4. Setup

4.1 Placement

5. Operating Instructions

The control panel is located at the top front of the unit. It displays current temperature and humidity and allows for basic adjustments.

5.2 Smart App Control (iOS)

For advanced monitoring and control, download the free SteakAger iOS app from the Apple App Store. The app allows you to:

  • Connect locally via Bluetooth or remotely via Wi-Fi.
  • Monitor real-time temperature and humidity data.
  • Record and graph aging data.
  • Receive push notification alerts for aging completion or malfunctions.
  • Access dry aging recommendations based on meat cut and weight.

5.3 Loading Meat for Dry Aging

  1. Ensure the unit has stabilized to the desired aging conditions (typically 34-38°F and 60-80% humidity).
  2. Place your chosen cut of beef (e.g., primal cuts, bone-in roasts) directly on the wire rack. Ensure adequate air circulation around the meat; do not overcrowd the unit.
  3. The unit can hold 4-6 steaks or up to 20 lbs of beef.
  4. Close the door securely.
  5. Monitor the aging process via the control panel or the SteakAger app.

6. Maintenance

6.1 Cleaning the Interior

  • Regularly clean the interior of the unit, especially after each aging cycle.
  • Unplug the unit before cleaning.
  • Remove the wire rack and drip tray. Wash them with warm, soapy water and dry thoroughly.
  • Wipe down the interior surfaces with a damp cloth and a mild, food-safe cleaner. Avoid abrasive cleaners or harsh chemicals.
  • Ensure all surfaces are completely dry before plugging the unit back in and resuming operation.

6.2 UVC Germicidal Lamp

The UVC germicidal lamp operates automatically to maintain a sterile aging environment. The lamp has a long lifespan and typically does not require user maintenance or replacement under normal operating conditions. If you suspect an issue with the UVC lamp, contact customer support.
