4. Einrichtung
- Auspacken: Entnehmen Sie vorsichtig alle Komponenten aus der Verpackung.
- Sauber: Before first use, wipe the machine with a dry cloth to remove any manufacturing residue. Do not use water or detergents.
- Sicher: Attach the machine to a stable countertop or table using the provided table clamp. Insert the hand crank into the designated hole on the side of the machine.
- Erster Durchlauf: To ensure cleanliness and proper function, pass a small amount of dough (or a clean, dry cloth) through the smooth rollers and then through the cutting rollers a few times. Discard this initial dough/cloth.
5. Bedienungsanleitung
5.1. Zubereitung des Nudelteigs
For best results, use a firm pasta dough. If the dough is too soft, it may stick to the rollers or cutters. If it's too dry, it may crack. Adjust with small amounts of flour or water as needed. Allow the dough to rest for at least 20-30 minutes before rolling.
5.2. Rolling Dough Sheets
- Set the thickness adjustment knob to the widest setting (usually '0' or '1'). The Atlas 150 offers 10 thickness settings.
- Flatten a portion of your dough by hand and lightly dust it with flour.
- Insert the dough into the smooth rollers and turn the hand crank.
- Fold the dough in half, dust lightly with flour again, and pass it through the widest setting repeatedly (5-6 times) until it is smooth and uniform.
- Gradually adjust the thickness knob to a narrower setting, passing the dough through each setting once until you reach your desired pasta sheet thickness. For very thin pasta, you can go up to setting '9'.
5.3. Cutting Pasta
Once your pasta sheet has reached the desired thickness, you can cut it into various shapes using the integrated cutters:
- Fettuccine: Use the wider cutting rollers.
- Tagliolini: Use the narrower cutting rollers.
- For other shapes like lasagna sheets or ravioli, simply use the rolled dough sheets as they are.
Lightly dust the rolled pasta sheet with flour before feeding it into the cutting rollers to prevent sticking. Collect the cut pasta and place it on a floured surface or pasta drying rack.

6. Wartung und Reinigung
Proper maintenance ensures the longevity and optimal performance of your MARCATO Atlas 150.
- After each use, clean the machine with a dry brush or a clean, dry cloth.
- Do not use water, detergents, or abrasive materials, as these can damage the anodized aluminum finish and internal mechanisms.
- Small pieces of pasta dough may sometimes get stuck in the grooves of the cutters. Allow them to dry and then brush them off. The bottom of the machine has removable plastic brackets for easier cleaning of dry bits.
- If lubrication is ever needed, use food-grade mineral oil (also known as vaseline oil).

7. Fehlerbehebung
- Teig klebt an Walzen/Ausstechern: This usually indicates the dough is too soft or too sticky. Add more flour to the dough and knead it again, or allow the dough sheets to air dry for 10-15 minutes before rolling/cutting. Ensure you lightly flour the dough before each pass.
- Dough tearing or crumbling: The dough might be too dry. Add a small amount of water and knead until it reaches a more pliable consistency.
- Ungleichmäßige Nudelblätter: Ensure your initial dough portion is flattened evenly before the first pass through the widest setting. Repeatedly folding and passing the dough through the widest setting will help achieve a uniform consistency.
