Operating Instructions
Heating the Granite Stone
The natural granite stone can be heated to temperatures up to 500°F (287.8°C) using various methods. Always use oven mitts or heat-resistant gloves when handling the hot stone.
- Oven Heating: Place the granite stone in a cold oven. Preheat the oven to 500°F (260°C) and allow the stone to heat for at least 45-60 minutes after the oven reaches temperature.
- Stovetop Heating: Place the granite stone directly on a stovetop burner over medium-high heat. Heat for approximately 20-30 minutes, or until a drop of water sizzles and evaporates quickly.
- Grill Heating: The stone can also be heated on an outdoor grill. Place it on the grill grates over high heat for 30-45 minutes.

Cooking on the Hot Stone
- Once heated, carefully transfer the hot granite stone to the stainless steel tray on the bamboo platter using heat-resistant gloves.
- Place thinly sliced meats, seafood, or vegetables directly onto the hot stone. The high temperature will sear the food quickly, locking in juices and flavor.
- Cook food to your desired doneness. The stone will retain heat for an extended period, allowing for a leisurely cooking and dining experience.
- Use the ceramic bowls for sauces, dips, or condiments to accompany your meal.
Serving Cold with the Chilled Stone
The granite stone can also be chilled for serving cold items like sushi, desserts, or appetizers.
- Place the clean, dry granite stone in a freezer for at least 2-3 hours, or until thoroughly chilled.
- Carefully transfer the chilled stone to the stainless steel tray on the bamboo platter.
- Arrange cold foods on the chilled stone to keep them cool during serving.

Maintenance
Cleaning
- Granite Stone: Allow the stone to cool completely before cleaning. Wash with warm, soapy water and a non-abrasive sponge. Rinse thoroughly and dry completely. The stone is stain and odor resistant.
- Stainless Steel Tray & Ceramic Bowls: These components are dishwasher safe. For hand washing, use warm, soapy water and a soft sponge.
- Bamboo Platter: Wipe clean with a damp cloth. Do not soak in water or wash in a dishwasher, as this can damage the bamboo. Dry immediately after cleaning.

Storage
Store all components in a clean, dry place when not in use. Ensure the granite stone is completely dry before storing to prevent moisture buildup.
Troubleshooting
- Stone not heating evenly: Ensure the stone is placed on a flat surface and heated for the recommended duration. Oven heating generally provides more even heat distribution.
- Food sticking to the stone: Ensure the stone is sufficiently hot. A small amount of cooking oil can be brushed onto the stone before placing food, though many prefer to cook directly on the dry stone.
- Smoke during cooking: Some smoke is normal, especially with fatty meats. Ensure adequate ventilation. If excessive, the stone might be too hot or food has accumulated residue. Clean the stone thoroughly after each use.
- Bamboo platter warping: Avoid soaking the bamboo platter in water. Wipe clean with a damp cloth and dry immediately.
