Always prioritize safety when operating your Ooni Karu 12G. Failure to follow these instructions could result in property damage, injury, or death.

  • Outdoor Use Only: This oven is designed for outdoor use in a well-ventilated area. Do not use indoors or in enclosed spaces.
  • Clearance: Maintain a minimum distance of 3 feet (1 meter) from any combustible materials (e.g., wooden decks, fences, buildings, trees).
  • Hot Surfaces: The oven's exterior and internal components become extremely hot during operation. Use heat-resistant gloves and avoid direct contact.
  • Stable Surface: Always place the oven on a stable, non-combustible surface.
  • Fuel Safety: Use only approved fuels (wood, charcoal, or Ooni Gas Burner for Karu 12G, sold separately). Never use lighter fluid, gasoline, or other volatile liquids to ignite or re-ignite the oven.
  • Children and Pets: Keep children and pets away from the oven during operation and while it is cooling down.
  • Supervision: Never leave the oven unattended while in use.

Setup & Assembly

  1. Unpack: Carefully remove all components from the packaging.
  2. Unfold Legs: Place the oven body on a stable surface and unfold the three legs until they lock into place.
  3. Insert Pizza Stone: Slide the cordierite pizza stone into the oven. Ensure it sits flat and securely.
  4. Attach Chimney: Insert the chimney into the opening on top of the oven. Secure it by twisting or locking mechanisms if present. Place the chimney cap on top.
  5. Insert Fuel Tray: Slide the fuel tray into the rear opening of the oven.
  6. Initial Burn-in: Before cooking food, perform an initial burn-in. Ignite a small amount of wood or charcoal in the fuel tray and allow the oven to heat up for at least 30 minutes. This helps to cure the stone and burn off any manufacturing residues.

Operating Instructions

Fueling Your Oven

The Ooni Karu 12G offers multi-fuel flexibility:

  • Wood/Charcoal: For authentic wood-fired flavor, use hardwood kindling or small pieces of charcoal. Load the fuel tray at the rear of the oven.
  • Gas (Optional): An Ooni Gas Burner for Karu 12G (sold separately) can be attached for convenient propane-fueled cooking. Follow the gas burner's specific instructions for installation and use.

Preheating and Cooking

  1. Ignition: Ignite your chosen fuel in the fuel tray. For wood/charcoal, use a natural fire starter. For gas, follow the gas burner's ignition procedure.
  2. Preheat: Close the oven door and allow the oven to preheat. The Karu 12G can reach 950°F (500°C) in approximately 15 minutes. Monitor the integrated thermometer for optimal cooking temperature (around 850°F / 450°C for pizza).
  3. Launch Pizza: Once the oven is at temperature, lightly flour your pizza peel and launch your pizza onto the hot stone.
  4. Rotate: Pizzas cook very quickly (in as little as 60 seconds). Rotate the pizza every 20-30 seconds using a turning peel to ensure even cooking.
  5. Remove: Once cooked to your preference, remove the pizza with the peel.

Care & Maintenance

Regular cleaning and maintenance will extend the life of your Ooni Karu 12G.

  • Pizza Stone: After the oven has completely cooled, scrape off any burnt food residue from the stone using a brush. The high heat of the oven will naturally clean the stone during use (pyrolysis). Do not use soap or water on the stone.
  • Interior: Brush out any ash or debris from the oven interior and fuel tray once cooled.
  • Exterior: Wipe down the stainless steel exterior with a damp cloth and mild detergent. Dry thoroughly. Avoid abrasive cleaners.
  • Chimney: Periodically clean the inside of the chimney to remove soot buildup.
  • Storage: Store the oven in a dry, covered area when not in use. Consider an Ooni cover for protection against the elements.
