Important Safety Instructions

Setup

1. Unpacking: Carefully remove the sharpener from its packaging. Retain packaging for future storage or transport.
2. Placement: Place the sharpener on a stable, flat, and dry surface. Ensure there is adequate space around the unit for safe operation and knife handling.
3. Power Connection: Plug the sharpener into a standard electrical outlet. Ensure the power switch is in the "OFF" position before plugging in.

Operating Instructions

The E120 sharpener features three distinct stages for optimal sharpening results. Always ensure the knife blade is clean before sharpening.

Sharpening Straight-Edge Knives:

1. Power On: Turn the power switch to the "ON" position.
2. Stage 1 (Reshape):

   Insert the knife blade into the left slot of Stage 1. Pull the knife slowly towards you, maintaining light downward pressure. Repeat this process 3-5 times for each side of the blade (alternating left and right slots of Stage 1). This stage reshapes the edge using coarse diamond abrasives.

3. Stage 2 (Sharpen):

   Move to Stage 2. Insert the knife blade into the left slot and pull it slowly towards you, applying light downward pressure. Repeat 2-3 times for each side of the blade (alternating left and right slots of Stage 2). This stage refines the edge with medium abrasives.

4. Stage 3 (Polish/Hone):

   Proceed to Stage 3. Insert the knife blade into the left slot and pull it slowly towards you, applying very light downward pressure. Repeat 1-2 times for each side of the blade (alternating left and right slots of Stage 3). This final stage uses patented stropping disks to create a microscopically smooth, polished edge.

5. Check Sharpness: Test the knife's sharpness on a piece of paper. If not sufficiently sharp, repeat Stage 3. For very dull knives, you may need to repeat Stages 1 and 2.

Sharpening Serrated Knives:

Serrated knives should ONLY be sharpened in Stage 3.

1. Power On: Turn the power switch to the "ON" position.
2. Stage 3 Only: Insert the serrated knife blade into the left slot of Stage 3. Pull the knife slowly towards you, applying very light downward pressure. Repeat 1-2 times for each side of the blade (alternating left and right slots of Stage 3). This will hone the serrations and polish the edge.

Maintenance

• Cleaning: Always unplug the sharpener before cleaning. Wipe the exterior of the sharpener with a damp cloth. Do not use abrasive cleaners or immerse the unit in water.
• Sharpening Slots: The sharpening slots are designed to be self-cleaning to a degree. However, metal dust may accumulate over time. To clean, hold the sharpener upside down and gently tap it to dislodge any debris. Do not insert any objects into the sharpening slots.
• Storage: Store the sharpener in a dry, cool place away from direct sunlight and moisture.
