Setup and Installation
Unpacking
Carefully remove the griddle from its packaging. Inspect the unit for any shipping damage. Report any damage immediately to the carrier and your dealer. Do not discard packaging materials until the unit has been inspected and installed.
Location and Clearance
Install the griddle on a firm, level, non-combustible surface. Ensure adequate clearance from combustible walls and materials. Consult local fire codes for specific requirements. Maintain a minimum of 6 inches clearance from combustible surfaces on the sides and rear.
Leveling
The griddle is equipped with adjustable legs. Use a spirit level to ensure the cooking surface is perfectly level for even cooking and proper grease drainage.
Gas Connection
IMPORTANT: Gas connection and LP conversion (if applicable) must be performed by a qualified, licensed professional. The griddle ships configured for natural gas. An LP conversion kit is included for propane use. Refer to the detailed instructions provided with the LP conversion kit for proper installation.
- Connect the griddle to the gas supply using a 3/4-inch NPT gas connection.
- Install a manual shut-off valve in the gas line ahead of the appliance.
- Check all gas connections for leaks using a soap solution. Never use an open flame.
Ventilation
This appliance must be installed under an adequate ventilation hood in accordance with local codes and NFPA 96. Ensure proper airflow to remove cooking fumes and heat.
Operating Instructions
Seasoning the Griddle Plate
Before initial use, the griddle plate must be seasoned to prevent food from sticking and to protect the surface. This process should be performed in a well-ventilated area.
- Clean the griddle surface thoroughly with warm, soapy water to remove any manufacturing oils or residues. Rinse completely and dry.
- Turn on all burners to their lowest setting.
- Apply a thin, even coat of high-temperature cooking oil (e.g., flaxseed, canola, or vegetable oil) to the entire griddle surface using a clean cloth.
- Allow the oil to smoke off completely. This may take 15-20 minutes.
- Repeat steps 3 and 4 at least 2-3 more times, allowing the griddle to cool slightly between coats. The griddle surface should develop a dark, non-stick finish.
Ignition and Temperature Control
- Ensure the main gas supply valve is open.
- Push in and turn the desired burner control knob counter-clockwise to the "PILOT" position.
- Ignite the pilot light using a long match or lighter. Hold the knob in for approximately 30 seconds after ignition to allow the thermocouple to heat up.
- Release the knob. If the pilot light extinguishes, repeat the process.
- Once the pilot is lit, turn the control knob to the desired temperature setting (LOW to HIGH).
- Allow the griddle to preheat for 15-20 minutes before cooking.
Shutting Down
- To turn off a burner, turn its control knob clockwise to the "OFF" position.
- For complete shutdown, close the main gas supply valve.
Maintenance
Daily Cleaning
- After each use, while the griddle is still warm (but not hot), scrape off food debris into the grease trough.
- Empty and clean the grease drawer regularly.
- Wipe the griddle surface with a damp cloth. For stubborn residue, use a griddle brick or scraper. Avoid abrasive cleaners that can damage the seasoned surface.
- Wipe down the stainless steel exterior with a clean, damp cloth and a mild detergent. Dry thoroughly to prevent water spots.
Periodic Maintenance
- Inspect gas connections and hoses for leaks or damage.
- Ensure burner ports are clear of debris.
- Check pilot lights for proper flame size and stability.
- Have the appliance inspected and serviced annually by a qualified service technician.
