1. Introduction

3. Setup

  1. Unpack Components: Carefully remove the rolling sharpener and grip pad from their packaging.
  2. Choose a Stable Surface: Place the HORL Grip Pad on a clean, stable, and flat surface. The non-slip base ensures stability during sharpening.
  3. Select Grinding Angle: The grip pad has two sides, offering 15° and 20° grinding angles.
    • 15° Grinding Angle: Ideal for fine blades made from high-quality steel, providing a delicate sharpness.
    • 20° Grinding Angle: Recommended for robust cutting tasks and sturdy blades, such as European chef's knives, ensuring long-lasting sharpness.

4. Operating Instructions

The HORL 3 Cruise features two sharpening surfaces on the rolling sharpener: a diamond grinding disc and a stainless steel honing disc.

4.1. Sharpening with the Diamond Grinding Disc

  1. Initial Sharpening: For dull knives or to establish a new grinding angle, begin with the diamond grinding disc. This disc uses industrial diamonds for fast material removal.
  2. Rolling Motion: With the knife securely held by the grip pad, roll the diamond grinding disc along the entire length of the blade, applying light and even pressure. Ensure the disc maintains contact with the blade's edge.
  3. Even Strokes: Perform several strokes on one side of the blade until a slight burr forms on the opposite side. You can check for a burr by gently running your fingertip across the edge (away from the sharp side).
  4. Repeat on Other Side: Flip the knife over (or rotate the grip pad if applicable) and repeat the process on the other side of the blade with the diamond grinding disc until a burr forms on the first side.

4.2. Honing with the Stainless Steel Honing Disc

  1. Remove Burr: After sharpening with the diamond disc, switch to the stainless steel honing disc. This disc is used to remove the burr and refine the knife edge.
  2. Gentle Strokes: Roll the honing disc along the blade with very light pressure, alternating sides. Perform fewer strokes than with the diamond disc.
  3. Final Edge: Continue honing until the burr is completely removed and the edge feels smooth and sharp.

5. Maintenance

  • Cleaning the Sharpener: After each use, wipe the diamond and honing discs with a damp cloth to remove any metal particles. Do not submerge the sharpener in water.
  • Cleaning the Grip Pad: Wipe the magnetic grip pad with a damp cloth. Ensure the magnetic surface is clean for optimal knife adhesion.
