2. Important Safety Instructions

WARNING: Failure to follow these safety instructions may result in serious injury or damage to the product.

  • Read all instructions carefully before operating the pressure cooker.
  • Do not touch hot surfaces. Use handles or knobs.
  • Close supervision is necessary when the pressure cooker is used near children.
  • Do not place the pressure cooker in a heated oven.
  • Exercise extreme caution when moving a pressure cooker containing hot liquids.
  • Do not use the pressure cooker for purposes other than its intended use.
  • This appliance cooks under pressure. Improper use may result in scalding injury. Ensure the unit is properly closed before operating.
  • Never force the pressure cooker open. Ensure the internal pressure is completely released before opening.
  • Do not fill the unit more than 2/3 full. When cooking foods that expand during cooking, such as rice or dried vegetables, do not fill the unit more than 1/2 full. Overfilling may cause a risk of clogging the vent pipe and developing excess pressure.
  • Be aware that certain foods, such as applesauce, cranberries, pearl barley, oatmeal or other cereals, split peas, noodles, macaroni, rhubarb, or spaghetti can foam, froth, and sputter, and clog the pressure release device. These foods should not be cooked in a pressure cooker.
  • Always check the pressure release devices for clogging before use.
  • After cooking, allow the pressure to drop naturally or release it carefully. Never immerse the pressure cooker in water to cool it down rapidly, as this can damage the unit.
  • Use only Fagor genuine replacement parts.
  • The Fagor Duo pressure cooker features 5 safety systems: pressure sensor, automatic closing, working valve, safety valve, and safety window. Regularly inspect these components for proper function and cleanliness.

4. Setup and First Use

4.1 Unpacking and Initial Cleaning

  1. Carefully remove all components from the packaging.
  2. Wash the pots, lid, and steam basket with warm soapy water. Rinse thoroughly and dry completely.
  3. Inspect all parts, especially the rubber gasket on the lid and the safety valves, to ensure they are clean and free from any debris or damage.

4.2 Assembling the Lid

The lid is designed for easy attachment and secure locking.

  1. Place the lid onto the pot, aligning the arrow on the lid with the arrow on the pot handle.
  2. Rotate the lid handle clockwise until it clicks into place. The automatic closing system ensures a secure seal.
  3. Ensure the pressure regulator is set to the desired pressure level (1 or 2) or the steam release position before cooking.

5. Operating Instructions

5.1 Preparing for Cooking

  1. Add ingredients and liquid to the pressure cooker. Ensure the liquid level is at least 1 cup (250ml) for pressure to build.
  2. Do not exceed the maximum fill line (2/3 full for most foods, 1/2 full for expanding foods like rice or beans).
  3. Place the lid on the pot and lock it securely as described in Section 4.2.
  4. Set the pressure regulator to the desired pressure level:
    • Level 1 (60 kPa): For delicate foods like vegetables and fish.
    • Level 2 (100 kPa): For faster cooking of meats, legumes, and stews.
  5. Place the pressure cooker on a suitable heat source (induction, ceramic, gas, electric).

5.2 Pressure Cooking Process

  1. Heat the cooker on high heat. Steam will begin to escape from the working valve, and the pressure indicator will rise.
  2. Once the desired pressure level is reached (indicated by the working valve or pressure indicator), reduce the heat to maintain a steady, gentle steam release.
  3. Begin timing the cooking process according to your recipe.
  4. Do not leave the pressure cooker unattended during operation.

5.3 Releasing Pressure and Opening the Cooker

After cooking, pressure must be released before the lid can be opened. There are two methods:

  • Natural Release: Remove the cooker from the heat source and allow it to cool down naturally. The pressure indicator will drop, and the lid will unlock automatically when pressure is fully released. This method is ideal for foods that benefit from continued cooking, such as stews and roasts.
  • Quick Release: Carefully turn the pressure regulator to the steam release position. Steam will rapidly escape. Once the pressure indicator drops completely and no more steam is released, the lid can be opened. Use caution to avoid steam burns. This method is suitable for delicate foods like vegetables to prevent overcooking.

Never attempt to force the lid open. If the lid does not open easily, there is still pressure inside.

5.4 Using the Steam Basket

The included stainless steel steam basket allows for healthy steaming.

  1. Add approximately 1-2 cups of water to the bottom of the pressure cooker.
  2. Place the steam basket inside the pot, ensuring it is above the water level.
  3. Place your food (e.g., vegetables, fish) into the steam basket.
  4. Close the lid and cook according to the operating instructions for your desired pressure level.

6. Care and Maintenance

6.1 Cleaning

  • Pots and Steam Basket: Both pots and the steam basket are dishwasher safe. For hand washing, use warm soapy water and a non-abrasive sponge. Rinse thoroughly.
  • Lid: The lid should be hand washed. Remove the rubber gasket and wash it separately. Clean the working valve and safety valve openings to ensure they are free from food particles. Rinse all parts of the lid thoroughly and dry completely before reassembling.
  • Gasket: The rubber gasket should be cleaned after each use. Inspect it for cracks or damage. Replace the gasket annually or if any signs of wear are visible.
  • Do not use abrasive cleaners, steel wool, or harsh chemicals, as these can damage the stainless steel finish.

6.2 Storage

Store the pressure cooker in a dry place. It is recommended to store the lid inverted on the pot to allow air circulation and prevent odors.

7. Troubleshooting

ProblemPossible CauseSolution
Pressure does not build up.Lid not properly closed; gasket dirty or damaged; insufficient liquid; pressure regulator not set correctly.Ensure lid is securely locked. Clean or replace gasket. Add more liquid. Set regulator to desired pressure level.
Steam leaks from around the lid.Lid not properly closed; gasket dirty, damaged, or improperly seated; food debris on rim.Relock lid. Clean or reposition gasket. Clean pot rim.
Lid cannot be opened after cooking.Internal pressure still present.Do not force. Allow pressure to release naturally or use quick release method until pressure indicator drops completely.
Food is undercooked or overcooked.Incorrect cooking time or pressure level; heat too high/low.Adjust cooking time and pressure level according to recipe. Ensure heat is reduced once pressure is reached.
Safety valve activates frequently.Overfilling; vent pipe clogged; heat too high.Do not overfill. Clean vent pipe. Reduce heat.
