2. Setup

2.2 First Use / Seasoning
Before cooking food, it is recommended to season your grill. Apply a thin layer of cooking oil to all interior surfaces and grates. Light a small fire in the firebox and maintain a low temperature (around 250-300°F or 120-150°C) for 1-2 hours. This process burns off manufacturing residues and seasons the metal, preventing rust and enhancing flavor.
3. Operating Instructions
3.1 Charcoal Grilling
For direct grilling, place charcoal directly onto the charcoal grate in the main cooking chamber. Use the lid-mounted thermometer to monitor internal temperature. Adjust the main chamber's air vents and chimney damper to control heat.

3.2 Offset Smoking
For indirect cooking and smoking, build a fire in the side firebox. The heat and smoke will flow into the main cooking chamber, circulating around your food. Use wood chips or chunks in the firebox to impart smoky flavor. Monitor the temperature using the lid thermometer and adjust the air vents on the side firebox and the chimney damper to maintain desired smoking temperatures.

3.3 Temperature Management
The integrated lid thermometer provides real-time temperature readings. Fine-tune the cooking temperature by adjusting the air intake vents on the side firebox and the exhaust damper on the chimney. Opening vents increases airflow and temperature, while closing them reduces airflow and temperature.

4. Maintenance
4.1 Cleaning
After each use, allow the grill to cool completely. Remove cooking grates and clean them with a grill brush. Empty the ash from the main chamber and side firebox. Wipe down exterior surfaces with a damp cloth. The removable front shelf can be detached for easier cleaning.

4.2 Storage
