3. Setup and Assembly

The vidaXL Smoker Oven requires assembly. Follow these general steps to set up your smoker oven. Ensure all components listed in Section 2.1 are present before beginning assembly.

  1. Unpack all components and verify against the parts list.
  2. Assemble the main body of the smoker oven according to the detailed diagrams provided in the separate assembly guide (if applicable).
  3. Insert the ash drawer and brazier into the bottom compartment of the smoker oven.
  4. Place the grids (racks) at desired heights within the smoker oven. The interior is designed to accommodate multiple racks for versatile smoking.
  5. Install the S-shaped hooks onto the top bar inside the smoker oven for hanging items like sausages or fish.
  6. Ensure the door closes securely and the thermometer is properly seated.

4. Operating Instructions

4.1 Preparing the Smoker Oven

  • Place the smoker oven on a stable, level, non-combustible surface outdoors.
  • Ensure there is adequate clearance from combustible materials.
  • Prepare your food items for smoking and arrange them on the racks or hang them using the S-hooks.

4.2 Using the Cold Smoke Generator

The cold smoke generator is designed to produce smoke for extended periods using wood chips or sawdust.

Ensure you use appropriate wood chips or sawdust for smoking. A 1kg bag of wood chips is included with your smoker oven.

  1. Fill the cold smoke generator with wood chips or sawdust. Do not overfill.
  2. Light the wood chips in the generator using a small tea light candle or a culinary torch until the sawdust begins to smolder and change color.
  3. Once the wood chips are consistently smoldering, remove the tea light candle.
  4. Carefully place the smoldering cold smoke generator into the bottom compartment of the smoker oven, typically within the ash drawer area.
  5. Close the smoker oven door. The compact M-shaped mesh design of the generator allows the wood chips to burn uniformly and slowly, producing smoke for up to 10 hours.

4.3 Monitoring Temperature

The smoker oven is equipped with an integrated thermometer on the front door. Monitor this thermometer to ensure the internal temperature remains within the desired range for cold smoking. Cold smoking typically occurs at temperatures below 30°C (86°F).

5. Maintenance

5.1 Cleaning the Smoker Oven

  • Allow the smoker oven to cool completely before cleaning.
  • Remove all racks, hooks, and the ash drawer.
  • Empty any remaining ash or wood chips from the ash drawer.
  • Clean the interior surfaces, racks, and hooks with warm soapy water and a non-abrasive brush or sponge.
  • Rinse thoroughly and dry all components before reassembly or storage.
  • Wipe down the exterior with a damp cloth.

5.2 Cleaning the Cold Smoke Generator

  • After each use, ensure the generator is cool.
  • Remove any unburnt wood chips or ash.
  • Clean the mesh and body of the generator with warm soapy water and a brush to remove residue.
  • Rinse and dry completely to prevent rust and ensure proper airflow for future use.

5.3 Storage

  • Store the smoker oven in a dry, protected area when not in use to prolong its lifespan.
  • Consider using a protective cover if storing outdoors.

6. Troubleshooting

6.1 Insufficient Smoke Production

  • Check wood chips: Ensure the wood chips are dry and suitable for smoking. Damp chips may not smolder effectively.
  • Verify lighting: Make sure the wood chips in the cold smoke generator are properly lit and consistently smoldering before placing it in the smoker.
  • Airflow: Ensure there is adequate airflow to the cold smoke generator. Blocked vents or an overly packed generator can hinder smoke production.

6.2 Temperature Too High for Cold Smoking

  • External heat sources: Ensure the smoker oven is not exposed to direct sunlight or other external heat sources that could raise the internal temperature.
  • Ambient temperature: Cold smoking is best performed in cooler ambient temperatures. If the outdoor temperature is too high, it may be difficult to maintain cold smoking temperatures.
  • Ventilation: Ensure proper ventilation to prevent heat buildup, but avoid excessive airflow that could cause the wood chips to burn too quickly.
