Pressure Canning
The NESCO NPC-9 is designed to simplify pressure canning. It can hold four quart (wide-mouth), five pint, or sixteen 4 oz. jelly jars at a time.
- Prepare jars and food according to a tested canning recipe.
- Place the canning rack at the bottom of the inner pot.
- Carefully place filled jars on the rack. Ensure jars do not touch each other or the sides of the pot.
- Add the specified amount of water (usually 2-3 inches) to the inner pot, ensuring it does not exceed the maximum fill line.
- Secure the lid, ensuring the pressure release valve is set to "Airtight".
- Select "Pressure Cook" and then choose "Low" or "High" pressure based on your recipe and altitude. Adjust time using the (+)/(-) buttons.
- Press "Start/Stop". The unit will preheat and build pressure.
- Once pressure is reached, the float valve will rise, and the timer will begin counting down.
- After the canning cycle is complete, the unit will beep and automatically switch to "Keep Warm" mode.
- Allow the pressure to release naturally until the float valve drops completely. This can take a significant amount of time. Do NOT force release pressure for canning.
- Once pressure is fully released, carefully open the lid away from your face.
- Using jar lifters, remove the hot jars and place them on a towel-lined surface to cool for 12-24 hours.

Pressure Cooking
Use the "Pressure Cook" function for faster cooking of meals.
- Add ingredients and liquid to the inner pot. Do not exceed the MAX fill line.
- Secure the lid, ensuring the pressure release valve is set to "Airtight".
- Select "Pressure Cook" and choose "Low" or "High" pressure. Adjust time as needed.
- Press "Start/Stop". The unit will preheat and build pressure.
- Once pressure is reached, the float valve will rise, and the timer will begin counting down.
- After cooking, you can either allow natural pressure release or use the quick release method by carefully turning the pressure release valve to "Exhaust" (use a utensil to avoid steam).
- Once pressure is fully released and the float valve drops, open the lid.
Slow Cooking
The "Slow Cook" function allows for extended cooking times at lower temperatures.
- Add ingredients to the inner pot.
- Secure the lid (it does not need to be airtight for slow cooking, but it helps retain heat).
- Select "Slow Cook". Adjust time using the (+)/(-) buttons.
- Press "Start/Stop". The unit will begin slow cooking.
- Once the cycle is complete, the unit will beep and switch to "Keep Warm" mode.
Browning/Sautéing
The "Brown" function allows you to sauté or brown ingredients directly in the inner pot before pressure cooking or slow cooking.
- Add a small amount of cooking oil to the inner pot.
- Select "Brown".
- Press "Start/Stop". The unit will begin to heat up.
- Add ingredients and stir as needed.
- Once browning is complete, press "Start/Stop" to cancel the function. You can then proceed with other cooking functions.

Maintenance and Cleaning
Regular cleaning and maintenance will ensure the longevity and optimal performance of your NESCO NPC-9.
- Always Unplug: Before cleaning, always unplug the unit from the power outlet and allow it to cool completely.
- Inner Pot: The removable 9.5 qt. non-stick cooking chamber is dishwasher safe. For hand washing, use warm, soapy water and a non-abrasive sponge.
- Lid: Wash the lid with warm, soapy water. Pay special attention to the sealing gasket, float valve, and pressure release valve. Ensure no food particles are clogging these components. The sealing gasket can be removed for thorough cleaning and should be reinserted correctly before next use.
- Main Unit: Wipe the exterior of the main unit with a damp cloth. Do NOT immerse the main unit in water or any other liquid.
- Condensation Catcher: Remove and empty the condensation catcher after each use. Wash with warm, soapy water and rinse.
- Storage: Store the unit in a dry place. You may store the lid inverted on the inner pot to prevent odors and allow air circulation.
Troubleshooting
If you encounter issues with your NESCO NPC-9, refer to the following common problems and solutions:
| Problem | Possible Cause | Solution |
|---|---|---|
| Unit does not turn on. | Not plugged in; power outlet issue; unit malfunction. | Ensure unit is securely plugged into a working outlet. Check household circuit breaker. If problem persists, contact customer support. |
| Pressure not building. | Lid not properly sealed; pressure release valve not set to "Airtight"; sealing gasket is dirty or damaged; insufficient liquid. | Ensure lid is fully closed and locked. Turn pressure release valve to "Airtight". Check and clean/replace sealing gasket. Add required minimum liquid. |
| Steam leaking from lid. | Sealing gasket improperly installed, dirty, or damaged; food debris on rim; lid not properly closed. | Check and properly install/clean/replace sealing gasket. Clean rim of inner pot and lid. Ensure lid is fully closed and locked. |
| Float valve not rising. | Insufficient pressure built; float valve clogged. | Ensure lid is sealed and valve is "Airtight". Check for sufficient liquid. Clean float valve and its housing. |
| Food is undercooked. | Incorrect cooking time/pressure setting; pressure not maintained. | Verify recipe cooking time and pressure. Ensure unit reached and maintained pressure throughout the cycle. |
