Induction Cooking
Induction cooking is a safe, advanced, efficient, and economical technology. It uses electromagnetic vibrations to generate heat directly in the pan. The glass surface becomes hot only because the pan eventually warms it up.
Diagram: A pan is shown on a cooking zone. Underneath the pan is a magnetic circuit, then the ceramic glass plate, and finally the induction coil with induced currents.
Before Using Your New Induction Hob
- Read this guide, taking special note of the 'Safety Warnings' section.
- Remove any protective film that may still be on your Induction hob.
Using the Touch Controls
- The controls respond to touch; you don't need to apply any pressure.
- Use the ball of your finger, not its tip.
- You will hear a beep each time a touch is registered.
- Make sure the controls are always clean, dry, and that there is no object [e.g., a utensil or a cloth] covering them. Even a thin film of water may make the controls difficult to operate.
Choosing the Right Cookware
- Only use cookware with a base suitable for induction cooking. Look for the induction symbol on the packaging or on the bottom of the pan.
- Magnet Test: Move a magnet towards the base of the pan. If it is attracted, the pan is suitable for induction.
- Alternative Test: Put some water in the pan. If the display does not flash and the water heats up, the pan is suitable.
- Cookware made from pure stainless steel, aluminum, or copper without a magnetic base, glass, wood, porcelain, ceramic, and earthenware is not suitable.
- Do not use cookware with jagged edges or a curved base.
Diagrams: Examples of good and bad pan placement are shown. Good placement involves centering the pan on the cooking zone. Bad placement includes pans with jagged edges or curved bases.
Make sure the base of your pan is smooth, sits flat against the glass, and is the same size as the cooking zone. Use pans with a diameter as large as the graphic of the zone selected for best efficiency. Using a pan slightly wider will mean energy is used at its maximum efficiency. A pan less than the minimum dimensions detailed below could be undetected by the hob.
Always lift pans off the induction hob – do not slide them, or they may scratch the glass.

Note: The hob is set to the highest power level ‘74′ by default. If there is a power cut, the hob will remember the set Power Limitation level.
Cooking Guidelines
General Frying
- Take care when frying, as oil and fat heat up quickly, especially with the Boost function. At high temperatures, oil and fat can ignite spontaneously, posing a fire risk.
- When food reaches boiling point, reduce the temperature setting.
- Using a lid reduces cooking times and saves energy by retaining heat.
- Minimize liquid or fat to reduce cooking times.
- Start cooking on a high setting and reduce it once the food has heated through.
Simmering
Simmering occurs below boiling point (around 85°C), with occasional bubbles rising to the surface. It's ideal for soups, tender stews, egg-based, and flour-thickened sauces. Some tasks, like cooking rice by absorption, may require a higher setting than the lowest to ensure proper cooking within the recommended time.
Searing Steak
- Allow steak to reach room temperature for about 20 minutes before cooking.
- Heat a heavy-based frying pan.
- Brush both sides of the steak with oil. Add a small amount of oil to the hot pan and place the steak in it.
- Turn the steak only once during cooking. Cooking time varies from 2-8 minutes per side, depending on thickness and desired doneness. Press the steak to gauge doneness.
- Let the steak rest on a warm plate for a few minutes before serving to allow it to relax and become tender.
Stir-Frying
- Choose an induction-compatible flat-based wok or large frying pan.
- Have all ingredients and equipment ready. Stir-frying should be quick; cook large quantities in smaller batches.
- Preheat the pan briefly and add two tablespoons of oil.
- Cook meat first, set aside, and keep warm.
- Stir-fry vegetables until hot but still crisp. Reduce the cooking zone setting, return the meat to the pan, and add sauce.
- Stir ingredients gently to heat through.
- Serve immediately.
Detection of Small Articles: If an unsuitable pan or small item [e.g., knife, fork, key] is left on the hob, it will automatically go to standby in 1 minute. The fan will continue cooling the hob for a further 1 minute.
Heat Settings
The following settings are guidelines; the exact setting depends on cookware and quantity. Experiment to find what works best for you.
HEAT SETTING | SUITABILITY |
---|---|
1-2 | Delicate warming for small amounts of food. Melting chocolate, butter, and foods that burn quickly. Gentle simmering. Slow warming. Reheating. |
