5. Setup
5.1 Initial Unpacking
- Carefully remove all packaging materials and ensure no components are missing.
- Place the machine on a stable, heat-resistant, and level surface.
5.2 Filling the Water Tank
- Remove the 1.7 L water tank from the back of the machine.
- Fill the tank with fresh, cold, filtered water up to the MAX line.
- Replace the water tank securely into its position.
5.3 First Use / Priming the Pump
- Ensure the water tank is filled.
- Plug the machine into a grounded power outlet.
- Press the power button (U) to turn on the machine. The PID display will illuminate.
- Place a container under the group head.
- Press the manual brew button (middle button) to run water through the group head until a steady stream appears. This primes the pump.
- Turn the steam knob to release steam until a steady stream of steam is produced. This primes the steam system.
- Allow the machine to heat up to the set temperature (displayed on the PID).
6. Operating Instructions
6.1 Adjusting PID Temperatures
The Apex V2 features dual PIDs for precise temperature control:
- Boiler Temperature: Can be set between 85-102°C for brewing. Refer to the manual's advanced settings section for specific adjustment procedures.
- Steaming Temperature: Independently adjustable for optimal milk frothing.
6.2 Brewing Espresso
- Ensure the machine is heated to the desired brewing temperature.
- Grind fresh coffee beans to an appropriate fineness for espresso.
- Dose the 58mm portafilter with the desired amount of ground coffee and tamp evenly.
- Insert the portafilter into the group head and lock it into place.
- Place an espresso cup under the portafilter spouts.
- Pre-infusion: The pre-infusion water amount and time are configurable. Consult the advanced settings for adjustment. This feature gently saturates the coffee puck before full pressure brewing.
- Press the automatic brew button (bottom button) or manual brew button (middle button) to start extraction. The PID display will show the shot time.
- Monitor the pressure gauge; the Apex V2 aims for approximately 9 bar extraction.
- Stop the extraction manually by pressing the brew button again, or allow the automatic setting to complete.

6.3 Steaming Milk
- Ensure the machine is at the desired steaming temperature.
- Fill a milk pitcher with cold milk.
- Purge the steam wand by briefly opening the steam knob to release any condensed water.
- Insert the single-hole steam wand tip just below the surface of the milk.
- Open the steam knob fully to begin steaming.
- Lower the pitcher slightly to introduce air for texturing, then submerge the tip to heat the milk.
- Close the steam knob when the desired temperature and texture are achieved.
- Immediately wipe the steam wand with a damp cloth to prevent milk residue from drying.
- Purge the steam wand again to clear any internal milk residue.

7. Maintenance
7.1 Daily Cleaning
- Empty and rinse the drip tray after each use.
- Wipe down the exterior of the machine with a soft, damp cloth.
- Backflush the group head with a blind basket to remove coffee oils.
- Clean the portafilter and filter baskets.
7.2 Descaling
Regular descaling is essential to prevent mineral buildup. The frequency depends on your water hardness. Refer to the full manual for detailed descaling instructions using a suitable descaling solution.
8. Troubleshooting
