4. Operating Instructions
Follow these steps to make homemade yogurt:
4.1 Ingredients
- Milk: Approximately 1.2 - 1.3 liters (enough to fill 7 x 180ml jars). Whole milk, low-fat milk, or skim milk can be used. For best results, use fresh milk.
- Yogurt Starter: This can be a small amount of plain, unflavored yogurt with live active cultures (store-bought or from a previous homemade batch) or a commercial yogurt starter culture.
4.2 Preparation of Milk and Starter
- Heat the Milk: Pour the milk into a saucepan and heat it slowly to about 85°C (185°F). Stir occasionally to prevent scorching. This step helps to denature milk proteins, resulting in a thicker yogurt.
- Cool the Milk: Remove the milk from heat and let it cool down to approximately 40-45°C (104-113°F). This temperature is crucial for the yogurt cultures to thrive. You can speed up cooling by placing the saucepan in an ice bath.
- Add Starter: Once the milk has cooled to the correct temperature, add your yogurt starter. If using existing yogurt, mix 2-3 tablespoons of plain yogurt per liter of milk. If using a commercial starter, follow the package instructions. Stir gently until the starter is fully dissolved and evenly distributed.
4.3 Fermentation Process
- Fill Jars: Carefully pour the milk and starter mixture into the clean glass jars. Do not overfill.
- Place Jars: Place the filled, uncovered glass jars into the main unit of the yogurt maker.
- Cover: Place the transparent cover over the jars and the main unit.
- Start Fermentation: Plug the appliance into a suitable power outlet. Press the on/off button. The indicator light will illuminate, signaling that the yogurt maker is operating.
- Fermentation Time: Allow the yogurt to ferment for 6-10 hours. The exact time depends on the desired thickness and tartness. Longer fermentation generally results in thicker and tangier yogurt. Avoid disturbing the appliance during this period.
- Check Yogurt: After the recommended time, gently tilt one of the jars. If the yogurt has set and appears firm, it is ready. If it is still too liquid, continue fermenting for another 1-2 hours.
