5. Operation
5.1. Fuel Options
The Ooni Karu 16 offers multi-fuel versatility:
- Wood or Charcoal: Use hardwood kindling or lump charcoal in the fuel tray at the rear. This provides an authentic wood-fired flavor.
- Gas (Sold Separately): For convenience, attach the Ooni Gas Burner for Karu 16 (sold separately) to the rear of the oven. Follow the gas burner's specific instructions for installation and use.

5.2. Preheating
For optimal cooking, preheat your Ooni Karu 16 to 950°F (500°C). This typically takes about 15 minutes, depending on your fuel and environmental conditions. Monitor the digital thermometer to ensure the oven reaches the desired temperature before cooking.

5.3. Cooking Instructions
Once preheated, you're ready to cook. The large cooking area accommodates up to 16-inch pizzas and other substantial dishes.
- Launching Pizza: Use a pizza peel to carefully launch your pizza onto the hot stone.
- Rotating: Due to the intense heat, pizzas cook very quickly (often in 60 seconds). Rotate your pizza frequently (every 20-30 seconds) using the peel to ensure even cooking and a perfectly leopard-spotted crust.
- Monitoring: The hinged oven door with ViewFlame technology allows you to monitor your food without losing too much heat. The mounted digital thermometer provides real-time internal ambient oven temperature.
- Retrieving: Once cooked to your liking, use the pizza peel to retrieve your pizza.

6. Care and Maintenance

- Cool Down: Always allow the oven to cool completely before attempting any cleaning.
- Pizza Stone: The pizza stone is self-cleaning at high temperatures. For stubborn residue, scrape it off with a brush. Do not use soap or water on the stone as it is porous.
