4. Operating Instructions
Follow these steps to prepare homemade yogurt:
- Prepare Ingredients: You will need milk (dairy or non-dairy) and a starter culture (either store-bought plain yogurt with live active cultures or a yogurt starter packet). For best results, use whole milk.
- Heat Milk (Optional, but Recommended): Heat the milk to 82-85°C (180-185°F) to denature proteins, which helps create a thicker yogurt. Hold at this temperature for a few minutes, then let it cool down to 40-45°C (104-113°F). This temperature is crucial for the starter culture.
- Add Starter Culture: Once the milk has cooled to the correct temperature, gently whisk in the yogurt starter. Use approximately 1-2 tablespoons of plain yogurt per liter of milk, or follow the instructions on your starter packet. Ensure the starter is well mixed.
- Fill Containers: Pour the milk and starter mixture into the individual yogurt containers. Place the lids loosely on the containers or cover the entire unit with its main lid, if applicable.
- Start Fermentation: Place the filled containers into the yogurt maker. Plug in the appliance. The yogurt maker will maintain the optimal temperature for fermentation.
- Fermentation Time: Allow the yogurt to ferment for 6-12 hours. The longer the fermentation, the thicker and tangier the yogurt will be. For your first batch, check after 6-8 hours.
