the portafilter (as shown in Fig. 3). Ensure the sieve is dry.
  5. Align the portafilter at "INSERT", push up, and turn firmly to the right towards "LOCK" until tight. (It may not reach "LOCK" fully initially; ensure it's firmly placed.)
  6. Place cup(s) under the portafilter.
  7. Turn the selector dial to the [brew-coffee-position]. Hot water will pump through the filter into the cup(s).
  8. Turn the selector dial to the [off-position] to stop the water flow.
  9. Empty and dry the cup(s), sieve, and portafilter. The machine is now purged and components are pre-warmed.

CAUTION!

Never leave the machine unattended during brewing or steaming. Always turn the selector dial to the [off-position] to stop.

TIP: Place espresso cups upside down on the warming plate on top of the machine to keep them warm.

Filling and Inserting the Portafilter

  1. Place the sieve firmly inside the portafilter (ensure it's dry).
  2. Fill the sieve with finely ground coffee until slightly overflowing. Tap the portafilter gently to distribute grounds, then level the coffee with your fingers. Ground coffee should resemble table salt or granular sugar.
  3. Using the flat side of the coffee scoop/tamper, pack the espresso firmly into the sieve with approximately 30 pounds of pressure (similar to removing a tight jar lid).
  4. Wipe any coffee grounds from the rim of the sieve and portafilter.
  5. Insert and lock the portafilter as described in section 4.e.

Preparing Espresso

  1. Ensure the machine is ON, the selector dial is in the [off-position], and the water tank is filled. Machine and cups should be pre-warmed (see section 4).
  2. The "Coffee/Steam" indicator should be solid blue.
  3. Fill the portafilter sieve with ground coffee as described in section 5, ensuring it's properly tamped. Secure the portafilter onto the machine.
  4. Place cup(s) under the portafilter.
  5. When the "Coffee/Steam" indicator is solid blue, turn the selector dial to the [brew-coffee-position]. Espresso will flow into your cup(s).

WARNING: Do not leave the espresso machine unattended during operation; manual operation is required.

  1. When the desired amount of espresso is brewed, turn the selector dial to the [off-position] to stop the flow.

NOTE: The "Coffee/Steam" indicator light flashing during brewing is normal, indicating the heating system is active.

Enjoy your espresso. You can brew another once the "Coffee/Steam" indicator light stops flashing and is solid blue.

Carefully and slowly remove the portafilter by moving the handle to the left.

CAUTION!

Hot water may still be on top of the coffee grounds in the sieve. Be careful.

Turn the portafilter upside down and tap out the used coffee grounds. Rinse the sieve and portafilter under warm water, ensuring holes are clear of deposits. Dry them with a clean cloth. You are ready to prepare the next espresso.

TIP: Purge the brew head with hot water after removing the portafilter to remove coffee residue. Place a large cup under the brew head, turn the selector dial to [brew-coffee-position], let water flow for 5-10 seconds, then return the dial to [off-position].

Preparing Cappuccino

A cappuccino is one or two shots of espresso combined with an equal or larger amount of hot milk and milk froth. (For Latte, see chapter 8).

NOTE: When frothing, the sieve and portafilter must be assembled in the "LOCK" position.

Frothing Milk:

  • For best results, use fresh, cold milk (around 34°F). The ideal end temperature for frothed or steamed milk is between 140°F-160°F.
  • Any type of milk can be used. Whole milk produces good microfoam (small bubbles). Low-fat and fat-free milk produce larger, airy bubbles. Non-dairy milks may not hold froth as well but can be steamed and heated for lattes.
  • Prepare espresso into a large, pre-heated cup as described in chapter 6. Ensure the selector dial is in the [off-position] after brewing.
  • Press the "Coffee/Steam" button until the white indicator light flashes, indicating the steam/frothing function is active. Wait for the "Coffee/Steam" indicator to illuminate solid white, showing the machine is ready for frothing or heating milk.
  • Fill a stainless steel pitcher with 3 to 4 oz. of cold milk per cappuccino. Ensure the pitcher is large enough for the milk to increase in volume by 2 to 3 times.
  • Using the black silicon frothing grip, move the frothing wand down toward the hole in the drip tray. Turn the selector dial to the [steam-position] to release steam for about 10 seconds to clear internal tubing. Return the dial to the [off-position].

CAUTION!

Never touch the metal part of the frothing wand; use the black silicone grip.

  • Using the black silicon grip, pull the frothing wand forward and insert it into the milk about one centimeter from the surface (Fig. 4). Turn the selector dial to the [steam-position]. Steam will be produced. Create microfoam by tilting the frothing pitcher at a 45° angle and keeping the wand close to the milk's surface, creating a cyclone motion for about 30-40 seconds. Then, plunge the frothing wand deeper into the milk until the desired temperature is reached.

TIP: Milk can scorch around 176°F; stop frothing before it reaches 170°F.

  • When the desired froth or temperature (around 170°F) is reached, turn the selector dial to the [off-position].

CAUTION!

Never remove the frothing wand from the milk while the selector dial is in the [steam-position]. Always turn the selector dial to the [off-position] first to prevent hot milk splatter.

NOTE: Carefully clean the frothing wand with a damp cloth immediately after frothing to prevent milk build-up. Avoid contact with hot parts.

  • Tap the pitcher on the counter to settle the milk and eliminate large air bubbles. Gently roll the milk in the pitcher to incorporate the foam and milk, creating a shiny, smooth surface.
  • Pour the frothed milk into the prepared espresso. Sweeten to taste and add desired ingredients like flavored syrups or cocoa powder.

NOTE: After frothing, allow the machine to cool for at least 5 minutes before making espresso again to return to the proper brewing temperature. If making multiple cappuccinos, prepare all espressos first, then froth the milk.

TIP: To prepare more espresso immediately after steaming milk, refill the boiler with cold water to lower the temperature and avoid a burnt espresso taste. Press the "Coffee/Steam" button (solid blue light), place an empty cup under the brew head, and turn the selector dial to [brew-coffee-position]. Allow water to empty the boiler. Once only water dispenses, turn the dial to [off-position]. Remove the portafilter, dry it, and wait for the "Coffee/Steam" indicator to turn solid blue before brewing espresso.

Preparing Latte

A latte is one or two shots of espresso with an equal or larger amount of hot steamed milk, with little to no froth.

Steaming Milk:

  • For best results, use fresh, cold milk (ideal temperature 140°F-160°F).
  • Follow steps a-d from chapter 7. Using the black silicon grip, pull the frothing wand forward and insert it into the milk about halfway down the pitcher. Turn the selector dial to the [steam-position]. Steam will heat the milk. Slowly move the pitcher around to heat to the desired temperature.

TIP: Milk can scorch around 176°F; stop steaming when it reaches 170°F.

  • When the desired temperature is reached, turn the selector dial to the [off-position].

CAUTION!

Never remove the frothing wand from the milk while the selector dial is in the [steam-position]. Always turn the selector dial to the [off-position] first to prevent hot milk splatter.

NOTE: Carefully clean the frothing wand with a damp cloth immediately after steaming to avoid milk build-up. Avoid contact with hot parts.

  • Pour the steamed milk into the prepared espresso. Sweeten to taste and add desired ingredients.

NOTE: After steaming, allow the machine to cool for at least 5 minutes before making espresso again. If making multiple lattes, prepare all espressos first, then steam the milk.

TIP: To prepare more espresso immediately after steaming milk, refill the boiler with cold water to lower the temperature.

Cleaning the Frothing Wand

Wipe the frothing wand clean with a damp cloth immediately after frothing or steaming milk to prevent build-up. Deep clean before turning OFF the machine.

  1. Wipe off as much milk residue as possible from the frothing wand with a damp cloth.

CAUTION! The frothing wand may be hot!

  1. Ensure the "Coffee/Steam" indicator is white for steam/froth. Using the black silicon frothing grip, move the frothing wand down toward the drip tray hole and turn the selector dial to the [steam-position] to release steam for about 10 seconds to clear internal tubing. Return the dial to the [off-position].

NOTE: If no steam emerges, the frothing wand may be blocked by hardened milk. See chapter 12, Troubleshooting.

  1. Fill a small pitcher or cup with cold water and immerse the frothing wand deep into the water.
  2. Turn the selector dial to the [steam-position] to release steam.
  3. Hold the frothing wand in the water for 20-30 seconds, then turn the selector dial back to the [off-position].
  4. Remove the pitcher and wipe the frothing wand with a damp cloth.
  5. Turn the machine OFF by pressing the "ON/OFF" button until the red indicator light turns off.

Cleaning and Maintenance

  1. Always disconnect the plug from the wall outlet and allow the appliance to cool down completely before cleaning.
  2. Do not immerse the appliance in water or any other liquid.
  3. Do not use harsh abrasives. Wipe the appliance housing with a damp cloth. Do not use alcohol or solvent cleansers.
  4. Wipe the brew head with a damp cloth.

CAUTION! HOT! Danger of burning or scalding! Allow the appliance to cool down completely before cleaning.

  1. Rinse the water tank, grid, and drip tray regularly with water.
  2. Empty and clean the drip tray with hot soapy water regularly.
  3. Detach the sieve from the portafilter by turning it until the bump aligns with the notch (Fig. 3). Remove coffee residue with a stiff brush. Use a pin to clear any particles stuck in the small holes.
  4. If the inner screen inside the brew head (Fig. 5) accumulates coffee oils, unscrew it for thorough cleaning with a screwdriver. Ensure it is reattached correctly.
  5. Clean the seal around the brew head with a damp cloth to maintain the machine's life.
  6. Clean the frothing wand after every use (see chapter 9).
  7. Remove the frothing wand tip and soak in hot water. Clean the threads with a hot damp cloth. Regularly inspect the frothing wand opening for milk build-up and the o-ring for damage (rips or tears). Call Customer Service for replacement o-rings. Screw the frothing tip (with o-ring) back onto the frothing wand (see Fig. 6).

NOTE: Do not operate the frothing wand without the frothing tip and o-ring in place.

Decalcifying

Use cold, clean water for espresso. Spring or filtered water slows calcium build-up. Decalcify after 100-200 uses or every 2-3 months.

  • Follow instructions for commercial decalcifying agents. Alternatively, use Capresso Cleaning Solution (available at www.capresso.com): dissolve 1 packet with 32 oz. of water and add to the water tank.

NOTE: Do not use vinegar, as it shortens the life of the seal inside the brew head.

Decalcifying the Brew Head:

  1. Remove the portafilter.
  2. Unscrew the screen inside the brew head. Wipe off coffee residue with a damp cloth.
  3. Fill the water tank with the decalcifying solution and water.
  4. Place a large bowl beneath the brew head.
  5. Push the "ON/OFF" button and turn the selector dial to the [brew-coffee-position]. Allow 1/3 to 1/2 of the solution to pump through the system and brew head. (No need to wait for the blue indicator light).
  6. Turn the selector dial to the [off-position] to stop the process.
  7. Let the machine sit for approximately 10 minutes.

Decalcifying the Frothing Wand:

  1. Fill a pitcher with 6 to 8 oz. of cold water and immerse the frothing wand.
  2. Ensure the "Coffee/Steam" indicator is white. Turn the selector dial to [steam-position] and let steam pass for about 30 seconds. Repeat three or four times.
  3. Process the remaining decalcifying solution through the brew head by pressing the "Coffee/Steam" button (solid blue) and turning the selector dial to [brew-coffee-position] until the water tank is empty.

Rinsing the System:

  1. Remove and rinse the water tank thoroughly, then fill with fresh cold water.
  2. Repeat steps d through j using fresh cold water.
  3. Replace the screen in the brew head and tighten the screw securely.
