4. Operating Instructions

- Power Switch: Turns the unit ON/OFF.
- LED Temperature Display: Shows the internal cabinet temperature in Fahrenheit.
- Heat Dial: Adjusts the heating element intensity (0-9).
- Proof/Heat Switch: Selects between Proofing mode and Holding (Heat) mode.
- Humidity Dial: Controls the humidity level (0-9) when water is present in the pan.
Holding Mode:
- Ensure the water pan is empty for dry holding, or filled with water for moist holding.
- Flip the Proof/Heat switch to 'Heat'.
- Turn the Power switch ON.
- Adjust the Heat dial to the desired setting. The temperature range for holding is 80°F to 185°F.
- Monitor the temperature on the LED display.
- If using for moist holding, adjust the Humidity dial as needed.
Proofing Mode:
- Fill the removable water pan with distilled water.
- Flip the Proof/Heat switch to 'Proof'.
- Turn the Power switch ON.
- Adjust the Heat dial to the desired setting. The temperature range for proofing is 85°F to 115°F.
- Adjust the Humidity dial to achieve the desired humidity level (30% to 100%).
- Monitor the temperature on the LED display.

- Clean the clear door with a non-abrasive cleaner suitable for Lexan.
