2. Safety Instructions
Please read and understand all safety warnings before using this appliance.
- Always ensure the sharpener is placed on a stable, flat, and dry surface during use.
- Keep hands and fingers away from the sharpening slots while the unit is operating.
- Unplug the sharpener from the power outlet when not in use, before cleaning, or when changing accessories.
- Do not immerse the sharpener in water or any other liquid. Do not operate with wet hands.

Each stage is designed for a specific purpose:
- Stage 1 (Coarse - 240# Diamond): For dull or damaged knives, establishing a new edge.
- Stage 2 (Fine - 600# Diamond): For daily maintenance and refining the edge.
- Stage 3 (Polish - 1000# Resin): For polishing the blade to a mirror-like finish, enhancing sharpness and appearance.

The sharpener is suitable for most kitchen knives made of stainless steel or ceramic. It is not designed for serrated knife blades.
4. Setup
- Unpack the Changhe Electric Knife Sharpener and remove all packaging materials.
- Place the sharpener on a clean, dry, and stable countertop or work surface. Ensure there is enough space around the unit for safe operation.
- Plug the power cord into a standard AC100-120V / 60Hz electrical outlet.
- Ensure the power switch is in the 'OFF' position before plugging in.
5. Operating Instructions
Follow these steps to sharpen your knives effectively:
General Sharpening Guidelines:
- Always start with a clean knife blade.
- Turn the sharpener ON using the power switch. The indicator light will illuminate.
- Hold the knife firmly by the handle.
- Insert the knife blade into the appropriate sharpening slot, ensuring the blade is centered and resting against the angle guide.
- Pull the knife slowly and steadily through the slot, from the heel to the tip of the blade. Maintain light, consistent downward pressure.
- Repeat the process, alternating between the left and right sides of the slot for an even edge.
- The number of passes depends on the dullness of the knife. For very dull knives, more passes may be required in the coarse stage.
- After sharpening, always wipe the blade clean with a damp cloth to remove any metal particles.

Step-by-Step Sharpening Process:
- For Very Dull or Damaged Knives (Initial Sharpening):
Use Stage 1 (Coarse). Make 5-10 slow passes through the left slot, then 5-10 slow passes through the right slot, alternating sides. Apply moderate downward pressure. - For Moderately Dull Knives or Daily Maintenance:
Use Stage 2 (Fine). Make 3-5 slow passes through the left slot, then 3-5 slow passes through the right slot, alternating sides. Apply light downward pressure. - For Polishing and Finishing the Edge:
Use Stage 3 (Polish). Make 1-2 very light passes through the left slot, then 1-2 very light passes through the right slot, alternating sides. This stage refines the edge and provides a polished finish.
Important: Always pull the knife towards you. Never push the knife away from you through the sharpening slots.

6. Maintenance
Regular maintenance ensures optimal performance and longevity of your sharpener.
Cleaning the Magnetic Chip Collection Box:
- Ensure the sharpener is unplugged from the power outlet.
- Locate the magnetic chip collection box on the underside of the unit.
- Gently slide out the collection box.
- Empty any accumulated metal shavings into a waste bin.
- Wipe the box clean with a dry cloth.
- Slide the collection box back into its position until it clicks securely.

General Cleaning:
- Wipe the exterior of the sharpener with a soft, damp cloth. Do not use abrasive cleaners or immerse the unit in water.
- Ensure the unit is completely dry before storing or next use.
7. Troubleshooting
If you encounter issues with your sharpener, please refer to the following common solutions:
- Unit does not turn on: Ensure the power cord is securely plugged into a working electrical outlet and the power switch is in the 'ON' position. Check if the outlet is functional by plugging in another appliance.
- Knives are not sharpening effectively:
- Ensure you are using the correct sharpening stage for the knife's dullness.
- Verify that you are pulling the knife slowly and consistently through the slots, applying light to moderate pressure as appropriate for the stage.
- Make sure you are alternating sides evenly to create a symmetrical edge.
- Confirm the knife type is compatible (not serrated).
- Excessive noise or vibration: Discontinue use immediately. Unplug the unit and inspect for any visible obstructions or damage. If the issue persists, contact customer support.
