Model: 787-685

Introduction

The Curtis Stone Dura-Pan Nonstick Mandoline is designed for efficient and precise food preparation, allowing users to create uniform slices and julienne cuts. This manual provides instructions for safe setup, operation, and maintenance of your mandoline.

This mandoline features integrated blades for various cuts, a nonstick runway for smooth operation, and safety accessories to protect your hands during use.

Important Safety Information

  • Blades are extremely sharp. Always exercise extreme caution when handling or cleaning the mandoline.
  • Always use the provided handguard. The handguard is designed to hold food securely and keep your fingers away from the blades.
  • Wear the cut-resistant glove. For additional protection, always wear the Level 5 cut-resistant glove on the hand not holding the handguard.
  • Keep fingers and hands away from the blades when slicing.
  • Do not attempt to slice very small pieces of food that cannot be safely secured by the handguard.
  • Keep out of reach of children.

Setup

  1. Unfold the Back Stand: Locate the foldable back stand on the underside of the mandoline. Extend it fully until it locks into place, providing a stable base for the mandoline.
  2. Position on a Stable Surface: Place the mandoline on a clean, dry, and stable countertop. The non-skid feet will help prevent movement during use.
  3. Prepare Safety Gear: Ensure the handguard is clean and ready for use. Put on the cut-resistant glove on your non-dominant hand (the hand that will not be pushing the handguard).

Operating Instructions

The mandoline allows for various cuts by adjusting the blade settings and thickness knob.

1. Adjusting Thickness and Blade Type

The thickness adjustment knob is located on the side of the mandoline. Rotate this knob to select your desired cut type and thickness.

  • For Slices or Crinkle Cuts: Adjust the knob to select a thickness between 1mm and 9mm. The straight blade will be engaged for slicing, or the crinkle blade for crinkle cuts (if available on your model).
  • For Julienne Cuts: Adjust the knob to select either 4.5mm or 9mm. This will engage the julienne blades for fine or thick julienne strips.

2. Slicing Operation

  1. Ensure the mandoline is set to your desired slice thickness.
  2. Place the food item onto the mandoline's runway.
  3. Secure the food item with the handguard, pressing down firmly.
  4. With a smooth, even motion, slide the handguard and food item down the runway and over the blade. The Dura-Pan nonstick coating ensures smooth movement.
  5. Repeat the motion until the food item is sliced to your desired amount.

Cleaning and Maintenance

  • Hand Wash Only: The mandoline should be hand washed. Do not place it in a dishwasher.
  • Use Caution: Always use extreme caution when cleaning the blades. Use a brush or sponge to remove food particles, avoiding direct contact with the sharp edges.
  • Dura-Pan Nonstick Coating: The 4-layer nonstick coating on the runway allows for easy cleanup. Avoid abrasive scrubbers that could damage the coating.
  • Cut-Resistant Glove: The cut-resistant glove is machine washable. Wash according to fabric care instructions.
  • Rinse thoroughly and dry all components completely before storing.

Storage

For convenient storage, the mandoline features foldable back feet. Fold the stand flat against the mandoline body. Store the mandoline, handguard, and cut-resistant glove in a safe place where the blades are protected and out of reach of children.
