1. Product Overview

The Donper XF124 is a self-contained, air-cooled countertop frozen drink machine designed for high-volume applications. It offers superior performance and user-friendly operation, making it ideal for serving a variety of frozen beverages.

2. Safety Instructions

Before operating the Donper XF124, please read and understand all safety instructions. Failure to do so may result in injury or damage to the machine.

• Always ensure the machine is properly grounded.
• Do not operate the machine with damaged power cords or plugs.
• Keep hands and foreign objects away from moving parts during operation.
• Disconnect power before cleaning or performing maintenance.
• Ensure adequate ventilation around the machine. Maintain at least 6 inches of clearance from walls or other equipment.
• Do not use abrasive cleaners or sharp objects that could damage the stainless steel exterior.
• This machine is designed for commercial use. Only qualified personnel should perform repairs.

3. Setup and Installation

1. Unpacking: Carefully remove the machine from its packaging. Inspect for any shipping damage. Report any damage to your supplier immediately.
2. Placement: Place the machine on a stable, level countertop capable of supporting its weight (189 pounds). Ensure there is at least 6 inches of clear space around all sides for proper air circulation.
3. Power Connection: Connect the machine to a dedicated 115V, single-phase, 60 Hz electrical outlet with an L5-20P plug type. Do not use extension cords.
4. Initial Cleaning: Before first use, thoroughly clean all parts that will come into contact with the product mix, including the hopper, freezing cylinder, and dispensing valve. Refer to the "Maintenance and Cleaning" section for detailed instructions.

4. Operating Instructions

1. Prepare Mix: Prepare your frozen drink mix according to the recipe. Ensure the mix is properly chilled before adding it to the machine for optimal performance.
2. Fill Hopper: Pour the prepared mix into the refrigerated hopper. The hopper has a capacity of 19 Qt (18 L). Do not overfill.
3. Activate Hopper Cooling: Turn the "HOPPER COOLING" switch to the "ON" position. This precools the mix, leading to faster recovery and freeze times.
4. Start Freezing: Turn the main power switch to the "ON" position. The machine will begin the freezing process. The mechanical consistency control will ensure the desired frozen drink consistency.
5. Dispensing: Once the mix reaches the desired consistency, pull the dispensing handle forward to serve. Release the handle to stop dispensing.
6. Mix Low Indicator: The "MIX LOW" indicator light will illuminate when the mix level in the hopper is low, signaling that a refill is needed.

5. Maintenance and Cleaning

Regular cleaning and maintenance are crucial for the longevity and hygienic operation of your Donper XF124 machine.

Daily Cleaning:

1. Empty Machine: Dispense any remaining product mix.
2. Power Off: Turn the main power switch to "OFF" and unplug the machine.
3. Disassemble: Carefully remove the dispensing handle, front panel, and internal components (beater, seals, etc.).
4. Wash Components: Wash all disassembled parts with warm, soapy water. Use a soft brush for hard-to-reach areas. Rinse thoroughly with clean water.
5. Sanitize: Sanitize all washed parts using a food-grade sanitizer solution according to the manufacturer's instructions.
6. Clean Exterior: Wipe down the stainless steel exterior with a damp cloth and mild detergent. Dry thoroughly to prevent water spots.
7. Reassemble: Reassemble all components, ensuring they are dry and correctly seated.

Periodic Maintenance:

• Lubrication: Periodically lubricate O-rings and seals with food-grade lubricant to ensure smooth operation and prevent leaks.
• Air Filter Cleaning: Regularly clean the air filters located on the side panels to ensure proper airflow and cooling efficiency.
• Professional Inspection: It is recommended to have the machine inspected by a qualified technician annually to check refrigerant levels, motor performance, and overall system health.
