4. Setup and Assembly

  1. Initial Cleaning: Before first use, thoroughly wash all parts that will come into contact with food (stuffer body, plunger, funnels, rim) manually with warm soapy water. Rinse thoroughly and dry completely.
  2. Attach Suction Pad: Place the stuffer on a clean, smooth, and dry worktop. Press down firmly on the stuffer body and engage the lever on the suction pad to create a vacuum, securing the device to the surface. Ensure it is stable and does not move.
  3. Assemble Plunger and Crank: Insert the plunger into the stuffer body. Attach the crank handle to the threaded rod of the plunger using the provided bolt. Tighten securely.
  4. Select and Attach Funnel: Choose the appropriate funnel size (14mm, 18mm, 21mm, or 25mm) for your desired sausage casing. Place the chosen funnel onto the outlet of the stuffer and secure it firmly with the threaded rim.

5. Operating Instructions

  1. Prepare Meat Mixture: Ensure your sausage meat mixture is properly prepared and chilled.
  2. Load Meat: Retract the plunger fully by turning the crank counter-clockwise. Carefully load the meat mixture into the stuffer cylinder. Avoid overfilling and ensure no large air pockets are trapped.
  3. Prepare Casings: Prepare your sausage casings according to their specific instructions (e.g., soaking in water). Slide the casing onto the chosen funnel, gathering it up to the end.
  4. Begin Stuffing: Slowly turn the crank clockwise to push the plunger forward. The meat mixture will be extruded through the funnel into the casing. The silicone-coated plunger with its air bleeder system helps to release trapped air, ensuring a smooth fill.
  5. Control Filling: Use one hand to guide the casing off the funnel, controlling the speed and tightness of the fill. Avoid overfilling, which can cause casings to burst.
  6. Form Sausages: Once the casing is filled, twist or tie the sausages to create individual links.

6. Cleaning and Maintenance

  • Immediate Cleaning: After each use, disassemble the stuffer completely. Wash all parts manually with warm water and mild dish soap. Use a brush if necessary to remove any meat residue.
  • Rinsing and Drying: Rinse all components thoroughly with clean water to remove soap residue. Dry all parts completely to prevent water spots and corrosion.
  • Lubrication: Before each use, and after cleaning, spread a teaspoon of edible oil (e.g., vegetable oil) on the inner surfaces of the stuffer cylinder and on the silicone plunger. This ensures smooth operation of the plunger and extends the device's lifespan.
  • Storage: Store the clean, dry, and lubricated stuffer in a dry place.
  • Important: This product is NOT dishwasher safe. Dishwasher cleaning can damage the materials and finish.

7. Troubleshooting

If you encounter issues with your Browin 311009 Sausage Filler, consider the following:

  • Plunger not moving smoothly: Ensure the inner surfaces of the cylinder and the plunger are adequately lubricated with edible oil. Check for any meat residue obstructing movement.
  • Suction pad not holding: Ensure the worktop surface is clean, smooth, and dry. Press down firmly on the stuffer body before engaging the suction lever.
  • Meat not extruding: Check if the plunger is fully engaged and the crank is being turned clockwise. Ensure the meat mixture is not too stiff or contains large pieces that could block the funnel.
  • Casings bursting: This usually indicates overfilling. Reduce the speed of stuffing and allow more slack in the casing as it fills.
