Setup and Assembly

- Assemble the Stand: Attach the wheels to the cast iron stand. Ensure all bolts are securely tightened.
- Place the Ceramic Body: Carefully lift and place the main ceramic body into the assembled stand.
- Install Internal Components: Place the ceramic fire box and cast iron charcoal plate inside the ceramic body.
- Attach Handle and Side Shelves: Secure the bamboo handle and side shelves to the ceramic body using the provided hardware.
- Insert Thermometer: Install the integrated thermometer into its designated opening on the lid.
- Place Cooking Grate and Top Vent: Position the cooking grate inside the grill. Place the cast iron top vent on the lid.

Operating Instructions
1. Initial Use and Seasoning
Before cooking food, it is recommended to perform an initial burn-in to cure the ceramic and burn off any manufacturing residues. Light a small amount of charcoal and let it burn for 1-2 hours at a moderate temperature (around 250°F / 120°C) with the lid closed and vents slightly open.
2. Charcoal Loading
Place lump charcoal or briquettes directly onto the cast iron charcoal plate within the ceramic fire box. For longer cooks, arrange charcoal in a mound or snake method. Do not overfill; leave space for airflow.
3. Lighting the Grill
Use a charcoal starter or natural fire starters to ignite the charcoal. Avoid lighter fluid. Once a small area of charcoal is glowing, close the lid and adjust the vents to bring the grill to your desired temperature.

4. Temperature Control
The ceramic construction and hermetic chamber allow for precise temperature control. Use the integrated thermometer to monitor the internal temperature.
- Top Vent (Double Disc): Adjust the top vent to control the amount of air exiting the grill. A wider opening increases temperature, a smaller opening decreases it.
