1 I N TROD UCTI ON
1 .1
I ntroduct ion
Vcolor 679/ 689 is a cont roller for ret arding-proofing or proofing cabinet s and room s which delivers high perform ance and precision regulat ion, t hanks t o a m odulat ing out put which gives cont r ol of up t o t en evaporat or fan speeds. The evaporat or fan can also be m odulat ed using an EVCO invert er. I n t he 689 m odels, t he m odulat ing out put can also be set t o cont rol variable speed com pressor s. The cont roller’s fir m w are can cont rol an ult rasonic hum idifier from t he Mist ral series via t he RS- 485 serial port .
By sim ply set t ing a param et er, t he cont roller can be configured t o m anage ret arding-proofing and proofing aut om at ic cycles. Variables such as t em perat ure, hum idit y, fan int ensit y and durat ion can be m anaged independent ly for each phase. As well as t hree-phase proofing cycles (re-awakening, proofing and baking delay) , wit h blocking and holding added in t he ret arding-proofing cycles, t here are also m anual cycles such as heat ing for proofing and cooling/ pre-cooling/ heat ing for ret arding- proofing.
The cont roller’s innovat ive program m able plat for m gives m anufact urers t he freedom t o personalise t he graphic skin and pr ogram m es and add new languages. All t hey have t o do is com pile an ODS file and upload it using a flash dr ive t o t he USB port on t he user int erface. Users can st ore up t o 100 program m es, m at ch t hem t o a set of preloaded im ages and m ove t hem t o t he favourit es.
Users can int eract rem ot ely w it h t heir equipm ent and st art up/ st op w orking cycles using t he EPoCA® cloud plat form w it h Wi- Fi or Et hernet connect ivit y ( w hich also enables alt ernat ive or parallel cont rol t hrough MODBUS TCP) . Precautions for elect rical connection
Do not use elect ric or pneum at ic screwdrivers on t he t erm inal blocks of t he device. I f t he device is m oved from a cold t o a warm place, t he hum idit y m ay cause condensat ion t o form inside. Wait about an hour before swit ching on t he power. Make sure t hat t he supply volt age, elect rical frequency and power of t he device correspond t o t he local power supply. See sect ion 1516 ” TECHNI CAL SPECI FI CATI ONS” . Disconnect t he device from t he power supply before doing any t ype of m aint enance. Locat e t he pow er cables as far aw ay as possible from t hose for t he signal. To reduce reflect ions on t he signal t ransm it t ed along t he cables connect ing t he user int erface t o t he cont rol m odule, it is necessary t o fit a t erm inat ion resist or. For repair s and for furt her inform at ion on t he device, cont act t he EVCO sales net w ork .

4.1 I nitial inform ation
Vcolor 679/ 689 is a cont roller w hich, by sim ply set t ing a param et er, can be configured t o m anage ret arding-proofing cabinet s and room s ( E12 = 1) or proofing cabinet s and room s ( E12 = 0) . All t he cooling regulat ions are for ret arding- pr oofing only; care m ust t herefore be t aken w hen configur ing t he cont roller for proofing ( E12 = 0) , t hat no param et ers are set for cooling ( see sect ion 1 4 . PARAMETERS) . Aut om at ic m anagem ent of t he com plet e dough cycle consist s of t hree phases in t he proofing configurat ion (re-awakening, proofing and baking delay) , plus t w o m ore for ret arding- proofing ( blocking and holding) . There are also m anual cycles such as heat ing for proofing and cooling/ pre- cooling/ heat ing for ret arding-proofing. This m anual gives inst ruct ions how t o use t he cont roller, only point ing out when t here are differences bet ween t he t wo configurat ions.
5 FI RST- TI ME USE
5 .1
Operating m odes
The cont roller has t he following operat ing m odes: – ” OFF” ( no pow er t o t he device) ; – ” STAND- BY” ( t he device is pow ered but sw it ched off) ; – ” ON/ HOME” ( t he device is pow ered, sw it ched on and aw ait ing st art – up of an operat ing cy cle) ; – ” RUN” ( t he device is pow ered, sw it ched on and running an operat ing cycle) . Term inology: ” device swit ch- on” m eans going fr om ” st and- by” t o ” ON” and ” device swit ch- off” from ” ON” t o ” st and- by” . I f t here is a power failure, when power is rest ored t he device will ret urn t o t he m ode set before t he failure.

Sanit at ion can be act ivat ed only if t he t em perat ure of t he room is higher t han t he t em perat ure set by param et er SA1. The durat ion of t he cycle is set by param et er SA2; when sanit at ion is carried out wit h an ozone generat or, rest t im e is added at t he end of t he cycle which is set by param et er SA3.
