General Safety Precautions:

Setup
Unpacking and Assembly:
- Carefully remove all components from the packaging.
- Unfold the oven legs until they lock securely into place.
- Insert the pizza stone baking board into the oven. Ensure it is seated correctly and flat.

Connecting to Natural Gas:
- Ensure the oven's control knob is in the OFF position.
- Connect the provided gas regulator and hose to your natural gas line. Refer to local gas codes and regulations for proper installation.
- Tighten all connections securely. Use a wrench if necessary.
- Perform a leak test: Apply a soapy water solution to all gas connections. Bubbles indicate a leak. If a leak is detected, turn off the gas supply immediately, tighten connections, and retest. Do not operate the oven if a leak persists.
Operating Instructions
Ignition:
- Ensure the oven is placed on a stable, non-combustible surface outdoors, away from any flammable materials.
- Open the natural gas supply valve.
- Push in and slowly turn the control knob counter-clockwise to the full ignition position. You should hear a click as the igniter sparks.
- Hold the knob in for 5-10 seconds to allow gas to flow and ignite.
- If the burner does not ignite, turn the knob to OFF, wait 5 minutes for gas to dissipate, and repeat the ignition process.
Preheating:
Once ignited, allow the Ooni Koda 16 to preheat for approximately 20 minutes. The oven will reach its optimal cooking temperature of up to 950°F (500°C) during this time. The pizza stone will also absorb heat, ensuring a crispy crust.

Cooking Pizza:
- Lightly flour your pizza peel.
- Launch your prepared pizza into the center of the hot pizza stone.
- Cook for approximately 30 seconds, then use the pizza peel to rotate the pizza 180 degrees to ensure even cooking.
- Continue cooking for another 30 seconds, or until the crust is golden brown and the toppings are bubbling.
- Carefully remove the cooked pizza with the peel.

Shutting Down:
- Turn the control knob clockwise to the OFF position.
- Close the natural gas supply valve.
- Allow the oven to cool completely before moving or storing.
Maintenance
Cleaning the Pizza Stone:
- Allow the pizza stone to cool completely inside the oven.
- Once cool, remove the stone and scrape off any burnt food residue with a stiff brush or scraper. Do not use soap or water, as the porous stone will absorb it and affect performance.
- Flip the stone over for the next use; the high heat will burn off any remaining residue from the previous cook.
Cleaning the Oven Exterior:
- Ensure the oven is completely cool.
- Wipe down the powder-coated carbon steel shell with a damp cloth. For stubborn stains, use a mild detergent.
- Avoid abrasive cleaners or scouring pads, which can damage the finish.
Storage:
- Store the oven in a dry, sheltered location when not in use, especially during prolonged periods of inactivity or adverse weather.
- Consider using an Ooni Koda 16 cover to protect it from the elements.
