Pasta Making Process:

  1. Prepare Dough: Ensure your pasta dough is firm and not too sticky. It should be kneaded well and allowed to rest.
  2. Cut Dough: Cut the dough into small, walnut-sized pieces or strips that can easily fit into the input port. Lightly dust with flour if necessary.
  3. Start Mixer: Turn on your KitchenAid stand mixer to a low speed (e.g., Speed 4 or 5).
  4. Feed Dough: Place dough pieces into the input port. Use the Food Push to gently guide the dough towards the Squeeze Putter. Do not force the dough.
  5. Extrude Pasta: As the pasta extrudes from the chosen die, use the Cutter to cut it to your desired length.
  6. Dry Pasta: Place the freshly cut pasta on a drying rack or a lightly floured surface to prevent sticking.

Cleaning and Maintenance

Proper cleaning ensures the longevity and hygiene of your pasta maker attachment.

  • Disassembly: Unplug the stand mixer. Disassemble the pasta maker attachment by reversing the installation steps.
  • Initial Cleaning: Allow any residual dough to dry on the parts for about 15-20 minutes. This makes it easier to remove.
  • Brush Cleaning: Use the provided cleaning brush to remove dried dough from the pasta dies and other components.
  • Dishwasher Safe: All removable parts of the attachment, except the Power Center, are dishwasher safe. Place them on the top rack.
  • Hand Washing: For the Power Center, wipe it clean with a damp cloth. Do not immerse it in water. Ensure it remains dry.
  • Drying: Ensure all parts are completely dry before reassembling or storing to prevent rust or mold.

Troubleshooting

If you encounter issues during operation, refer to these common solutions:

  • Pasta not extruding: Ensure the dough is firm enough and cut into small pieces. The mixer speed might be too low; try increasing it slightly. Check for any blockages in the input or output ports.
  • Pasta sticking together: Lightly dust the freshly extruded pasta with flour to prevent sticking. Ensure the dough is not too wet.
  • Attachment not fitting: Ensure the attachment is correctly aligned with the power hub of your KitchenAid stand mixer and the attachment knob is fully tightened.
  • Difficulty cleaning: Allow dough residue to dry completely before attempting to brush or wash. Use the provided cleaning brush for optimal results.
