The KOIOS EM621 is a semi-automatic espresso machine designed for home use, featuring a 20-bar pump, PID control, and a steam wand for milk frothing.

3.1 Initial Cleaning

  1. Remove all packaging materials.
  2. Wash the water tank, portafilter, filters, measuring spoon, and drip tray with warm soapy water. Rinse thoroughly and dry.
  3. Wipe the exterior of the machine with a damp cloth.

3.2 Filling the Water Tank

  1. Remove the water tank from the back of the machine using its handle.
  2. Fill the tank with fresh, cold water up to the MAX line.
  3. Place the water tank back onto the machine, ensuring it is securely seated.

3.3 Priming the Machine

Before first use, or if the machine has not been used for a long time, prime the system:

  1. Ensure the water tank is filled.
  2. Place a cup under the portafilter spout (without coffee).
  3. Turn the function knob to the "Coffee" mode limit.
  4. Press the 1-cup button. Water will flow through the portafilter. Let it run for about 30 seconds.
  5. Turn the function knob to the "Hot Water" mode. Let water flow from the steam wand for about 30 seconds.
  6. Turn the function knob back to the neutral position. The machine is now primed.

4. Operating Instructions

4.1 Making Espresso

  1. Preheat: Turn on the machine. Ensure the function knob is set to "Coffee". Wait for the indicator light to turn solid, indicating the machine is preheated.
  2. Prepare Coffee: Grind fresh coffee beans to a fine espresso grind. Fill the appropriate filter basket (1-cup or 2-cup) with ground coffee.
  3. Tamp: Use the tamper to press the coffee grounds firmly and evenly into the filter basket. Ensure the surface is level.
  4. Attach Portafilter: Insert the portafilter into the group head and twist it firmly to the right until it is securely locked.
  5. Place Cup: Position your espresso cup(s) on the drip tray directly under the portafilter spouts.
  6. Brew: Press the 1-cup or 2-cup button. The machine will begin brewing. The PID control system ensures optimal water temperature for extraction, and the pre-soak system moistens the grounds for uniform extraction.
  7. Stop: The machine will automatically stop brewing when the programmed volume is reached. You can manually stop brewing at any time by pressing the button again.
  8. Remove Portafilter: Carefully remove the portafilter by twisting it to the left. Dispose of the used coffee grounds.

4.2 Frothing Milk

  1. Prepare Milk: Fill a stainless steel frothing pitcher with cold milk (whole milk is recommended for best results).
  2. Activate Steam: Turn the function knob to the "Steam" mode. Wait for the steam indicator light to illuminate, indicating the machine is ready to produce steam.
  3. Purge Wand: Briefly open the steam valve to release any condensed water from the wand. Close the valve.
  4. Froth Milk: Immerse the tip of the steam wand just below the surface of the milk. Open the steam valve slowly. Move the pitcher up and down to create foam.
  5. Stop Steaming: Once the desired texture and temperature are achieved, close the steam valve and remove the pitcher.
  6. Clean Wand: Immediately wipe the steam wand with a damp cloth to prevent milk residue from drying. Briefly open the steam valve again to clear any milk from inside the wand.

4.3 Hot Water Function

To dispense hot water for warming cups or other uses:

  1. Ensure the machine is on and preheated.
  2. Place a cup under the steam wand.
  3. Turn the function knob to the "Hot Water" mode. Hot water will dispense from the steam wand.
  4. Turn the knob back to the neutral position to stop the flow.

Clean the water tank weekly with warm soapy water. Rinse thoroughly to remove any soap residue.

5.3 Descaling

Regular descaling is essential to maintain machine performance and extend its lifespan. The frequency depends on water hardness and usage.

  1. Prepare a descaling solution according to the descaler manufacturer's instructions.
  2. Fill the water tank with the descaling solution.
  3. Remove the portafilter handle. Place a large water bowl under the coffee spout and another under the steam wand.
  4. Press the 1-cup and 2-cup buttons simultaneously. The machine will begin the descaling cycle.
  5. Allow the machine to complete the cycle, or continue cleaning until the water tank is empty.
  6. After descaling, rinse the water tank thoroughly and fill it with fresh water.
  7. Run several cycles of fresh water through the coffee spout and steam wand to rinse out any remaining descaling solution.
