2. Setup
- Unpacking: Carefully remove the sharpener from its packaging. Inspect for any damage.
- Placement: Place the sharpener on a stable, flat surface. The non-slip rubberized bottom is designed to keep the unit secure during use. Ensure the surface is clean and dry to maximize grip.
- Familiarization: Identify the different sharpening slots:
- Standard Coarse: For dull Western knives.
- Standard Fine: For honing Western knives or light sharpening.
- Asian Coarse: For dull Japanese knives.

3. Operating Instructions
3.1 General Safety Precautions
- Always hold the sharpener firmly by the handle with one hand.
- Keep fingers away from the sharpening slots and knife blade during operation.
- Do not apply excessive downward pressure; let the sharpener do the work.
- Clean knives and scissors before sharpening.
- Sharpening creates small metal particles. Wipe the blade clean after sharpening.
3.2 Sharpening Knives (Western and Japanese)
- Identify Knife Type: Determine if your knife is a Western (Standard) or Japanese (Asian) blade.
- Select Coarse Slot: For very dull knives, begin with the appropriate "Coarse" slot (Standard Coarse or Asian Coarse).
- Sharpening Stroke: Insert the knife blade into the chosen coarse slot at a 90-degree angle to the sharpener. Pull the knife blade through the slot from heel to tip, using light, consistent downward pressure. Repeat this motion 3-5 times.
- Select Fine Slot: After using the coarse slot, or for knives that are only slightly dull, move to the corresponding "Fine" slot (Standard Fine or Asian Fine).
- Honing Stroke: Pull the knife blade through the fine slot from heel to tip, using very light pressure. Repeat this motion 3-5 times to hone the edge and remove any burrs.
- Clean Blade: Carefully wipe the sharpened blade with a damp cloth to remove any metal filings before use.

3.3 Sharpening Scissors
- Open Scissors: Open the scissors fully.
- Insert Blade: Insert one blade of the scissors into the "Scissors" slot.
- Sharpening Stroke: Gently push the scissor blade through the slot from the pivot to the tip, applying light pressure. Repeat this motion 3-5 times for each blade.
- Repeat for Second Blade: Turn the scissors around and repeat the process for the second blade.
- Clean Blades: Wipe the sharpened scissor blades with a damp cloth to remove any metal filings.

4. Maintenance
- Cleaning: After each use, wipe the sharpener with a damp cloth to remove any metal dust or debris. Do not immerse the sharpener in water or wash it in a dishwasher.
- Storage: Store the sharpener in a dry place, away from direct sunlight and extreme temperatures.
- Inspection: Periodically inspect the ceramic sharpening wheels for wear or damage. If the wheels appear excessively worn, the sharpener's effectiveness may be reduced.
5. Troubleshooting
5.1 Knife Not Sharpening Effectively
- Insufficient Pressure: Ensure you are applying light, consistent downward pressure while pulling the knife through the slots.
- Incorrect Slot: Verify you are using the correct slots for your knife type (Western/Standard or Japanese/Asian) and the appropriate grit (Coarse for dull, Fine for honing).
- Too Few Strokes: For very dull knives, more strokes (up to 10-15) in the coarse slot may be necessary before moving to the fine slot.
- Blade Damage: Severely damaged or chipped blades may require professional sharpening.
5.2 Sharpener Sliding During Use
- Unstable Surface: Ensure the sharpener is placed on a completely flat and stable surface.
- Dirty Surface/Base: Clean the surface and the non-slip rubberized bottom of the sharpener to ensure maximum grip.
