4. Setup and First Use

  1. Unpack: Carefully remove all components from the packaging. Retain packaging for storage if desired.
  2. Inspect: Check the canner, lid, and all accessories for any signs of damage. Do not use if damaged.
  3. Clean: Before first use, wash the canner body, lid, and racks with warm, soapy water. Rinse thoroughly and dry completely.
  4. Familiarize: Identify the pressure regulators, steam release valve, and locking mechanism on the lid.

5. Operating Instructions

This pressure canner can be used for both pressure canning and pressure cooking. Always refer to a reliable canning guide for specific processing times and procedures for different foods.

5.1. Pressure Canning

  1. Place one or both cooking racks at the bottom of the canner.
  2. Add the recommended amount of water for your canning recipe (typically 2-3 inches).
  3. Carefully place filled and sealed jars onto the racks, ensuring they do not touch each other or the sides of the canner.
  4. Secure the lid by aligning the arrows and rotating until the locking mechanism engages.
  5. Place the canner on a heat source and heat on high until a steady stream of steam escapes from the vent pipe. Vent for 10 minutes.
  6. Place the desired pressure regulator (5, 10, or 15 PSI) onto the vent pipe.
  7. Continue heating until the regulator begins to rock gently, indicating the desired pressure has been reached. Adjust heat to maintain this gentle rocking.
  8. Begin timing according to your recipe.
  9. Once processing is complete, turn off the heat and allow the canner to cool naturally until the pressure indicator drops completely. Do not rush cooling.
  10. Carefully remove the pressure regulator and then unlock and remove the lid, tilting it away from your face to avoid steam.
  11. Remove jars and allow them to cool undisturbed.

5.2. Pressure Cooking

  1. Place food and liquid into the canner according to your recipe. Ensure liquid levels are appropriate for pressure cooking.
  2. Secure the lid as described for canning.
  3. Heat on high until steam escapes from the vent pipe.
  4. Place the appropriate pressure regulator (typically 10 or 15 PSI for most recipes) onto the vent pipe.
  5. Cook for the time specified in your recipe.
  6. Once cooking is complete, turn off the heat. Allow pressure to release naturally or use the quick release method if your recipe allows and the steam release valve permits.
  7. Once pressure is fully released, carefully open the lid.

6. Maintenance and Cleaning

  • Daily Cleaning: After each use, wash the canner body, lid, and racks with warm, soapy water. Rinse thoroughly.
  • Dishwasher Safe: The canner is dishwasher safe for convenient cleaning.
  • Gasket/Sealing Ring: Inspect the rubber gasket (sealing ring) on the lid regularly for cracks or wear. Replace if necessary to ensure a proper seal.
  • Vent Pipe and Pressure Regulator: Ensure the vent pipe and pressure regulator are clear of any food debris before each use. Use a small brush or pipe cleaner if needed.
  • Storage: Store the canner in a dry place. It is recommended to store the lid inverted on the canner body to allow air circulation and prevent odors.
