Please read all instructions carefully before operating the LEM Products BigBite Dual Grind #8 Electric Meat Grinder. Failure to follow these instructions may result in injury or damage to the appliance.
- Always unplug the grinder from the power outlet before assembling, disassembling, or cleaning.
- Keep hands and utensils away from the feeding tube and grinding head while the appliance is in operation.
- Use only the provided meat stomper to push meat into the feeding tube. Never use fingers or other objects.
- Ensure all parts are correctly assembled and securely tightened before operation.
- Do not operate the grinder with damaged parts or if the power cord is frayed.
- Keep the appliance out of reach of children.
- Do not immerse the motor unit in water or other liquids.

Setup
Unpacking and Component Identification
Carefully remove all components from the packaging. Verify that all parts are present and undamaged. The package includes:
- Grinder Motor Unit
- Grinder Head Assembly (including auger, dual blade knife, first grind plate, 4.5mm plate, 10mm plate, sausage stuffing plate, adapter ring, and locking ring)
- Large Stainless Steel Meat Pan
- Meat Stomper
- 3 Plastic Stuffing Tubes (1/2", 1", and 1 3/8" OD)
- Bushing Removal Tool

Assembly Instructions
- Attach the grinder head to the motor unit by aligning the square drive shaft with the motor's receptacle and securing it with the locking knob.
- Insert the auger into the grinder head.
- Place the dual blade knife onto the auger shaft with the cutting edges facing outward towards the plates.
- Position the desired grind plate (e.g., first grind plate for initial processing) over the knife and onto the auger shaft.
- For dual grind functionality, ensure the dual grind adapter ring and second grind plate are correctly installed after the knife and first grind plate, as shown in the video below.
- Secure the assembly with the locking ring, tightening it firmly but not excessively.
- Place the stainless steel meat pan onto the top of the grinder head.

Operating Instructions
Meat Preparation
- Trim meat of excess fat, gristle, and bones.
- Cut meat into strips or cubes that fit easily into the feeding tube.
- For optimal grinding, chill the meat in the freezer for 30-60 minutes until it is firm but not frozen solid. This helps prevent smearing and ensures a cleaner cut.
Grinding Process
- Ensure the grinder is properly assembled and plugged into a grounded electrical outlet.
- Place a collection bowl or pan beneath the grinding head.
- Turn the grinder ON using the power switch.
- Feed the prepared meat into the meat pan and gently push it down the feeding tube using the meat stomper. Do not force the meat.
- The dual grind system will process the meat through two plates in one pass, resulting in a finer, more consistent grind.

Sausage Stuffing
To stuff sausages:
- Remove the grind plates and knife from the grinder head.
- Attach the appropriate size stuffing tube to the grinder head and secure it with the locking ring.
- Place the sausage casing onto the stuffing tube.
- Turn the grinder ON and feed the seasoned ground meat into the hopper, guiding the casing as it fills.
Maintenance
Cleaning
Proper cleaning after each use is essential for hygiene and longevity of the grinder:
- Unplug the grinder from the power outlet.
- Disassemble the grinder head, removing the locking ring, plates, knife, auger, and meat pan.
- Wash all removable parts with warm, soapy water. Use a brush to remove any meat residue from the plates and knife.
- Rinse all parts thoroughly with clean water.
- Dry all parts completely to prevent rust, especially the metal components.
- Wipe down the motor unit with a damp cloth. Do not immerse the motor unit in water.
Storage
Store the clean and dry grinder and its accessories in a cool, dry place. The grinder features an added tray in the body for convenient knife and plate storage.
Troubleshooting
Common Issues
- Meat not grinding or jamming:
Ensure meat is properly chilled and cut into small enough pieces. Remove any excessive sinew or bones. Use the meat stomper to gently guide meat, avoiding excessive force. Check that the knife and plates are correctly oriented and securely assembled. - Excessive noise during operation:
Verify that all components of the grinder head are securely tightened. Ensure the grinder is placed on a stable, level surface. - Meat backing up in the feeding tube:
This often indicates that the meat is not cold enough or is being fed too quickly. Reduce the amount of meat fed at one time and ensure it is firm. Check for blockages in the plates or knife.
