Setup

Operating Instructions
The E120 sharpener features three distinct stages for optimal sharpening results. Always ensure the knife blade is clean before sharpening.
Sharpening Straight-Edge Knives:
- Power On: Turn the power switch to the "ON" position.
- Stage 1 (Reshape):
Insert the knife blade into the left slot of Stage 1. Pull the knife slowly towards you, maintaining light downward pressure. Repeat this process 3-5 times for each side of the blade (alternating left and right slots of Stage 1). This stage reshapes the edge using coarse diamond abrasives.
- Stage 2 (Sharpen):
Move to Stage 2. Insert the knife blade into the left slot and pull it slowly towards you, applying light downward pressure. Repeat 2-3 times for each side of the blade (alternating left and right slots of Stage 2). This stage refines the edge with medium abrasives.

- Stage 3 (Polish/Hone):
Proceed to Stage 3. Insert the knife blade into the left slot and pull it slowly towards you, applying very light downward pressure. Repeat 1-2 times for each side of the blade (alternating left and right slots of Stage 3). This final stage uses patented stropping disks to create a microscopically smooth, polished edge.

- Check Sharpness: Test the knife's sharpness on a piece of paper. If not sufficiently sharp, repeat Stage 3. For very dull knives, you may need to repeat Stages 1 and 2.
Sharpening Serrated Knives:
Serrated knives should ONLY be sharpened in Stage 3.
- Power On: Turn the power switch to the "ON" position.
- Stage 3 Only: Insert the serrated knife blade into the left slot of Stage 3. Pull the knife slowly towards you, applying very light downward pressure. Repeat 1-2 times for each side of the blade (alternating left and right slots of Stage 3). This will hone the serrations and polish the edge.

Maintenance
- Cleaning: Always unplug the sharpener before cleaning. Wipe the exterior of the sharpener with a damp cloth. Do not use abrasive cleaners or immerse the unit in water.
