Direct Cooking

Indirect Cooking

Indirect cooking is used for roasting, baking, and low and slow cooking, where food is not placed directly over a heat source. By turning off one or more burners, convection heat circulates evenly around the food. Variations include using a rotisserie or smoker box for added flavour.
