5. Operating Instructions

5.1 Fueling the Grill

Open the lid and remove the grill grates. Place charcoal briquettes or lump charcoal in the bottom of the grill. Do not overfill. Use a charcoal starter or natural fire starters to ignite the charcoal. Once the charcoal is glowing, spread it evenly and replace the grill grates.

5.2 Temperature Control

The kamado grill's temperature is primarily controlled by adjusting the top and bottom dampers. The built-in thermometer provides accurate internal temperature readings.

  • Increasing Temperature: Open both the top and bottom dampers wider to increase airflow, which will raise the temperature.
  • Decreasing Temperature: Close both dampers partially to restrict airflow, which will lower the temperature.
  • Maintaining Temperature: Make small adjustments to the dampers to maintain your desired cooking temperature.

5.3 Grilling and Smoking

The kamado design allows for convection-style cooking, distributing heat evenly. This makes it suitable for various cooking methods.

  • Direct Grilling: For searing and high-heat cooking, place food directly over the hot charcoal.
  • Indirect Grilling/Smoking: For slow roasting or smoking, arrange charcoal on one side and place food on the other, or use a heat deflector (not included) for true indirect cooking.

The grill is equipped with an easy-dump ash pan for hassle-free cleaning. Ensure the grill is completely cool before removing ashes.
