Setup

Operating Instructions

The sharpening process involves two main steps: grinding and honing.

1. Grinding (Diamond Disc)

Use the diamond grinding disc (coarser side) of the rolling sharpener for the initial sharpening. This disc is made with industrial diamonds, which are highly durable and efficient for sharpening knives of any hardness, including European kitchen knives, hard or soft steel, stainless, and rust-resistant steels.

• With the knife securely attached to the Magnetic Angle Support, hold the HORL 2 Rolling Sharpener with the diamond disc facing the blade.
• Roll the sharpener along the entire length of the blade, applying light, consistent pressure. Ensure the sharpener maintains contact with both the blade and the magnetic support.
• Perform several passes on one side of the blade until a burr (a slight raised edge) is formed on the opposite side.
• Flip the knife over on the magnetic support and repeat the grinding process on the other side until the burr is removed or transferred.

2. Honing (Ceramic Disc)

After grinding, switch to the ceramic honing disc (finer side) of the rolling sharpener. This disc refines the edge, removing any remaining burrs and polishing the blade for a smooth, razor-sharp finish.
