Setup
- Choose a Stable Surface: Place the magnetic angle support on a clean, stable, and flat surface, such as a cutting board or countertop. Ensure the surface is non-slip to prevent movement during sharpening.
- Select the Sharpening Angle: The magnetic angle support has two sides, marked 15° and 20°.
- 15° Grinding Angle: Ideal for fine blades made from high-quality steel, providing a filigree sharpness.
- 20° Grinding Angle: Recommended for robust blades like European chef's knives, ensuring long-lasting sharpness for everyday use.

- Attach the Knife: Place the knife blade flat against the chosen magnetic side of the angle support. The strong magnets will hold the knife securely in place. Ensure the blade is flush with the surface of the cutting board or countertop.
Operating Instructions
Follow these steps to sharpen your knife effectively:
- Initial Sharpening (Diamond Disc):
- Hold the rolling sharpener unit with the diamond grinding disc facing the knife blade.
- Place the diamond disc against the knife blade, ensuring it makes full contact with the edge.
- Roll the sharpener unit back and forth along the entire length of the blade, from the heel to the tip. Apply light, consistent pressure. You will hear a grinding sound, which is normal.
- Perform approximately 5-7 passes on one side of the blade.

- Honing (Stainless Steel Disc):
- Flip the rolling sharpener unit to the stainless steel honing disc side.
- Repeat the back-and-forth rolling motion along the entire length of the blade, applying very light pressure. This step refines the edge and removes any burrs created during sharpening.
- Perform approximately 5-7 passes on this side.
- Repeat for the Other Side: Carefully detach the knife from the magnetic angle support, flip it over, and re-attach it to the other side of the magnetic angle support. Repeat steps 1 and 2 for the second side of the blade.
- Test Sharpness: After sharpening both sides, carefully test the sharpness of your knife. A common test is to try slicing a ripe tomato or a piece of paper. The knife should cut smoothly without tearing.
Maintenance
- Cleaning: After each use, wipe down the diamond and stainless steel discs with a damp cloth to remove any metal particles or dust. The magnetic angle support can also be wiped clean. Do not immerse the sharpener in water.
- Storage: Store the HORL 3 Cruise Rolling Knife Sharpener in a dry place, away from extreme temperatures and humidity. Keep it out of reach of children.

- Uneven Edge:
- Ensure consistent pressure and full contact of the rolling unit across the entire blade length during each pass.
- Make sure the knife is securely held by the magnets and does not shift during sharpening.
- Excessive Metal Dust:
- This is normal during the initial grinding phase, especially for very dull knives. Clean the sharpener and knife thoroughly after use.
