Before your first cook, lightly coat the interior surfaces and grates with cooking oil. Ignite a small amount of charcoal outside the grill, wait until it turns white/gray, and place it on the charcoal grate. Maintain a moderate temperature for about one hour without strong open flames directly contacting the metal.
The recommended and safest method is using a charcoal chimney starter. Light the charcoal in the chimney outside the grill, wait 15-20 minutes until the coals turn white/gray, and then carefully pour them onto the charcoal grate. Do not ignite charcoal directly on the cooking grate.
Temperature is controlled by adjusting the air vents. Open the bottom and top vents wider to increase airflow and raise the heat. Close them partially to restrict oxygen and lower the temperature. Always monitor the heat using the built-in temperature gauge.
