The GRAEF CC82 features two distinct sharpening stages to achieve a consistently sharp edge.



Setup
- Unpack the GRAEF CC82 sharpener and remove all packaging materials.
- Place the sharpener on a clean, dry, and stable surface.
- Ensure the power switch is in the "OFF" position.
- Plug the power cord into a suitable electrical outlet.
Operating Instructions
The GRAEF CC82 features two sharpening stages:
- Stage 1: Coarse Sharpening (CrissCross Technology)
This stage uses diamond-coated sharpening wheels to create the initial 20-degree edge. It is suitable for dull or damaged blades and for establishing the primary bevel.
- Turn on the sharpener using the power switch.
- Hold the knife with the blade facing downwards and insert it into slot 1. Ensure the blade is centered and rests against the guide.
- Pull the knife slowly and steadily through the slot, applying light downward pressure. Repeat this process 3-5 times for each side of the blade, alternating between the left and right guides within slot 1.
- Listen for a consistent grinding sound. Avoid excessive pressure, which can damage the blade or the sharpener.

This stage refines the edge created in Stage 1, removing burrs and polishing the blade for an ultra-sharp finish. This stage is manual and does not involve rotating wheels.
- After completing Stage 1, insert the knife into slot 2.
- Pull the knife slowly and steadily through the slot, applying very light pressure. Repeat this process 5-10 times for each side of the blade, alternating between the left and right guides within slot 2.
- This stage is crucial for achieving the final razor-sharp edge and is also suitable for maintaining already sharp knives.
- For serrated blades, only use Stage 2. Gently pull the serrated edge through slot 2 a few times to refine the tips of the serrations. Do not use Stage 1 for serrated blades.

After sharpening, carefully wipe the blade with a damp cloth to remove any metal dust before use.
Maintenance and Cleaning
- Always unplug the sharpener before cleaning.
- Wipe the exterior of the sharpener with a soft, damp cloth. Do not use abrasive cleaners or solvents.
- The sharpening slots may accumulate metal dust. To clean, gently tap the sharpener upside down over a waste bin to dislodge particles. Do not use water or compressed air directly into the slots.
- Store the sharpener in a dry place when not in use.
Troubleshooting
- Sharpener does not turn on:
Ensure the power cord is securely plugged into both the sharpener and a working electrical outlet. Check the power switch is in the "ON" position.
- Knives are not getting sharp:
Ensure you are following the correct procedure for both Stage 1 and Stage 2. Apply light, consistent pressure and pull the knife slowly. Very dull knives may require more passes through Stage 1. Ensure the knife is suitable for a 20-degree grinding angle.
- Excessive scratching on blade:
This may indicate too much pressure is being applied, or the knife is not being pulled through smoothly. Reduce pressure and maintain a steady motion. Ensure the blade is clean before sharpening.
