Safety Information
Always follow basic safety precautions when using electrical appliances to reduce the risk of fire, electric shock, and injury to persons.

Setup
1. Unpacking and Placement
Carefully remove the espresso machine and all accessories from the packaging. Place the machine on a stable, level, and heat-resistant surface. Ensure there is adequate clearance around the machine for ventilation and access. The machine dimensions are approximately 18"D x 13.4"W x 15.9"H.

2. Water Reservoir
Locate the 1.8-liter water reservoir. Remove the lid and fill the reservoir with fresh, filtered water. Do not overfill. Ensure the reservoir is properly seated in its compartment.
3. Power Connection
Plug the power cord into a grounded 120V AC outlet. The machine operates at 1550 watts and requires a 15A circuit.
4. Initial Heat-Up
Turn on the main power switch. The machine will begin to heat up. Thanks to its larger heating elements and updated brew group, the Giotto FAST V is designed for a fast heat-up time, reaching brew-ready temperatures in approximately 15 minutes. During this time, the pressure gauges will indicate the boiler pressure increasing.

Operating Instructions
1. PID Temperature Control
The Giotto FAST V features PID temperature control for accurate and adjustable temperature management. The controls are discreetly located behind the drip tray. Refer to the detailed PDF manual for specific instructions on adjusting the PID settings.
2. Brewing Espresso
- Ensure the machine is fully heated and the portafilter is warm.
- Grind fresh coffee beans to an espresso-fine consistency.
- Dose the appropriate amount of ground coffee into the portafilter basket (single or double).
- Distribute the coffee evenly and tamp firmly with the provided tamper.
- Wipe any loose grounds from the rim of the portafilter.
- Insert the portafilter into the group head and lock it into place.
- Place your espresso cup(s) under the portafilter spouts.
- Lift the brew lever to start the extraction. The integrated shot timer will begin counting.
- Monitor the extraction. Lower the brew lever to stop the extraction once the desired volume or time is reached.
3. Steaming Milk
The machine's heat exchanger design allows for simultaneous brewing and steaming.
- Ensure the steam boiler is at operating pressure (indicated by the steam gauge).
- Purge the steam wand briefly into the drip tray to clear any condensed water.
- Immerse the tip of the steam wand just below the surface of cold milk in a stainless steel pitcher.
- Open the steam valve fully.
- Stretch the milk by keeping the wand tip near the surface, creating a gentle swirling motion.
- Once the desired volume is achieved, immerse the wand deeper to heat the milk to temperature (typically 140-150°F / 60-65°C).
- Close the steam valve, remove the pitcher, and immediately wipe the steam wand with a damp cloth. Purge the wand again to clear any milk residue.
Maintenance
1. Daily Cleaning
- Group Head: After each use, remove the portafilter and rinse it. Use the group brush to clean any coffee grounds from the group head gasket.
- Drip Tray: Empty and rinse the drip tray daily.
- Steam Wand: Always wipe and purge the steam wand immediately after steaming milk.
- Water Reservoir: Rinse the water reservoir regularly and refill with fresh water.
2. Backflushing
Regular backflushing is crucial for maintaining the cleanliness of your group head.
- Insert the backflushing basket into a portafilter.
- Add a small amount of espresso machine cleaner (e.g., Cafiza) to the basket.
- Lock the portafilter into the group head.
- Engage the brew lever for 10-15 seconds, then disengage for 5 seconds. Repeat 5-10 times.
- Remove the portafilter, rinse it, and repeat the process with just water to flush out any cleaner residue.
3. Descaling
The frequency of descaling depends on your water hardness. It is recommended to descale every 2-3 months with soft water, or more frequently with hard water. Use a descaling solution specifically designed for espresso machines and follow the manufacturer's instructions.
